Stories for vermut

Before the tourists discovered Tbilisi, Kote Apkhazi Street was Leselidze Street, an unassuming cobblestone ribbon connecting Old Town’s bath district, Abanotubani, with Freedom Square. Home to the Georgian Synagogue, the Armenian Holy Church of Nazareth, and Father of The Cross Church, no other street represents the capital’s multi-ethnic and multi-denominational heritage better. Other than these houses of God, Leselidze hosted several religious shops, a couple of unremarkable restaurants, second-hand clothes shops and mom-and-pop groceries. No one foresaw the flocks of visitors that would invade the Old Town with their selfie sticks, but people understood the location had a future.

This story starts with a hamburger, a juicy, perfectly grilled patty between a pair of fresh, no-frill homemade buns and the standard trimmings. As burgers become part of the culinary landscape in Tbilisi, we find that many cooks have a tendency to get too slick with a dish that loathes pretension. But this place, Burger House, nailed the balance between originality and straightforwardness. While sopping the drippings up with finger-thick fries we saw a hamburger story in the making and filed the idea away in our bucket list of food tales. A year or so later, walking down Machebeli Street in Sololaki, we saw a little basement joint named Salobie Bia with a Gault & Millau (a French restaurant guide) sign above the door and decided to investigate further. Several lip-smacking meals later, we learned that the chef and co-owner of this place is the same guy who was responsible for those impressive burgers.

We have each got a couple of buckets and a pair of gardening clips and we are standing in a dewy vineyard in the middle of the majestic Alazani Valley. The autumn air is brisk, fresh with the fruity smell of grapes and the sun is warm, clouds permitting. Looming northward like some godly guardian of this huge, precious grape basket is the awe-inspiring Greater Caucasus range. It is rtveli, the harvest, and here in Kakheti, families across Georgia’s chief winemaking region are busy making wine much like their ancestors have done for centuries. They pick, crush and ferment wine in kvevri, enormous ceramic urns buried into the ground, or in oak barrels. They add nothing to enhance the fermentation process, the crushed grapes are stirred several times daily until they feel the maceration process is completed.

“The moment we were born, the moment we entered the world, so many people were happy. Our mothers, fathers, relatives; the doctor who delivered us, the nurses that helped; maybe some guys hanging out with our fathers said ‘Cheers!’ or ‘Congratulations!’ and patted our dads on the back. So many people and we don’t even know their names, who they were. Let’s drink to all those people who were happy that we were born – that with this toast we can say ‘thank you’ to them.” The year was 2001, and I had just crossed the border from Turkey into Georgia with my partner, Justyna. The Batumi train to Tbilisi had been roasting under the blistering June sun all day. Boarding with heavy backpacks, we were instantly pummeled with the grim reality that the windows of these Soviet-born wagons were all sealed shut; save for one in the middle, just big enough for three heads to poke out, panting for air.

Throughout Italy, Naples is known as the “city of coffee” – the Neapolitan caffè is synonymous with high-quality brew. And within the city, there are a number of stories and legends that swirl around the black stuff. Coffee is far and away the most popular caffeinated drink in the city. Neapolitans are not tea drinkers. In fact, most see it as a kind of medicine, probably because when you’re sick to your stomach the doctor recommends eating white rice and drinking tea. But it’s not just about the coffee itself. In Naples, drinking coffee is a true ritual, a complex set of unwritten norms, customs and ancient habits.

Georgians swear that natural wine does not give you a hangover, but something is keeping us in bed watching superhero series on Netflix and it is not the compelling storylines. Vato Botsvadze, owner of Chacha Corner was also at Zero Compromise yesterday. He will insist in all seriousness that his morning headache was a result of the rain, which stopped just before the greatest party in Georgia started. We’re talking about the eighth New Wine Festival, organized by the Georgian Wine Club, a group of over a half dozen wine enthusiasts who have been at the forefront of developing, promoting and educating people about Georgian wine since 2007, when they turned their internet forum into a blog and started hosting wine tastings across the country.

About 70 winemakers have set up tables around the perimeter of an old Soviet era sewing factory loft. There are a couple hundred wine lovers, wine freaks and industry professionals packed in here swirling, sniffing and tasting some truly mind-boggling wine. This is the Zero Compromise Natural Wine Fair, a festival celebrating vintages whose grapes were grown organically, with no yeasts or sulfites added in the cellar. This is pure, unadulterated nectar, the way the gods intended wine to be made, and much like Georgians have been doing it for 8000 years. The Fair is the brainchild of the Natural Wine Association, a union of ten viticulturists and wine-makers who are wholly committed to organic or biodynamic methods. We have been looking forward to this day for 365 days, since our first Zero Compromise experience last year, at Vino Underground.

