The restaurant that Inês Mendonça dreamed of can only be described using the Portuguese expression levantar as pedras da calçada – literally, to raise the stones from the sidewalk” –to create something totally new and groundbreaking. When Porto’s now-popular Ruas das Flores was being restored, the din of construction clanging as workers labored to turn it into a pedestrian-only thoroughfare, Inês was seeing miles ahead. It was there that her restaurant would open its doors, she decided, and it would be a place different from all the rest – relaxed and full of curiosities.

The Neapolitan stairs are ancient urban routes that connect the upper city (the Vomero district) to the lower city (the historic center). The most famous of these stairs is the Pedamentina di San Martino, a staircase of 414 steps dating back to the 14th century, which starts from the old center and reaches the Castel Sant’Elmo, on the Vomero hill. Along the way there are beautiful panoramic views of Naples. One reason to walk these Neapolitan stairs (besides the views) is to look for Totò Eduardo E Pasta E Fagioli, an old tavern with an amazing terrace overlooking historic Naples. The name is dedicated to two great masters of Neapolitan theater and cinema: Totò (Antonio de Curtis) and Eduardo de Filippo.

The consumption of sake is a sacrosanct affair in Japan. In Japanese, the term “sake” technically denotes all alcohol, though it is often used interchangeably with the less ambiguous “nihonshu.” The true genesis of the island nation’s archetypal brew is lost to time, though the divine concoction of water, rice, yeast and koji mold likely originated, or at least became more standardized, sometime during the Nara period (710-784 AD) when Empress Genmei consolidated rule over an agrarian society. Most people in this fledgling nation state participated in animistic and ancestral folk worship, within which rice, and by extension nihonshu, came to play important ritualistic roles.

Despite being one of the liveliest of Lisbon’s neighborhoods, Alvalade doesn’t appear in most city guides. Maybe because of the location, north of downtown and next to the airport, with planes taking off and landing being part of the usual sights and sounds. Maybe because it is mainly a residential area, with few – if any – hotels available nearby. Maybe because it is seen as a strictly local neighborhood, with no museums, elevated viewpoints or places to listen to fado. But despite all that, it has a lot to offer, especially to those who want to eat, shop or simply roam the streets with the locals. Let’s focus on that first verb: to eat. In Alvalade, there are still plenty of places that offer traditional Portuguese food at traditional Portuguese prices: less than 15 euro per meal. Some of the neighborhood’s best tascas have been recently renovated, with a slight increase on the bill – nothing too hefty – but keeping the same old-style cuisine and the daily dishes that have been attracting a faithful clientele for the last few decades.

On June 20, Georgian Prime Minister Mamuka Bakhtadze signed a decree abolishing the Writer’s House of Georgia, Tbilisi’s leading institution of literary culture and the home of Cafe Littera, the restaurant that gave birth to the culinary revolution Georgia is currently going through. As soon as the ink was dry, the Writer’s House accounts were frozen and its directors were suddenly dismissed with only half a month’s salary. The fate of Cafe Littera is unknown. The story of the Writer’s House goes back to 1905, when philanthropist and father of Georgian brandy, David Sarajishvili, completed construction of an Art Nouveau masterpiece of a house to commemorate his 25th wedding anniversary to Ekaterine Porakishvili.

As women in pink polo shirts conveyed steaming tureens, pungent earthenware crocks and freshly-baked sweet loaves, it was clear that the Azores’ celebration of the heavenly spirit had a strong component of earthy sustenance. We were at a função (function), a communal meal built around bread, wine and traditional meat dishes that forms a central part of the archipelago’s unique Holy Ghost festivities, which take place in villages around the islands over the 50 days after Easter. “This is one of the island’s most deeply respected traditions and it’s taken very seriously,” explains José Álamo Meneses, mayor of Angra do Heroísmo, a jaw-droppingly beautiful UNESCO World Heritage city on the island of Terceira. “Only around 10 percent here go to mass regularly, but they fill the churches on the day of the Holy Spirit,” he adds, before joining 250 fellow citizens for lunch in a hall hung with patchwork blankets in the hillside neighborhood of Bicas de Cabo Verde.

We bit into the khinkali, its handmade dough indelicate and sticky, as we like it. Steam poured out the newly made hole, and we blew lightly before slurping up the rich stock and gobbling the dumpling down, even the puckered knob. The ground pork and beef was packed with fresh cilantro, the juices absorbed into the jacket. It was a perfect khinkali. A home wrecker. This seducer of a dumpling is molded by the knowing hands of Manana Osapashvili, born in Gudamakhari, a mountain village in Pasanauri, the heartland of khinkali. A professional cook for 29 years, Manana has been making khinkali since she was 10 years old. Today, she is running the kitchen at Sioni 13, located at the Tbilisi Theological Seminary in Old Town. It is a part of the city known for its tourists and hookah bars, and the mediocre "traditionnel" Georgian restaurants that cater to them.

Olivos Comida y Vinos is like an independent movie playing at a small cinema on a quiet street in Sants, a neighborhood just outside of Barcelona’s center. It leaves you with the impression of having had an unexpected, intimate connection with something personal and precious. They don’t have customers – they have fans. Decorated with plants and flowers in a comfortable setting of simple, natural materials, Olivos is full of thoughtful details (enough space between tables, no table cloths for green eating) and super-friendly service. The exquisite food follows a sustainable “slow food” philosophy, where products should be local and obtained in both a clean and ethical way, and everything is cooked with a highly professional hand. In Barcelona, where mainstream culinary trends, big hospitality groups and huge investments in interiors and PR are frequently the rule that moves the masses, the independent, honest spirit at Olivos is a treasure.

