Stories for original culinary backstreets

On a corner in Astoria, across the street from a bright blue-domed Orthodox church and in the shadow of the towering viaduct that carries Amtrak trains out of New York and towards New England, Gregory’s 26 Corner Taverna has been quietly recreating Greece for 13 years. At lunchtime in the outdoor patio, you mostly hear Greek spoken as old friends meet and order spreads of whole grilled fish, octopus and slabs of feta cheese sprinkled with oregano. A fisherman from out on Long Island might stop by with his catch of the day on ice for the owner, Gregory, to choose from, just like at a restaurant along the Greek coastline. After finishing their meals, each table gets free dessert, a tradition of Greek hospitality. At Gregory’s, it’s always a plate of cinnamon-topped halva made with imported Greek farina. Down to the cozy dining room filled with model ships and bright blue evil eye amulets, this place evokes life on the islands itself.

We bit into the khinkali, its handmade dough indelicate and sticky, as we like it. Steam poured out the newly made hole, and we blew lightly before slurping up the rich stock and gobbling the dumpling down, even the puckered knob. The ground pork and beef was packed with fresh cilantro, the juices absorbed into the jacket. It was a perfect khinkali. A home wrecker. This seducer of a dumpling is molded by the knowing hands of Manana Osapashvili, born in Gudamakhari, a mountain village in Pasanauri, the heartland of khinkali. A professional cook for 29 years, Manana has been making khinkali since she was 10 years old. Today, she is running the kitchen at Sioni 13, located at the Tbilisi Theological Seminary in Old Town. It is a part of the city known for its tourists and hookah bars, and the mediocre "traditionnel" Georgian restaurants that cater to them.

[wptab name='Story']Up on the walls of O Frade’s polished interior is an old radio that catches the eyes of most clients. The music wafting from it is part of an illusion: “We hid the wireless speakers we use inside it because the radio doesn’t work anymore,”' says chef Carlos Afonso, who runs this small new restaurant alongside his cousin, Sérgio Frade. The radio came from their grandmother’s house and is there to remind them of the very long afternoons the two cousins spent around the dining room table, eating with their families. “That’s where we first learned to appreciate food,” Carlos recalls. Food has always been a serious subject for both. O Frade’s namesake is an old taberna that was run by Sérgio’s family members in their hometown of Beja during the ’60s. Back then, tabernas were a big part of the way of life in the Alentejo region, serving as meeting points where men gathered after work, to eat (a little), drink (a lot) and (when the mood was right) to sing the famous Cante Alentejano, polyphonic form of singing that UNESCO designated as an Intangible Cultural Heritage in 2014.

When a streetcar ran down Queens’ Metropolitan Avenue in the first half of the 20th century, soda fountains like Eddie’s Sweet Shop were commonplace in big cities and small towns across America. Today, this hundred-year-old corner gem on Metropolitan in the leafy, Tudor-style enclave of Forest Hills is one of the last of its kind left in the country, and it certainly shows its vintage. On summer afternoons, Eddie’s still fills up with crowds of happy Queens kids, and the diversity of the clientele reminds you that fortunately, it’s not the 1920s anymore. The shop itself, though, is practically unchanged – every piece of equipment behind the counter, from the shiny Frigidaire to the tiny metal cabinet hand-painted with the words “hot fudge,” could be from a museum.

You pass through the doleful Imeretian coal town of Tkibuli, wind 750 meters up the Nakerala pass and just as you catch your breath from the climb, you lose it again dropping down from the summit, for you have entered Racha-Lechkhumi, one of the most gorgeous regions in Georgia. We were first here in 2004, for an art festival organized by a local poet who had the unnerving habit of always speaking in verse. Since that mind-bending weekend, the regional capital of Ambrolauri hasn’t changed much. There is a new little airport, a few modest hotels, a couple humble restaurants, and a giant bottle of Khvanchkara that still stands in the middle of town, though it has been renovated. The vibe is as mellow as ever.

Walk through Lisbon’s Madragoa, a neighborhood of cobblestoned streets and small houses, and you are likely to be hit with the intoxicating smell of freshly roasted coffee. Follow the scent and you are likely to find yourself in an utterly unique spot: Flor da Selva, one of the last wood-fired coffee roasters in Europe. Manuel Alves Monteiro, from Melgaço in northern Portugal, founded Flor da Selva in 1950, and Manuel’s son, Jorge, and grandson, Francisco are keeping the family business alive and kicking via an artisanal method – one they started using many years before anything artisanal was trendy, mind you. “My father was a coffee lover,” says Jorge, thinking back to when Manuel first opened his shop. “At this time, we were drinking a lot of mixtures with barley or chicory that were inexpensive, but he could see the potential for 100% coffee blends.”

The downright whimsy of Filomila is hard to ignore – or resist. Perhaps it is the red exterior with the French-inspired script or the vintage bric-a brac and posters that cover the walls. Or it could very well be the sight of all the pies, sitting patiently by the window just asking to be eaten. One thing is sure, most of the shop’s allure stems from the energy of its owner, Efstathia, who four years ago decided to go rogue after working in various Athens restaurants and open up with just 3,000 euros to her name, against all advice from friends and family.

