Stories for post colonial kitchens

The oldest city in Western Europe, once the hub of a trading empire that connected Macau in the east to Rio de Janeiro in the west, Lisbon today feels staunchly Old World European, a sleepy town of nostalgic storefronts and scenic churches. But that’s only its façade.

Beyond the bustling districts of the centro, Lisbon’s port and the old neighborhoods clustered around it have always had a close connection with the waterfront and its industries, especially fishing. The city’s iconic varinas, itinerant fish vendors, lived and worked on the streets here until quite recently, selling their goods from a basket hoisted on their heads.

We spent our first few years in Georgia in a whirlwind of overindulgence, hostages to the unforgiving hospitality of friends and acquaintances. Try as they might to convince us that their wine and chacha were so “clean” we would not get hangovers, there were plenty of mornings when the insides of our skulls felt like 60-grain sandpaper and our tongues like welcome mats for packs of wet street mongrels. We would hobble out of bed and stumble to the fridge and, if lucky, find two of Georgia’s most recognized hangover remedies: Borjomi mineral water and matzoni, Georgian yogurt.

Spain, Italy, Greece, Turkey, Portugal, Morocco, Tunisia – one thing that unites this swathe of the Mediterranean is olive oil, whose use in the Fertile Crescent can be traced back to 6000 B.C.E. Olives arrived in the southern part of the Iberian Peninsula around 9th century B.C.E. with the Phoenicians. Ancient Rome saw huge quantities of olive oil from Hispania Baetica (currently Andalucía) being transported throughout the Roman Empire in millions of amphorae (made in Baetica). Spain leads production of olive oil to this day, with 45 percent of the global total. The majority (65 percent) of Spanish olive oil production is sold to Italy, where this oil is mixed with others (normally of the same quality, but not always) and sold under an Italian label.

Though ceramic dishes or tinned sardines are the standard take-home souvenirs for visitors to Lisbon, a less traditional – but still unique – gift from the city is the source of the warming aroma that permeates its cafés morning, noon and night. A strong bica (espresso) is an integral part of Lisbon’s smellscape, and the few chimneystacks in sight over peripheral skylines reveal that there are still local businesses providing beans to restaurants and traditional stores here. Consuming this product, which has a long history, is deeply embedded in the city’s day-to-day, but cultural shifts (today it is quaffed more at the bar rather than at home), means many of the old coffee shops are now obsolete.

We’d just about given up on hotpot, what with last year’s scandals of rat meat parading as lamb and opiates mingling with the Sichuan peppercorn to give diners a real buzz. But 2014 has seen the trend of farm-to-table dining hit Shanghai in a big way, spurred on by these food safety concerns. The most recent entrant to the organic dining scene is the aptly named Holy Cow. More than just a phrase made famous by Chicago Cubs announcer Harry Caray, Holy Cow is a healthy hotpot restaurant specializing in – you guessed it – beef, plus vegetables sourced from owner Anthony Zhao’s family farm. Loyal CB eaters might remember Zhao from his Shanghainese lunch hotspot Mi Xiang Yuan.

A legendary snack bar sits on a corner of Praça Luís de Camões, a busy square dedicated to one of Portugal’s most celebrated poets (his most famous work is the epic Os Lusíadas, a fantastical interpretation of the Portuguese voyages of discovery, narrated in Homeric style). The square is a major thoroughfare in Chiado and witnesses thousands of journeys daily. Many passing through make a pit stop at O Trevo. This tiny and perpetually packed eatery has historical roots in the area; traces of the old sign, “Leitaria Trevo,” over the marble entrance reveal its beginnings as a dairy some 80 years ago.

Behind a discreet entrance on one of Lisbon’s principal avenues, a sophisticated environment with a minimal interior houses a loyal Luanda-Lisboa jetset crowd who is here for the great food – and great music. Poemas do Semba, its walls decorated with black-and-white photographs, is an unlikely find in this neighborhood. Santos is the former stomping ground of the Portuguese nobility; today some of their former palaces have been turned into embassies or luxury hotels. Students and a design-y crowd have taken over as well, thanks to the nearby college. This exclusive African restaurant was opened in 2014 by the famous Angolan singer Paulo Flores, a semba exemplar who has numerous albums to his name.

