Stories for post colonial kitchens

The eyes of Tacacá do Norte’s harried staff widen as yet another customer arrives during the lunchtime rush. The bedroom-sized snack bar can barely hold one line of chairs around its bar but they have somehow managed to squeeze in two. Impatient regulars shake hands and whistle “psst” to the young men staffing the establishment, who gingerly hand steaming pots of shrimp soup and freshly puréed juices over the packed bar.

Sometimes the wine is so good, you forget about the food on your plate. And sometimes, the simplest bite has you forgetting your expensive wine, the people you’ve come out to dine with, and maybe even your own name. Your friends around the table are all laughing, and you have no idea about the joke. For a few seconds, you're lost in primitive aesthetic bliss, pure satisfaction, and something akin to communion with the universe. Here are a few moments from 2024 when we got lost in food, oblivious to the jokes and comments of our competitions at tables in Barcelona, La Garrotxa (in north Catalonia), and Galicia.

We didn’t exactly receive a warm welcome at Feira do Relógio, a weekly market that unfolds along a suburban strip north of Lisbon’s city center. “I saw you taking photos from the bridge! What are you doing?” shouted a man as he approached us aggressively. “You can’t take photos of people!” We explained calmly that we were taking photos for an article, and that people would not feature in those images. He hassled us a bit more before eventually wandering away. Later, we saw him selling knockoff socks from a bag slung over his shoulder. The rest of our visit was event-free, but the incident was a reminder of the occasional semi-legal nature of this market.

On a narrow and, until recently, slightly forgotten street in Lisbon’s city center, a simple Cape Verdean eatery is holding its own. As one of the few tascas serving up African dishes in this part of town, Tambarina, with its dozen tables and keyboard and mics set up in the corner, bears testimony to this urban quarter’s historical connections to the people of Africa’s northwestern archipelago. Rua Poço dos Negros – a street whose name (poço means “pit” in Portuguese) reveals a disturbing history as a mass grave site for the bodies of enslaved people – is on the border of what until two decades ago was known as “the triangle.” This is an area extending to São Bento and which in the 1970s became home to a new group of migrant Cape Verdeans.

Despite Brazil being the largest of Portugal’s former colonies, the presence of its people in Lisbon has only been felt recently. During the 1950s and 60s, Brazilians in Portugal were limited to small groups of students, a few migrant adventurers and those Portuguese descendants born in Brazil who decided to return to the motherland. However, since the 90s, a more regular coming-and-going has been taking place between Brazil and Portugal. This pendulum-like swing of migration is a consequence of their respective political and economic crises and moments of growth. At the beginning of that decade, many Brazilians moved to Lisbon in the wake of the difficult inflationary crisis that was affecting South America’s biggest nation. By 2005, they formed the largest foreign community settled in the Portuguese capital, with more than 30,000 residents.

Lisbon’s communities from Portugal’s former colonies provide the strongest link to the country’s past, when it was the hub of a trading empire that connected Macau in the east to Rio de Janeiro in the west. Though integral elements of Lisbon life, these communities can sometimes be an invisible presence in their adopted land, pushed out to the periphery of the city. With our “Postcolonial Lisbon” series, CB hopes to bring these communities back into the center, looking at their cuisine, history and cultural life. In this third installment of the series, we dive into Lisbon’s Mozambican community. 

Outside of an airy pink wedge of a building off of Praça do Chile, protected from the bright midday sun by an awning with “Fox Coffee” printed on it, we waited with great anticipation for lunch: cachupa do curaçao, a specialty of the house which involves stuffing a leaf of steamed Lombardo cabbage with stewy cachupa and a poached egg. This was our third visit to the so-called “King of Cachupa” and we were working our way through the menu trying to identify what was so different and superior about this cachupa, the signature dish of Cape Verde, a former Portuguese colony situated off of the coast of West Africa.

In your granddad’s Lisbon, lunch in a tasca may pass silently, the television, on mute, tuned to the mind-numbing variety show Praça da Alegria. It may take years to achieve a first name basis with the dour man behind the counter. On his menu, scribbled on a paper napkin and taped to the window, anything but cozido portuguesa on a Thursday would be tantamount to treason. Now don’t get us wrong, we have a deep appreciation for the code of that bastion of traditional Portuguese cooking that is the tasca – the knee-jerk resistance to change that has helped preserve neighborhood culinary traditions against a ferocious tide of globalized sameness – but, let’s admit it, fun is generally not on the menu.

