Stories for original culinary backstreets

At exactly the right moment, and not a minute sooner, lunch will be ready at La Cocina de Q.B.D.O. Generally, the magic hour of comida corrida – affordable, multi-course midday meals offered on weekdays and often Saturdays – is between 2-4 p.m., the typical lunch hour for Mexican workers. The comida corrida, also known as menú del día, is a fixture across Mexico and especially common in Mexico City. These dining options run the gamut from humble to gourmet, often depending on the neighborhood you find yourself in. But there is never a doubt that it will be satisfying – and quick (comida corrida can be roughly translated as “food on the run”).

During a busy evening on Main Street in Flushing, the sight of a food cart grilling skewers of meat doesn’t seem out of the ordinary on a thoroughfare filled with street vendors. After hanging around long enough, though, it becomes clear that this cart is different from similar ones up the block. The most obvious difference is its operator, Ekrem, a young man from western China’s Xinjiang region who shows an intense care for each and every skewer of his Uyghur-style barbecue. As he effortlessly and gracefully flicks the perfect amount of his secret spice blend on each bit of meat (all of which are quality cuts), he tells us that nothing in them is artificial, gesturing up the street to indicate that the others in the area do not have the same exacting standards.

There’s a beautiful Greek island on the eastern edge of the Aegean Sea that is officially called Chios, but is unofficially known as “Mastiha Island.” The fifth largest among Greek islands, Chios is blessed with fertile land and a celebrated microclimate that allows islanders to grow a unique range of products, the most famous being – as its nickname suggests – mastiha (mastic), an aromatic resin produced by mastic trees. The first references to mastiha on Chios can be found in the work of Herodotus, the ancient Greek historian, who, in the 5th century BC, described those trees that grew on the south side of the island and how the ancient Greeks collected their resin and chewed it, both for pleasure and hygienic purposes. In fact, mastiha has been described as the first chewing gum in history.

It was a scorching summer day in Istanbul, one of those days when the only thing you can imagine eating is ice cream. We were in Moda, and our friend Vicente suggested a stop at Dondurmacı Yaşar Usta – in fact, he’d been raving about this ice cream all summer long. So we followed him to the branch on Bahariye Caddesi, in hopes of understanding why he’s so crazy about it. It didn’t take long for us to figure things out. The homey, no-frills atmosphere and the array of creative ice cream flavors make Dondurmacı Yaşar Usta something of an oasis in Moda, a hip neighborhood on Istanbul’s Asian side, where a majority of the new food ventures springing up like mushrooms prioritize a shiny cool look over substance.

It was a cramped but iconic tasca in the heart of Lisbon’s downtown. Its name, Adega dos Lombinhos, disclosed the house specialty: grilled lombinhos – thin slices of pork loin. And we mean really thin, almost if they were slices of wet-cured ham, served with a fried egg on top, white rice and golden fries. But it wasn’t the rice, the egg or the fries that made it special. It was the slender, delicate, hand-cut slices of meat. It was the miscellaneous crowd that chose to have lunch there daily: bankers and construction workers, marketers and shoe shiners literally rubbing elbows at the few available tables. It also was the charm of not even having coffee – “this is a tasca, not a coffee shop,” they would say – and only one dessert on the menu: a homemade arroz doce (sweet rice pudding), which was top notch, by the way.

Search online for Shanghai’s best fried dumplings, and you’ll come up with hundreds of results extolling Yang’s Fried Dumplings. Though it was once just a humble shop sandwiched between the Bund and People’s Square, the online renown and ensuing crowds have propelled the brand into chain-store ubiquity, populating new malls and shopping streets with fervor. In essence, they’ve become the Starbucks of dumplings; you’re going to get a relatively consistent product, but come on, you can do so much better! Enter Yang Yang’s.

The five-star Pera Palace is undoubtedly Istanbul’s most iconic hotel, with its palatial rooms and suites named after the legendary guests that stayed there, such as Agatha Christie, Alfred Hitchcock, Jacqueline Kennedy Onassis and Ernest Hemingway. Practically synonymous with the Istanbul of a century ago, it is the subject of a lovely tome, "Midnight at the Pera Palace" by Charles King, that locates the hotel within the fantastically tumultuous years leading up to and following the establishment of the Turkish Republic. Though we admire the Pera Palace and cannot understate its importance to the city’s modern history, it is not our favorite Istanbul hotel. That honor is reserved for the Büyük Londra (Grand Hotel de Londres), located just a stone’s throw away on the opposite side of the stately Meşrutiyet Avenue.

It wasn’t so long ago that no one would venture to Georgia’s Svaneti region without a personal invitation, and even that was risky. Isolated, sky-high in the Caucasus, nestled between the breakaway territory of Abkhazia and the Russian Federation, it was land of the lost, inhabited by a tribe speaking their own language, living in hamlets dominated by tall medieval stone towers used for protection from invading hordes as well as from each other. Ancient pagan-Christian rituals, bride-napping, blood vendettas and banditry defined modern Svaneti – at least when viewed from the outside. We had heard too many stories of how oblivious tourists would wander there with cameras around their necks and big tourist grins only to return in their underwear with their heads hanging low. Like Georgians from the rest of the country, we stayed away.