Agapi Stavrakaki was born in Anogia, a mountain village on the island of Crete famous for producing fine produce and excellent musicians. Decades before she would open Raeti, a delightful restaurant in Athens’ Ambelokoipi neighborhood which pays homage to her island home, a 10-year-old Agapi worked by her grandmother’s side at her family’s vineyard in Anogia, cooking for the workers harvesting grapes and making wine. She and the other women would prepare huge quantities of food in enormous kettles. Despite being cooked in bulk, the food was always traditional, fresh and tasty – Cretans have high standards! Before continuing with Agapi’s story, a few things about Cretan cooking: One of the most legendary of Greece’s regional cuisines, it makes use of all the simple ingredients that are offered by nature with an open hand.

[wptab name='Story']Up on the walls of O Frade’s polished interior is an old radio that catches the eyes of most clients. The music wafting from it is part of an illusion: “We hid the wireless speakers we use inside it because the radio doesn’t work anymore,”' says chef Carlos Afonso, who runs this small new restaurant alongside his cousin, Sérgio Frade. The radio came from their grandmother’s house and is there to remind them of the very long afternoons the two cousins spent around the dining room table, eating with their families. “That’s where we first learned to appreciate food,” Carlos recalls. Food has always been a serious subject for both. O Frade’s namesake is an old taberna that was run by Sérgio’s family members in their hometown of Beja during the ’60s. Back then, tabernas were a big part of the way of life in the Alentejo region, serving as meeting points where men gathered after work, to eat (a little), drink (a lot) and (when the mood was right) to sing the famous Cante Alentejano, polyphonic form of singing that UNESCO designated as an Intangible Cultural Heritage in 2014.

“What year did you marry your wife?” we ask Rafael Hernandez, known as El Negrito of Mercado Medellín, one Saturday afternoon at his vegetable stand. “I don’t know!” He breaks into uncontrollable laughter, “She knows though!” “What year did we get married, Gorda?” he asks the woman next to him. Her hair is tightly permed and her hands are ever-busy sorting vegetables and tallying accounts “I was 21 and you were 25, Negro – so more than 50 years,” Josefina says. Rafael, now 79, with a shock of white hair and an easy smile, happily bustles around his stand.

If Mexico had to choose a national flavor, the chile pepper would without a doubt be the winner. The only issue might be which chile would take the top spot in such an honor. The country is home to more than 200 variations of chiles, stemming from some 64 distinct varieties. Almost no meal is eaten without some form of chile-based salsa. And while the variety of chile ranges from eye-twitchingly spicy to robust, sweet and smoky, seeking out a dish in Mexican cuisine that doesn’t incorporate at least one type of chile would be a difficult – if not futile – venture. When FIFA held the 1986 World Cup in Mexico, the official mascot was Pique, an anthropomorphized green chile pepper wearing a sombrero. The meaning was not lost on the world, and least of all on Mexico itself. Let it be known: Mexico is home of the chile.

Winding between the teenage fashion havens of Harajuku and Shinjuku is the ultra-hip Cat Street, lined with countless second-hand clothing stores and embellished with a single origin coffee shop. Just a stone’s throw to its south lies a nondescript concrete building. Unassuming from the outside, for the past 15 months its second floor hid a sake bar. The interior was a stylish and modern take on Japanese design – a sleek counter in the center, tatami mats and sliding doors splitting the space into three. Here, a young crowd gathered, sampling the latest sake and regional dishes – from Miyagi beef tongue meatballs and Iwate squid sashimi to Akita smoked pickled daikon topped with cream cheese. Given its relatively short residency, one might be forgiven for thinking the bar was a trend or a poorly conceived dream. But Mysh, (pronounced “my shu” meaning “my sake”) didn’t go out of business, nor were any of its members of staff full time. Their lease having expired, the founders decided to take some time out before finding a new home – time to review their goal of creating something more than a dining establishment, of creating a community space. Currently, the bar only exists as a monthly pop-up event, but its founding story and model are indicative of Tokyo’s broader culinary culture - one that is simultaneously steeped in tradition while constantly reinventing itself under the city’s bright neon lights.

When Nikos Thomas was desperately looking for work in 2005, he was forced to switch gears from music and take on a particularly unglamorous gig: working at the Hooters in Athens Mall as a grill cook, the best-paying job he could find. Little did this rocker know he would be sacrificing his life-long passion of music for a new and tastier one – cooking. Two years out from his Hooters gig, Nikos found himself enrolled at a chefs’ school, eventually moving on to work in restaurants, then hired on as chef at a hotel on the island of Zakynthos. And as Nikos opened himself up to new passions, more found its way into his life.

On the walls at Haritna Restaurant are homages to simple sights: a large gate, ancient Damascene windows – it’s a scene that hopes to inspire the very particular feeling of sitting in the middle of a Damascus square, down a well-trodden, old lane. For in Arabic, haritna means “our lane.” Also a colloquial term for neighborhood, Haritna evokes a sense of home for those now living far away. In fact, owner Loay Bakdash, originally from Damascus himself, had dreamed of opening such a restaurant while working as a civil engineer in Saudi Arabia. But he didn’t want it to be a place where people would just come and eat. “I wanted the customers to feel that they are in one of Damascus’ neighborhoods, among their acquaintances in a family-friendly atmosphere,” he says.
