Stories for traditional food

On March 27 of this year, Monique and Josef, the Moroccan-born couple that own Patisserie Avyel, plan to roast a turmeric-coated lamb shoulder above a bed of onions. My friend Judith, whose family hails from Algeria’s Tlemcen region, will blend almonds and raisins into mlosia, a thick jam. And, in my apartment, I will simmer matzo balls in chicken broth as my Lithuanian ancestors once did. All of us Marseillais will be cooking these foods for Passover, the Jewish holiday that commemorates the exodus of the Israelites from Egyptian slavery. While Jewish celebrations and cooking are as intertwined as the braided challah bread we eat on Shabbat – “all of our fêtes pass through the kitchen,” quips Frédérique, a Marseillaise with Tunisian roots.

‘Tis the season of the Japanese New Year’s trinity: osechi, oseibo and nengajo. Like newsy Christmas cards, the nengajo is a recap of family or personal news mailed in postcards during the weeks preceding the end of the year and efficiently delivered all over Japan promptly on January 1. The winter gift-giving season is in full swing, with companies and individuals sending oseibo gifts as thank-you expressions for kindnesses over the year. Most gifts are food or household items like cooking oil or soap. The best of the traditions is osechi ryori, traditional New Year’s cuisine. Osechi is not something one can find in a restaurant because it’s eaten only one time a year, at home or when visiting others at home.

Ramadan fasters in Istanbul may not love the endless daylight hours in summer nor the susuzluk (no water), but when the reward is a leisurely iftar under the trees on Kadınlar Pazarı, the pedestrianized market known as Little Siirt (named after the southeastern Turkish city where many of the local shop and restaurant owners hail from), it must surely seem worth it. A February iftar would not be quite the same, at least not in Turkey. As we walked through the twilight to Siirt Şeref Büryan Kebap Salonu at the end of the square last Saturday, hundreds of fasters waited in front of cling-filmed plates of iceberg lettuce and ciǧ köfte for the Ramadan cannon to signal “breakfast” time.

“You can’t call yourself Mexican if you don’t eat rosca de reyes,” jokes Rafa Rivera, head baker and owner of Forte Bread and Coffee in Mexico City. Distracted, he stops grating orange peel long enough to muse about the king’s cake he is making. Only 29, he already has several businesses under his belt, and is about to open a second Forte location in Colonia Juarez. Rafa opened the flagship Forte in the Roma Norte neighborhood, serving up delicious pastries and coffee, with beans from Pólvora Coffee Roasters – where his brother Julián is the lead roaster. (In 2017, Julián won first prize in the Mexican Brewers Cup Championship with his Pólvora beans.)

One of the great joys of spring in Japan is anticipating the appearance of sansai, or mountain vegetables. When cherry blossoms begin to flutter on warming breezes, hikers take to the hills to forage for the first wild edibles. Supermarkets mount special displays of packaged (and unfortunately often hot-house-raised) young sprouted leaves, shoots and tubers. Restaurants proudly offer up special seasonal dishes, providing an opportunity to bring the freshness of the outdoors to the table, even in the inner city. A bounty of deliciousness awaits those fortunate enough to get out of Tokyo and roam the hills. Fukinoto, taranome and warabi form a trifecta of green vegetables gleaned from mountain walks. Cooks wait all year to prepare dishes of these fragrant yasai veggies.

In Mesoamerica, beans have been a pillar of culinary traditions – not to mention civilizations – from time immemorial. Pre-Columbian peoples depended on legumes as their primary source of protein, but they were more than mere sustenance. Beans (along with corn) were some of the most important crops for sale at the local markets because they could be used as currency. Their value was based on the physical appearance of the product (color and size). The Aztecs included beans in the list of tributes that their vassal states had to pay. Bernardino de Sahagún, a Spanish friar, documented the use of beans in the Aztec empire, noting that the native people ate tamales mixed with beans. Storing and administering these crops was critical in order to be prepared for times of shortage.

In Spain, conservas, or foods preserved in cans and jars, are not simply a matter of economic survival or a source of basic nutrition for students, hikers, military recruits and the like. Rather, the tradition of conservas more resembles that of keeping one’s most beautiful jewelry locked safe in a strongbox – a prized possession to bring to the table on special occasions, and a unique offering that can be found in both traditional and modern bars and bodegas. It was a Frenchman named Nicolas Appert who invented the technique of canning around the beginning of the 19th century, earning a 12,000-franc prize from Napoleon for having found a way to keep the French army alive and well-fed during its long war campaigns.