After the merriment of sakura cherry blossoms has faded, bringing with it the dreary Japanese rainy season, the hot, humid days of July and August follow shortly thereafter. When summer temperatures and the humidity reach a point of sticky and awful, Japanese people tend to change their diet so as to shake off natsubate, the physical fatigue of summer. In a country where the main religion is nature-worshipping Shinto, most people practice the custom of shun: celebrating nature’s cycles and each season’s profusion of food. Loosely translated, “shun” means the height of nature’s abundance. Each of Japan’s fruits, vegetables and also animal proteins has its own shun, and in the essential and enduring wisdom of Japanese cuisine, that has influenced the preparation of Japanese food for thousands of years.

The Algarve, one of the most visited regions in Portugal, also has some of the country’s most distinctive and delicious cooking. Integrating layers of different historical influences, from the Romans to the Moors, along with fishing traditions and countryside rusticity powered by its fertile land, the Algarve has made a deep impression on Portugal. But until Taberna Albricoque came on the scene, the region hadn’t been making much of an impact on Lisbon menus. Bringing the Algarve’s history to the forefront of Lisbon dining was one of the goals of chef Bertílio Gomes in opening his new restaurant. Albricoque, in fact, is the word for apricot in the Algarve, notable because the south has preserved its Arab etymology, as elsewhere in the country damasco is used (instead associating the fruit with the city of Damascus).

The consumption of sake is a sacrosanct affair in Japan. In Japanese, the term “sake” technically denotes all alcohol, though it is often used interchangeably with the less ambiguous “nihonshu.” The true genesis of the island nation’s archetypal brew is lost to time, though the divine concoction of water, rice, yeast and koji mold likely originated, or at least became more standardized, sometime during the Nara period (710-784 AD) when Empress Genmei consolidated rule over an agrarian society. Most people in this fledgling nation state participated in animistic and ancestral folk worship, within which rice, and by extension nihonshu, came to play important ritualistic roles.

Like many other Egyptians, when Cairo Restaurant owner Magdy Hegad talks about khushari, his eyes glisten with an emotion akin to love – but when he talks about seafood, the glisten is elevated to something closer to religious fervor. “We do it differently,” he explains. “Just try it, and you will see.” We first ventured to Cairo Restaurant with an Egyptian friend eager to show us the delights of a cuisine we had learned little about, let alone tried. As we entered the restaurant, it became clear that this was to be a very different meal than what we had grown used to in dining around the city.

On June 20, Georgian Prime Minister Mamuka Bakhtadze signed a decree abolishing the Writer’s House of Georgia, Tbilisi’s leading institution of literary culture and the home of Cafe Littera, the restaurant that gave birth to the culinary revolution Georgia is currently going through. As soon as the ink was dry, the Writer’s House accounts were frozen and its directors were suddenly dismissed with only half a month’s salary. The fate of Cafe Littera is unknown. The story of the Writer’s House goes back to 1905, when philanthropist and father of Georgian brandy, David Sarajishvili, completed construction of an Art Nouveau masterpiece of a house to commemorate his 25th wedding anniversary to Ekaterine Porakishvili.

As women in pink polo shirts conveyed steaming tureens, pungent earthenware crocks and freshly-baked sweet loaves, it was clear that the Azores’ celebration of the heavenly spirit had a strong component of earthy sustenance. We were at a função (function), a communal meal built around bread, wine and traditional meat dishes that forms a central part of the archipelago’s unique Holy Ghost festivities, which take place in villages around the islands over the 50 days after Easter. “This is one of the island’s most deeply respected traditions and it’s taken very seriously,” explains José Álamo Meneses, mayor of Angra do Heroísmo, a jaw-droppingly beautiful UNESCO World Heritage city on the island of Terceira. “Only around 10 percent here go to mass regularly, but they fill the churches on the day of the Holy Spirit,” he adds, before joining 250 fellow citizens for lunch in a hall hung with patchwork blankets in the hillside neighborhood of Bicas de Cabo Verde.

If you hadn’t read the flyer closely before heading to Shanghai’s first ever MeatFest last month, you might have been a bit disappointed upon arrival. The sounds and smells of sizzling meat might have seemed like a carnivore’s dream come true, but the name was tongue in cheek; the event was thrown by Vegans of Shanghai for “eco-conscious meat lovers” and served only domestically sourced plant-based “meat” products. It’s part of a bigger push towards eating a plant-based diet in China, where vegetarians make up less than 5% of the population. But even at such a low rate, that still comes out to approximately 50 million people (a population larger than that of Spain). Historically vegetarianism is rooted in Buddhist or Taoist beliefs but, like recently in the West, the meat-free lifestyle in China has become less about religion and more focused on health and being environmentally friendly – and millennials are leading the pack.