In Oaxaca, having a proper, hearty breakfast and also being on the go are not necessarily contradictory things. Memelas de San Agustín, an easy-going spot that has been feeding hungry Oaxacans for at least 15 years, is living proof. This small stall doesn’t have an official name – people just started referring to it this way since it’s located right behind the Iglesia de San Agustín on Fiallo Street. But it’s become a beloved destination for delicious versions of its namesake dish – essentially thick corn tortillas that are pinched around the edges and in the middle, making the texture slightly uneven so that their toppings (and their juices) stay in place.

Every Sunday, a vendor named Domitila heads out from a village called Etla and makes the hour-long journey to Oaxaca, where she sets up a small stand at a market on the north side of town and sells tamales filled with her homemade stews and moles. The many ingredients for these stews and moles cook slowly, for hours, after which Domitila combines them with spices, chile, chicken or cheese and mixes them into a cornmeal dough spread inside a cornhusk and then steamed – the quintessential Oaxacan snack, one that combines all of the area’s agricultural and culinary richness in one package.

After the Vietnamese War, many of the refugees bound for France landed in Paris. A minority spread out to other French cities like Toulouse, Lyon and Marseille, the latter being a ville refuge (refuge city) due to its bustling port. The small community in Marseille used to be concentrated near Joliette, before its building boom. But now they’re scattered across the city, taking their cuisine with them. No matter, for we know exactly where to go whenever we’ve got a hankering for Vietnamese: We join the line of people waiting for a bowl of pho outside Nguyen-Hoang.

It was our first Tbilisi summer stroll down the city’s main drag, Rustaveli Avenue; two sweaty, newly arrived pie-eyed tourists tripping on the 2001 reality. There were billboards advertising the recent kidnapping of a Lebanese businessman, policemen in crumpled gray uniforms extorting money from random motorists with a wag of their batons, and at the top of the street, a former luxury hotel looking like a vertical shanty was full of displaced Georgians from Abkhazia. Parched and cotton-mouthed, we entered a café of sorts for cool respite. The room had high ceilings, was stark and all marble-tiled, including the long, wide bar. A splendid social-realism mosaic of women, grapes and wine was laid into the back wall. The counter was decorated with a few tin ashtrays and a spinning rack holding several tall cone-shaped beakers filled with technicolored syrups.

So ubiquitous as to be rendered almost invisible, the sticky bottles of soy sauce that decorate every table, counter and shelf in Japan are never far from reach. Both an ingredient and a condiment, there isn’t a chef in the land who would begrudge a diner a dash of the sleek black sauce – be it at a Michelin-starred sushi restaurant or a back street ramen joint. While the bottles are often slung behind stacked menus, their everyday presence is no sign that their contents should be underestimated. As common as table salt but infinitely more complex, the sweet, salty mix offers a glimpse of the sought-after umami flavor Japan is famous for.

In Quechua, a family of languages dating to the Inca Empire and still widely spoken in Peru, the word “wa” implies things that are hidden, or unknown. According to one widely held etymology, “warique” (wah-Ree-kay) suggests a secret place where one would go to savor food. Nowadays, keeping such a secret would be well and good for cultivating a sense of mystery, but not so good for building a clientele. When we met Jimmy Lozano, 42, at Warique, his Jackson Heights restaurant, he offered a sense of the word that nods to the age of social media. “When you go to a place where they cook good” in Peru, he told us, “we say, ‘I found a warique.’”

It’s been three years since that fateful windy day in December when Nacho, a friend of ours who usually prefers the quiet of his house to popular cafés or crowded bars, suggested we have a soup at Kadıköy Çorbacısı. Together with a couple of shops selling knockoff shoes and the back entrance of a famous American fried chicken restaurant, this soup spot occupies the ground floor of an ugly building located on an eerily silent alley by the Boğa, the trademark bull statue considered to be the symbol of Kadıköy. Anticipating the warmth awaiting us inside – evident from the fogged-up windows – and eager to thaw our body with some soup, we entered the restaurant with high expectations, which were resoundingly met.