Up in Barcelona’s hills, in the El Coll neighborhood, where the city ends and the sky is cut by the spiky shapes of the pine trees in Collserola Park, Agreste de Fabio & Roser is sprouting up. Emphasizing sustainability and healthy eating, the restaurant is creating delicious dishes that merge Catalan and Italian traditions with contemporary flourishes. Room manager Roser Asensi and her partner, chef Fabio Gambirasi, created this project (the name means “bad weed” in Spanish) less than a year ago and people are already singing their praises. On a recent visit, we could hear words of admiration from different guests flying around the room over the course of our meal.

We are on the eighth floor terrace of a relatively new apartment building in the Vedzisi neighborhood, nodding our heads with joker grins like gawkers at a freak show. The view is as spectacular as they come in mountainy Tbilisi, but that’s not what we’re chuckling at. There are 43 ceramic urns – kvevri – buried almost a meter and a half into a bed of sand and perlite in what was supposed to be a swimming pool for a nine-year-old boy. But in an epiphanic moment, the child’s father, 43-year-old doctor, Zura Natroshvili, decided to build a marani in the sky instead. The father of modern advertising, David Ogilvy, once said, “The best ideas come as jokes.” Dr. Natroshvili would probably agree. His friends thought he needed psychiatric help when he first shared his idea.

There’s a saying in Naples: “Anything fried is good, even the soles of shoes.” You may laugh, but we wholeheartedly agree ¬¬– frying may have a bad rap in some parts of the world, but it can add a richness and flavor to any type of food (and, perhaps, even footwear). Think of a dull, bland zucchini or eggplant; when fried right, it becomes a pleasure. We normally get our fried fix by ordering a cuoppo, a paper cone filled with crispy morsels. This symbol of Neapolitan fried street food is our typical mid-morning snack – while going about our morning errands, we munch on the small bites of fried deliciousness that are swaddled in the plain brown paper.

A few months ago a little storefront joint opened down the street next to our neighborhood green grocer, a mom and pop operation that has been there for decades. A varnished wooden counter behind the iron-framed windows and a few matching tables make it fit the new bohemian-chic Tbilisi style popping up the street around Rooms Hotel, the hip four-star flophouse all the travel magazines are fawning over these days. Although the wine list was not well-stocked, the food didn’t disappoint. The pork belly was not the standard room-temperature slab of bacon on a plate, but was oven-roasted and nestled on two puddles of cherry and plum sauce, zesty richness that nearly overpowered the smokiness of the pork. It was simple, bold and delicious. And it was Georgian, although not everyone will agree on that.

Starting things off is a dispatch from our Tbilisi bureau chief Paul Rimple: In 2001, a chic fashion designer opened up a snazzy café in the Vake Park building we were living. The low quadratic furnishings were not made for comfort, but were perfect for posing with your nose in the air and a cigarette between your fingers. It was the only cafe in this part of town and lucky us, it was downstairs.

We recently spoke with the wine writer Miquel Hudin about his new Vinologue guidebook, Georgia: A Guide to the Cradle of Wine. Hudin was the 2016 recipient of the Geoffrey Roberts Award, an international wine prize, and was named the Best Drink Writer of 2017 by Fortnum & Mason Awards. He has also published a number of guidebooks on other wine regions. Your most extensive previous wine coverage has been about Spain. How come you decided to write a book about Georgia and its wine? Georgia has simply been a point of fascination for years. But it was frustrating to see the same handful of wines pop up time and again so I made the trip over and dived in deep, aided a great deal by winning the Geoffrey Roberts Award.

Sants is a working neighborhood with an industrial past and a communal present, both of which it proudly flaunts. There are the street names – like L’Espanya Industrial, Carrer Wat (dedicated to the engineer James Watt) and Vapor Vell (Old Steam) – that tell the story of industrialization in Catalonia, and the two buzzing municipal markets and the many bodegas and restaurants, like Terra de Escudella or Bodega Salvat, that serve as meeting points for an engaged community. Although shaped by a diverse set of international influences, the neighborhood’s sophisticated culinary scene is tied together by something more local: vermut culture.

In the 1975 short film Gvinis Qurdebi (Wine Thieves), four mischievous villagers sneak into a stingy neighbor’s wine cellar, crack open his kvevri (enormous ceramic urn) and start drinking the wine stored inside. As they get drunk and rambunctious with toasts and song, they wake the winemaker who ends up joining them. It is in this same spirit of Georgian joie de vivre that Avto Kobakhidze, Givi Apakidze and Zaza Asatiani have come together to take other people’s wine and sell it under their own label, Wine Thieves.