Each morning, 82-year-old Giorgos Chatziparaschos’s bicycle pedals clank and echo down the cobblestone streets of the Venetian-era port city Rethymnon, on the island of Crete. For almost 60 years, he’s parked his bike in front of a 17th-century building where a simple hand-painted sign reveals his family name and his family business. By eight o’clock he has donned his apron and hat, and with the steely determination that underlies his work ethic, he begins to roll out the dough. Chatziparaschos is one of the only pastry makers in Greece specializing in handmade kataifi. The traditional phyllo pastry looks like shredded wheat, with strands as thin as vermicelli.

You sit down for a meal with family or friends, and no one can decide what to order. Well, some can, some can’t, and it goes on for ages. The waiter stiffens when you ask one more time for her to come back. But go to the basement restaurant of Shavi Lomi in Old Tbilisi, and you have the answer for dithering relatives and pals: the gobi, or “Friends’ Bowl,” filled with a colorful selection of classic Georgian dishes. The word shares the same root as the Georgian word for “friend” – megobari – and so, of course, a gobi bowl is for sharing. It’s a big wooden bowl, filled with a mix of different dishes and as many spoons as you need.

Cacilhas is the waterfront area of Almada, a small city reachable via a €1.20 ferry ride from Lisbon’s Cais do Sodré terminus. The district is heavily marked by its shipbuilding past and has an industrious character that, for now, is still preserved in its food culture. Right in front of its boat station is a concentration of traditional marisqueiras, typical seafood houses from where you can glimpse a sweeping view of almost the whole of Lisbon across the other side. The seafood platter is a must in any of these traditional spots. It is usually composed of stuffed crab, spiny lobster and giant prawns, accompanied by the classic amêijoas à bulhão pato – clams cooked in garlic, coriander, pepper and olive oil.

Hidden within Mouraria’s maze of narrow streets is a tiny eatery offering usually hard-to-find fare in Lisbon: Goan cuisine. Situated a couple of minutes away from Martim Moniz – a revamped square that some years ago was named the multicultural core of the capital – this haven of flavors is a veteran of food diversity in the neighborhood. Tentações de Goa (“Temptations of Goa”) opened 20 years ago, when the multi-ethnic character of the area was more marginalized and not considered cosmopolitan, and when international restaurants were not as numerous and crowded as they are today. In the 1990s Maria, the now-busy owner of the small restaurant, was just a regular customer here, an avid fan of the elderly Goan woman who originally ran the place.

Like so many other Greek specialties, bougatsa has a long history, in this case one that stretches all the way back to Byzantine times. Bougatsa is mainly a breakfast pie with a phyllo pastry made of flour, softened butter and oil that requires a great deal of skill to prepare. This pie is made and enjoyed all around Greece, but particularly famous are those made in northern Greece, especially in Thessaloniki and Serres. Turkish börek is a close relation, and similar pies are traditional to many eastern Balkan countries that were formally part of the Ottoman Empire. The tradition of bougatsa making really took off around Greece in the early 1920s with the arrival of the Greek refugees from Asia Minor and Cappadocia.

Athens, unofficially known as the Big Olive, has many delightful spots for a picnic in all seasons. Okay, in summer perhaps you’d rather be on the beach – and that can be arranged if you hop on a bus or tram for the southern coastal suburbs of Voula, Vouliagmeni and Varkiza – but in the city proper you can spread your meal on a hillside with a view of the Acropolis. With the weather often sunny and mild even in February, all you need is a little DIY initiative and the ability to resist the temptation of a snack at one of the many “fastfoodadika” or a sit-down meal in an air-conditioned taverna.

It is 9 p.m. and we are packing our bags for a red-eye flight to Poland when I realize we have no chacha, Georgia’s otherworldly elixir of distilled fermented grape pulp. We never, ever travel without chacha, and there is no way we’re going to buy over-the-counter, factory-produced product – and not because it’s over-priced. Chacha is a potion brewed by the hands of masters over wood fires in hammer-battered stills sealed in a paste of dirt and ash. Without the human touch – the artistry – chacha is just a soulless, liver-grinding liquor. I make the call.
