Recipe: Caril de Caranguejo a Moçambicana, A Mozambican Crab Curry

Mozambique’s caril de caranguejo mirrors the complicated history of curry. Across the Caribbean, Asia, Africa, and South America, cooks embraced, adapted, and redefined curry powder, weaving it into local foodways until it became inseparable from countless culturally rooted and comforting dishes. Most families reserve the crab version for special occasions rather than everyday curries made with other proteins and vegetables, while communities living near the Indian Ocean often prepare it when fresh crab shows up as a catch.
A spoonful of the sauce brings together earthy turmeric, stewed onions, toasted garlic, and slow-cooked tomatoes in a fragrant, creamy broth. The piri piri pepper lends bright heat and a fruity depth, while coconut milk calms its intensity and enriches the broth with a silky texture. The crab, however, is worth importing from home, says Rui: Mozambican crab offers firm, sweet, succulent meat that holds its texture as it simmers, soaking up the fragrant curry sauce while retaining its delicate flavor. Slits hammered into the shell make it easier to pull out tender morsels of meat, and Oliveira serves the stew over buttery coconut rice with crisp papadum on the side.
Serves 4
Ingredients
2 kilograms crab, cut into sections, including the legs and body, with the shells lightly cracked using a hammer
3 medium yellow onions, finely chopped
5 cloves garlic, minced
¼ cup olive oil
4 ripe plum tomatoes, chopped
Bird’s eye chilies or piri piri peppers to taste, stems removed, sliced on the diagonal
3 tablespoons curry powder
1 can (400 ml) coconut milk, or homemade coconut milk made by soaking grated coconut in hot water and straining
Salt to taste
1 small sprig cilantro, for garnishing
Preparation
Step One
In a large saucepan, heat the olive oil over medium heat.
Step Two
Add the onion and sauté until translucent. Once the onions soften, add the garlic.
Step Three
Add the tomatoes and the chilies. Sauté until the tomato breaks down completely.
Step Four
Add the curry powder and toast it to release its aroma.
Step Five
Add the crab pieces and reduce the heat to a simmer.
Step Six
Pour in the coconut milk, stirring carefully to prevent the sauce from curdling. Add the salt to taste. Let the crab simmer for about 15 minutes.
Step Seven
Serve Caril de Caranguejo garnished with cilantro alongside buttery coconut rice or crisp papadum.
