Stories for post colonial kitchens

Considering that Brazilians form the largest foreign community in Lisbon, it’s disappointing there aren’t more “green and yellow” restaurants in the city. Outside of a rodízio (all-you-can-eat grilled meat restaurants) boom that came and went in the 80s, there’s not much in the way of interesting Brazilian spots in the city (with a few exceptions, of course). So we got our hopes up when a new Brazilian place opened in the riverside district of Cais do Sodré. Located on the riverfront, in the warehouse where for many years the traditional restaurant Pescaria served its fish specialties, Boteco da Dri is smack in the middle of a busy nightlife area – its neighbor is B.Leza, Lisbon’s legendary African music club.

Damis Pithis has led a global life. He left his home on the island of Chios at the age of 17 to move to London. There, over the years, he built a successful career in the shipping industry. But at the age of 48, he felt like it was time for a change. Leaving behind his life in London, Pithis moved back to Greece with a dream: to build a farm. This decision didn’t come completely out of the blue. Damis has long been an avid hunter, and through this hobby he was able to visit several farms while in England, which in turn helped shape his vision. He dreamed of building a beautiful farm that was in tune with nature and respected the local landscape, where he could rear healthy, happy animals, including cow breeds that were new to Greece.

Unusual takes on ramen abound in Tokyo, from carefully balanced chocolate and lamb creations for Valentine’s Day to algae-tinted blue broth, but few leave you with cravings and daydreams lasting for weeks. Adding a quality twist on ramen is a challenge – simplicity is one of the dish’s most vital elements, as with most Japanese cuisine. Yet friends Yamada and Sumida struck gold with one perfectly measured twist: smoke. Tucked away near Rikkyo University in a quiet area filled with student-friendly restaurants and cafés, their modest ramen joint Kemuri (which means “smoke” in Japanese) serves their latest experimental dishes without straying from the joy of good ramen at its best – quality ingredients cooked to perfection.

A guest arriving at a Greek home should expect an overwhelming array of traditional welcoming treats that will be presented upon their arrival, from coffee and cookies, to cakes, homemade liqueurs, loukoumi and more. But there’s one sweet something that has long been linked with hospitality and welcoming in any proper, traditional Greek home: glyko tou koutaliou, or “spoon sweet,” a type of fruit preserve whose roots go way back to ancient times. For centuries, preservation was a necessary part of the harvest – it was the only way to make excess fresh fruits and vegetables last for as long as possible.

“The future is the past,” says Salva Serra, quoting winemaker Pepe Raventós, the latest in a long line of winemakers to run the famed Raventós i Blanc. While his lineage might not be quite as storied, Salva knows a thing or two about preserving the past – the Serra family has owned La Perla BCN, a restaurant located in the upper Poble Sec neighborhood, very close to Montjuïc Park, since 1965. It’s the type of old traditional restaurant that you only learn about from word of mouth – a friend who only went there because another friend told him about it. The wonderful area where La Perla BCN is situated, with the Poble Sec residential neighborhood on one side and the nearby gardens of Montjuïc hill, home to museums and theaters, including the Grec Theater (built for the Universal Exhibition of 1920), on the other, was not always so charming.

Throughout Italy, Naples is known as the “city of coffee” – the Neapolitan caffè is synonymous with high-quality brew. And within the city, there are a number of stories and legends that swirl around the black stuff. Coffee is far and away the most popular caffeinated drink in the city. Neapolitans are not tea drinkers. In fact, most see it as a kind of medicine, probably because when you’re sick to your stomach the doctor recommends eating white rice and drinking tea. But it’s not just about the coffee itself. In Naples, drinking coffee is a true ritual, a complex set of unwritten norms, customs and ancient habits.

We met Don Tirso in the center of Santa Ana Tlacotenco, one of 12 villages in Milpa Alta, Mexico City’s southernmost delegation, on a sunny and cool morning. The road from village to village in Milpa Alta snakes through fields and around ancient volcanoes, slowly climbing up the mountains that overlook the beast of a city to which it formally belongs. We take a truck to his property, part of a farming cooperative ceded to the campesinos (farmers) following Mexico’s decade-long revolution that ended in 1920, which focused heavily on agrarian reform. In his village, the city’s only rural area covered with forests and farms, his generation of elders is the one that mostly carries the torch of their direct connection to the Aztec past.

