Another Instagram Live series we’re launching is CB Cooks, which will bring our walk leaders into your home for a live cooking demonstration. First up is Carolina Doriti, our Athens bureau chief, who will be cooking galatopita, a Greek milk pie, on Sunday, April 19, at 11 a.m. EDT (GMT-4).
If you want to cook along with Carolina, here are the ingredients you’ll need for a 25 cm round pan (although all are welcome to come watch, even if you’re not cooking):
Cream Filling
1 lt (4 cups) full fat milk
50 gr (1/4 cup) fine semolina
120 gr (2/3 cup) brown sugar
50 gr (1/3 cup) all purpose flour
1 vanilla pod (or 2 tsp vanilla extract)
2 eggs
1 tablespoon butter (real butter)
Pinch of salt
Zest from 1 organic lemon
Pastry
5-6 layers of phyllo
100 gr (7 tablespoons) melted butter
70 gr (a heaping 1/2 cup) walnuts
70 gr (a heaping 1/3 cup) brown sugar
2 1/2 teaspoons cinnamon
Powdered sugar and cinnamon for topping
In addition to the 25 cm round pan, you’ll need a whisk, a small blender, a large saucepan with a thick bottom, a mixing bowl, a surface to lay out the phyllo and a brush, a small saucepan to melt butter (on the stove or in the microwave), a soft spatula and a scale.
