Mid-Autumn Festival (中秋节, zhōngqiūjié) lands on the 15th day of the eighth lunar month, relatively near the autumnal equinox; in 2017, it falls on October 4 and coincides with the National Day holiday. Also sometimes called Mooncake Festival, it’s a public holiday in China and Taiwan on which families gather to give offerings to the full moon, float sky lanterns and eat mooncakes (月饼, yuèbing). A culinary tradition with legendary roots, mooncakes are sold everywhere from grocery stores to five-star hotels and come with competing origin stories that relate how these sweets came to represent the holiday.

Up above Freedom Square where the Sololaki and Mtatsminda neighborhoods blend together, there is a 100-year-old building with an apartment five steps below the sidewalk. It’s a warm, intimate space, part living room, part museum. A massive collection of wine glasses hang from the ceiling, 19th-century framed portraits of Georgians decorate one wall above a piano, while opposite are glass cases displaying antique ceramic pitchers and elegant, polished drinking horns called kantsi. There are also two vintage silver vessels – exquisite ashtray-sized pans with long stylized handles used in days of old for drinking wine to special toasts. This cup is called an azarphesha, and this entire collection (and the walls containing it) belong to Luarsab Togonidze, a folklorist, author, entrepreneur and co-owner of this welcoming restaurant, also called Azarphesha.

Tarlabaşı, right in the heart of Istanbul’s European side, has the reputation of being among the worst areas in the city. While it is certainly run down, we have spent considerable time in the quarter over the years and have had no problems. Its reputation is exaggerated, and if you aren't looking for trouble, you aren't likely to find it. Amid the once-elegant and now dilapidated century-old apartments built by the Greeks and Armenians that originally lived in the area, there are other buildings from a variety of eras on the verge of collapse, while a massive “urban renewal” project that has been ongoing for over a decade amid legal and financial issues has stuck out like a sore thumb as the rest of the rugged quarter retains its character.

A friend once said that God could never bring all of his people to one place. But then he visited the Aksaray neighborhood in Istanbul, a stone's throw from Sultanahmet's iconic mosques. Aksaray acts as both a landing point for new arrivals and a launching pad for those trying to make it to Europe. The neighborhood provides a culinary roadmap for the city’s immigrant communities and it teems with delicious diversity – with restaurants serving everything from Somali to Georgian fare. Unlike more recent transplants, Ethiopians have been in the city for a long time. Take the old story of Beshir Agha, for example. Born in Ethiopia, he was brought as a slave to the Ottoman Empire but was eventually appointed Chief Harem Eunuch in Istanbul under Sultan Ahmed III in 1716, later becoming the third most powerful person in the palace.

It was August 31, 1957, and Yiannis Dritsas, a representative of Nestlé Greece, was at the 22nd Thessaloniki International Fair. His mission? To present a new iced chocolate drink for kids. It was simple, really: add milk and cocoa powder to a shaker (essentially a cocktail shaker), shake well and serve. During a break, an employee of the same company named Dimitris Vakondios went to the kitchenette to prepare his regular instant coffee – using Nescafé, Nestlé’s coffee brand, of course. But he couldn’t find hot water anywhere. Desperate for his caffeine, he decided to try and copy what his boss was presenting to the public, only instead of cocoa powder he used his instant coffee and instead of milk he used cold water. In the shaker it went and boom, the frappé was born.

Unlike many other pulses, most bean varieties were not native to the eastern Mediterranean, originating instead in Central and South America. Yet they have adapted well to the climate in Greece (and across the globe) and are now quite popular and an important source of protein here, where they are cooked in a variety of ways. In fact, the bean soup known as fasolada is considered our national dish – it’s humble, affordable and easy-to-cook yet still hearty and delicious. Gigantes (“giants”) are particularly loved in Greece. These large white beans are also known as elephant beans, a nod to their size. Some of the best giant beans in Greece are grown in the country’s northwest, most famously in Prespes and Kastoria, both regions with a PGI (Protected Geographic Indication) for giant beans.

The last 12 months have been quite a ride. Unlike the past two years, 2022 seemed to pass in the blink of an eye. While 2020 was a year for protecting ourselves from a microscopic menace, and 2021 a year in which we still were struggling to reconcile our old ways and the world’s “new normal,” this year has been a time to reap all the improvements and reflections we did during some of the 21st century’s most challenging years so far. In the end, some values have played a key role for facing this brave new world: strength and resilience to keep moving forward, excitement and optimism for what it is to come, and gratitude for being able to enjoy life as it is.

Much has been written about the yamabushi of the Dewa Sanzan mountains in Yamagata Prefecture, about two and a half hours north of Tokyo via bullet train. The yamabushi are followers of Shugendo, an ascetic mountain religion best thought of as an amalgamation of Shinto, Buddhism, Taoism, and mountain worship. Shrouded in secrecy and more than a little mystery, their ascetic practices might seem more like superhuman feats to the layperson: yamabushi famously commit to often physically grueling, spiritual practices of self-denial, like circumambulating mountains on straw sandals year-round, or meditating for hours under freezing waterfalls. Food might not seem of great importance while in pursuit of enlightenment, but it turns out that what you eat in your spiritual practice is just as important as your other activities.

Daiji Takada, owner of Chabuzen, peeks out over the counter from the kitchen, which has about a meter-long strip of standing space for one at most. The interior of this narrow restaurant on the very fringes of the hip neighborhood of Shimokitazawa in western Tokyo isn’t much more spacious. Two low tables on tatami provide enough room for around six to squeeze in, and there are two stools at the counter – although occupying those spaces would almost certainly prevent anyone from getting out the door. With the surety of someone well-used to playing human Tetris, Takada deftly steps out and expertly delivers a plate of gyoza onto the table. He has just made these lovingly by hand and cooked them in a small, plug-in fryer.

Xiaolongbao first appeared around 1875, during the Ming Dynasty, in Nanxiang, a village on the northwestern outskirts of Shanghai. As the story goes, a vendor selling dry steamed buns decided to innovate due to stiff competition. Legend also suggests, however, that he copied the giant soupier dumplings from Nanjing. Whatever the case, there are several regional varieties of soup dumplings today, including Nanjing-style, which are actually called tāngbāo (汤包), literally meaning “soup bun,” and traditional Shanghainese xiǎolóngbāo, which have heartier wrappers that contain a larger pork meatball in a sweeter pork soup. It’s hot in Mexico City and Gerardo Vazquez, head chef of Nicos Restaurant, is thinking about cooling off. “Spring in Mexico City is hot,” he says, “And for me, it is very connected to Lent…so, fresh foods, cool things, vegetable-focused dishes.” Tostadas are on the menu at Nicos today – crunchy baked tortillas, one with a cobia fish ceviche, and another with smoked trout, yogurt, arugula and tomato – as well as an Acupulco ceviche with olives and capers, and a cool mango ceviche.