Saturday, late afternoon, Jackson Heights. In the shadows of the 7, the elevated train that runs along Roosevelt Ave., sunlight is already giving way to street light; music spills from passing cars and lively watering holes; a few men and women hurry along on neglected errands. More than a few step into La Gran Via Bakery, lured by a show-stopping array of cakes and a long line of display cases filled with individually portioned pastries. At the back counter, Betsy Leites is poised, pastry bag in hand, over a bright white tres leches cake rimmed with strawberries and peaches. She squeezes out a cursive "Feliz Cumpleaños."

If Mexico had to choose a national flavor, the chile pepper would without a doubt be the winner. The only issue might be which chile would take the top spot in such an honor. The country is home to more than 200 variations of chiles, stemming from some 64 distinct varieties. Almost no meal is eaten without some form of chile-based salsa. And while the variety of chile ranges from eye-twitchingly spicy to robust, sweet and smoky, seeking out a dish in Mexican cuisine that doesn’t incorporate at least one type of chile would be a difficult – if not futile – venture. When FIFA held the 1986 World Cup in Mexico, the official mascot was Pique, an anthropomorphized green chile pepper wearing a sombrero. The meaning was not lost on the world, and least of all on Mexico itself. Let it be known: Mexico is home of the chile.

Based on NYC Media’s new food TV series, “Native Dish: United Flavors of NYC,” Culinary Backstreets brings you a behind-the-scenes look at some of the New Yorkers featured in these short videos. The series, which aims to celebrate New York City immigrants from all over the world, focuses on one individual and one dish at a time as a means through which to explore the myriad cuisines represented in the city and the people who make them. This month, we are spotlighting Upi Yuliastuti, an Indonesian immigrant from the Pandang region of Sumatra, who has been the chef at Upi Jaya restaurant for 15 years. Through her daughter Tika, we hear about Upi's dedication to her kitchen, her desire to share Indonesian food with the city and what sets her beef rendang apart from all the other eateries in town.

When Nikos Thomas was desperately looking for work in 2005, he was forced to switch gears from music and take on a particularly unglamorous gig: working at the Hooters in Athens Mall as a grill cook, the best-paying job he could find. Little did this rocker know he would be sacrificing his life-long passion of music for a new and tastier one – cooking. Two years out from his Hooters gig, Nikos found himself enrolled at a chefs’ school, eventually moving on to work in restaurants, then hired on as chef at a hotel on the island of Zakynthos. And as Nikos opened himself up to new passions, more found its way into his life.

When the other butcher shops in Naples are closing for lunch and at the end of the day, activity at D'Ausilio Macelleria is just picking up. The cooktops are lit, sandwiches are being made and this Italian butcher shop becomes a quality burgeria. “I come from Vomero (the hill district) to buy Raffaele’s hamburgers. My children love them,” says customer Rosaria Esposito at 8 p.m., when the macelleria is an hour into its transformation as a burgeria. But this is no trendy burger bar; the menu is steeped in local heritage. Rosaria leaves the burgers to the kids, choosing for herself the delicious home-style dishes created at D’Ausilio. Parmigiana alla Genovese stands out among those on display. Here are two sacred words of Neapolitan cuisine – Parmigiana and Genovese, a simple yet miraculous sauce made of meat (veal, beef or pork) and a heap of onions (red or white) – cornerstones in the history of local cooking.

On the walls at Haritna Restaurant are homages to simple sights: a large gate, ancient Damascene windows – it’s a scene that hopes to inspire the very particular feeling of sitting in the middle of a Damascus square, down a well-trodden, old lane. For in Arabic, haritna means “our lane.” Also a colloquial term for neighborhood, Haritna evokes a sense of home for those now living far away. In fact, owner Loay Bakdash, originally from Damascus himself, had dreamed of opening such a restaurant while working as a civil engineer in Saudi Arabia. But he didn’t want it to be a place where people would just come and eat. “I wanted the customers to feel that they are in one of Damascus’ neighborhoods, among their acquaintances in a family-friendly atmosphere,” he says.

This month we are spotlighting Jamyang “Jimmy” Gurung, a Nepalese immigrant from the Himalayas, who manages the Himalayan Yak, a Nepalese/Tibetan restaurant, and Raksha Thapa, a waitress and former teacher from Kathmandu Valley. The Himalayan Yak team delve into their still-deep connection to Nepal and their love in sharing their cuisine and yak momos with New York.

The red storefront and Cyrillic lettering made it clear this was not just another kebab shop. Hesitant at first, we scouted around the outside – the restaurant is tucked into a side street, flanked by a shipping office and a construction site, and does not appear to exist on Google Maps. The menu, written in dry erase marker on a board hanging from the wall, was entirely in Mongolian. Nevertheless, armed with the names of a few traditional Mongolian dishes – khuushuur (a sort of meat-filled empanada), mantuun buuz (dumplings) and tsuivan (noodle stew) – gained from some cursory YouTube research, we sheepishly approached the counter. As we attempted to order, our host smiled. “I’ll make you something, don’t worry,” she assured us, and ran into the kitchen.