When a tiny three-table restaurant has but a single item on its nonexistent menu that it has served for nearly three quarters of a century, one steps in the door with high expectations and an enthusiastic appetite. These will be met and exceeded at Tarihi Odabaşı, a hole-in-the-wall in the heart of old Istanbul that has been making çiğ börek – a buoyant, lightly-fried pastry stuffed with ground beef that is a staple of Crimean Tatar cuisine – since 1950. The restaurant gets its name from the nearby Has Odabaşı Behruz Ağa Mosque, built in the 16th century by doyen Ottoman architect Mimar Sinan. It is located in the Çapa/Şehrimini neighborhood, which is inside the old city walls of Istanbul.

Outside of an airy pink wedge of a building off of Praça do Chile, protected from the bright midday sun by an awning with “Fox Coffee” printed on it, we waited with great anticipation for lunch: cachupa do curaçao, a specialty of the house which involves stuffing a leaf of steamed Lombardo cabbage with stewy cachupa and a poached egg. This was our third visit to the so-called “King of Cachupa” and we were working our way through the menu trying to identify what was so different and superior about this cachupa, the signature dish of Cape Verde, a former Portuguese colony situated off of the coast of West Africa.

Pulpo (octopus) is more than just a staple food in Galicia (the autonomous community in northwest Spain); it is an icon, a national symbol venerated by Galicians as well as Spaniards across the country. In Galicia, this cephalopod is consumed at traditional village fairs, and is sold on weekends at street stalls. These stands are usually run by women called pulpeiras, who boil dozens of octopuses on portable stoves in large pots made of copper. The octopus is then served on wooden dishes with paprika and olive oil, or plopped into plastic bags with some of the cooking water to take home.

Although it would seem that much of the world imagines the inhabitants of Spain subsisting largely on paella, the truth of the matter is that it is the tortilla de patatas (truita de patata in Catalan), also known as tortilla española in some Spanish regions, that really holds the place of honor in the hearts and stomachs of Spaniards. Often translated into English on menus as “potato omelet,” this hearty round cake of potatoes, eggs, olive oil and salt has nothing to do with the traditional French omelet, nor does it have anything in common with a Mexican tortilla. At its most basic, the Spanish tortilla is made by frying up a thick mass of sliced potatoes and eggs in olive oil and then slicing it into savory wedges.

Barbacoa – pit-roasted lamb or goat – is a Mexico City weekend essential. Stands pop up all over the city on Saturdays and Sunday selling the soft-as-butter meat on a warm tortilla, topped with a sprinkling of cilantro and raw onion and one of the many smoky salsas that generally accompany this dish. Even more, barbacoa broth is a well-known hangover cure, among the ranks of menudo (tripe soup) and pozole (hominy and meat soup). Before the city’s Roma neighborhood became the hip, bohemian mecca that it is now, Moises and Norma Rodriguez opened El Hidalguense, an unassuming spot on one of the neighborhood’s quieter streets. Now, 30 years later, it is known far and wide for roasting some of the best barbacoa in the city.

Almost every Chinese holiday comes paired with a festive dish. At Tomb-Sweeping Festival, there are bright green qingtuan (glutinous rice dumplings) to celebrate the arrival of spring. During Dragon Boat festival, we have zongzi, stuffed sticky rice steamed in bamboo leaves, to commemorate the poet Qu Yuan. And during Mid-Autumn Festival, we chow down on mooncakes as we gaze at the full moon. But Chinese New Year doesn’t come with just one dish. It is a feast that lasts for days, starting with “bao”-ing or wrapping dumplings on Chinese New Year’s Eve (for snacking on well into the night) to the tangyuan (more glutinous rice dumplings) eaten 15 days later on Yuanxiao or Lantern Festival.

Historically, Guizhou is one of China’s most overlooked provinces. The landlocked location in central China is sandwiched between the famous spice havens of Sichuan and Chongqing to the north and Hunan to the East, and tucked behind the tourist destination of Yunnan to the west. It has the largest population of people in poverty and lowest income per person in China, and the geography of the province has made it tough to travel around; mountainous roads and lack of infrastructure don’t make for easy tourism. Its biggest claim to fame has been Kweichow Moutai (Wade-Giles Romanization of Guizhou Maotai), the famous state-owned baijiu brand served to Richard Nixon when he met Mao Zedong.
