Fermentation anchors Korean cuisine: jang, soy sauce, kimchi, meju bricks drying in open courtyards. Nowhere does this living tradition feel more alive than in Seoul, where centuries-old markets, master workshops, and modern kitchens reveal a culture built on patience and transformation.

This is Korea at its essence, a table defined by balance, memory, and renewal. Join us on a weeklong journey through the country’s culinary heartland, from seafood markets and barbecue alleys to fermentation studios and temple kitchens. Along the way, we’ll meet the people who keep these traditions thriving: fishmongers, kimchi masters, and the nuns who cook with mindfulness at Beopryunsa Temple.

The heart of our week unfolds during kimjang season, when households across Korea prepare their winter kimchi. We’ll take part in this centuries-old ritual through hands-on workshops, pottery studio visits, and meals that celebrate the harmony between flavor, craft, and time.

Together we’ll taste the soul of Korean cuisine: fiery spice and quiet subtlety, sea and mountain, ritual and reinvention, discovering how fermentation continues to shape both the Korean table and the rhythm of daily life.

PRICING AND ACCOMMODATION

<p><span style="color: rgb(0, 0, 0)">The total cost of this trip is $7,250. For travelers wishing to have single accommodations during the trip, an additional $2,000 supplement will be due at the time of the final payment. A $500 non-refundable deposit per traveler is required to secure space on the trip. The balance is due 90 days prior to the start of the trip.</span></p>

ACTIVITY LEVEL

<p><span style="color: rgb(0, 0, 0)">Travelers should feel comfortable walking two to four miles each day and remaining on their feet for periods of time. There are a couple of hikes on uneven ground. Be prepared to roll up your sleeves and get hands-on during a couple cooking workshops.</span></p>

ARRIVAL AND DEPARTURE

<p><span style="color: rgb(0, 0, 0)">For flights in and out of Korea’s Incheon International Airport (ICN), we suggest you arrive by 3 p.m. on Day 1 and depart any time on Day 8. We are happy to book you extra nights at the group’s hotel; just email us to arrange that after booking your spot on the trip. We’ll also provide suggestions for things to do and see in the area on your own if you choose to extend your visit.</span></p>

CANCELLATION POLICY

<p><span style="color: rgb(0, 0, 0)">You may cancel 90 days before the start of the trip and receive a full refund minus a $500 per-person service fee. If you cancel on or after 60 days before the start of the trip there is a 50% cancellation fee. On or after 45 days there is a 75% cancellation and fee and on or after 30 days there is a 100% cancellation fee.