Lisbon’s communities from Portugal’s former colonies provide the strongest link to the country’s past, when it was the hub of a trading empire that connected Macau in the east to Rio de Janeiro in the west. Though integral elements of Lisbon life, these communities can sometimes be an invisible presence in their adopted land, pushed out to the periphery of the city. With our “Postcolonial Lisbon” series, CB hopes to bring these communities back into the center, looking at their cuisine, history and cultural life. In this fifth installment of the series, we look at Lisbon’s Goan community.

The owners of Zuari and Delícias de Goa, two of the most traditional Goan restaurants in Lisbon, share not only similar backgrounds – both migrated from Goa to Mozambique before settling in Portugal – but also the dedication to keeping family traditions alive.

Last year, Casa de Goa, celebrated its 30th anniversary in Lisbon. Located in Alcântara, it’s a cultural hub for Goans in Lisbon, keeping both traditions and memories alive. Besides a library and museum, there’s a restaurant – currently closed but soon to re-open – and regular events, conferences, exhibitions, games, social gatherings and food workshops. Casa de Goa is particularly active in promoting traditional Goan music and dance: it hosts a folk dance group called Ekvat and the music group Gâmat. Jerónimo Aráujo e Silva is the musical director and also the composer of some of the original songs.

It’s dinnertime and every table is full at Hayata Sarıl Lokantası, a cozy restaurant with crisp white walls, a patterned-tile floor, and cheery flowers on the café-style tables. “Are you going to serve that sometime tonight?” a floor manager barks sarcastically into the cramped kitchen, where black-apron-clad servers scramble to fill new plates while a tiny dishwasher churns through the old ones, steaming up the room like a sauna on an already sultry Istanbul summer night. The scene is likely familiar to anyone who’s worked in a restaurant, but with a major difference: the diners are members of the city’s homeless population, being cooked for and served by volunteers and people who once lived on the streets themselves.

We had heard about Kiwi Vegan Café even before a dozen thuggish carnivores raided the little vegan restaurant in 2016, munching grilled meat, smoking cigarettes, throwing sausages and fish at customers and starting a brawl that spilled out onto the street. The incident grabbed international headlines, setting the café as a battleground of Western liberalism versus Georgian nationalist extremism. Indeed, many Georgians fear their identity is threatened by “non-traditional” values, such as homosexuality, non-Orthodox religions and electronic music culture. In a land that boasts of its longstanding virtue of tolerance we are seeing a rise in neo-fascist groups and xenophobia.

The holiday season is one of the more subdued times of the year in Mexico City. Many people leave the city for vacation or to visit family and friends in other parts of the country. We, however, tend to stick around more often than not, traveling around the city and enjoying the relative peace. That’s how we happened upon Coox Hanal, a restaurant hidden inside a century-old building in the Centro Histórico that specializes in the cuisine of the Yucatán, the peninsula that juts out into the Gulf of Mexico and the Caribbean Sea like a hitchhiker’s thumb. The adventure began when we trudged up a few flights of stairs to the second-floor landing, where we found the restaurant’s entrance. It, along with the stairwell, was plastered with posters and artwork from the sun-kissed and beach-filled Yucatán.

As forty three countries get ready to compete in the 63rd edition of the Eurovision Song Contest, the crowds have descended upon Lisbon. The city has the privilege of hosting this year’s contest because in 2017 the young Portuguese singer Salvador Sobral was crowned the winner of Eurovision with his melancholic love song “Amar Pelos Dois,” which was written by his sister, Luisa. Paying tribute to Portugal’s folk traditions, his stripped-down performance was a far cry from the kitschy bombast normally presented on the Eurovision stage. In spite of (or perhaps because of) the bad hairdos and costumes and the usually uninspired songs that range from camp to downright strange, Eurovision is one of the world’s longest running and most popular music competitions.

We returned to Tbilisi in 2002 with the intention of staying one year. On that first day back, our friends took us to a chummy brick-walled cellar in Sololaki. There was enough sunlight coming down through the door to illume low pine tables and seating for fifty people max. In a refrigerated counter, menu items were displayed: beef tongue, tomato and cucumber salad, assorted cheeses, badrijani (sliced fried eggplant stuffed with a garlicky walnut paste), all the standard stuff. It was a Georgian greasy spoon, for sure, with a kitchen that would make a health inspector shudder, but the khinkali were really good, and the house wine was as decent as it comes. The name of the place was Dukani Racha. Little did we know people had been coming here for decades.
