You would think Sérgio Oliveira, the owner of Conga in Porto and the secret-keeper of its legendary recipe for bifanas, would be tired of the restaurant’s signature dish. But you’d be wrong. “As much as I try not to eat it, I cannot. It is impossible,” he says. "One always eats it; there is no chance not to.” It’s a simple but addictive dish. Pork, cooked all day in a mysterious spicy sauce and stuffed into a piece of bread that looks a bit like a roll– at first glance, it does not seem to impress. But Porto continues to hide the best and tastiest of its secrets in the simplest things in life. "It was my father who invented the famous bifanas with this wonderful sauce,” says Sérgio, who’s been running Conga the last eight years. It’s been more than 40 years since Manuel Oliveira returned to Portugal from Angola and opened the restaurant in 1976.

Winding between the teenage fashion havens of Harajuku and Shinjuku is the ultra-hip Cat Street, lined with countless second-hand clothing stores and embellished with a single origin coffee shop. Just a stone’s throw to its south lies a nondescript concrete building. Unassuming from the outside, for the past 15 months its second floor hid a sake bar. The interior was a stylish and modern take on Japanese design – a sleek counter in the center, tatami mats and sliding doors splitting the space into three. Here, a young crowd gathered, sampling the latest sake and regional dishes – from Miyagi beef tongue meatballs and Iwate squid sashimi to Akita smoked pickled daikon topped with cream cheese. Given its relatively short residency, one might be forgiven for thinking the bar was a trend or a poorly conceived dream. But Mysh, (pronounced “my shu” meaning “my sake”) didn’t go out of business, nor were any of its members of staff full time. Their lease having expired, the founders decided to take some time out before finding a new home – time to review their goal of creating something more than a dining establishment, of creating a community space. Currently, the bar only exists as a monthly pop-up event, but its founding story and model are indicative of Tokyo’s broader culinary culture - one that is simultaneously steeped in tradition while constantly reinventing itself under the city’s bright neon lights.

On the walls at Haritna Restaurant are homages to simple sights: a large gate, ancient Damascene windows – it’s a scene that hopes to inspire the very particular feeling of sitting in the middle of a Damascus square, down a well-trodden, old lane. For in Arabic, haritna means “our lane.” Also a colloquial term for neighborhood, Haritna evokes a sense of home for those now living far away. In fact, owner Loay Bakdash, originally from Damascus himself, had dreamed of opening such a restaurant while working as a civil engineer in Saudi Arabia. But he didn’t want it to be a place where people would just come and eat. “I wanted the customers to feel that they are in one of Damascus’ neighborhoods, among their acquaintances in a family-friendly atmosphere,” he says.

Has mezcal gone the way of avocado toast, an item that’s become shorthand for cliched hipster trendiness? If you think yes, a visit to Mis Mezcales in Mexico City’s Colonia Roma may be in order. There, you will find Omar Trejo sitting behind his unassuming makeshift bar, parceling out sips to the uninitiated and reminding everyone who stops by his small liquor store devoted to small-batch Mexican distillates that before it became a “buzzy” spirit, mezcal was an elixir heavily-rooted in the soils and stories of Mexico. As Omar makes clear to those who come in, every bottle of mezcal tastes different, even from the same brand, the same agave variety and same year. It’s one of the drink’s greatest strengths and probably one of the greatest frustrations for drinkers who expect the standardization of tequila.

Like most Syrians who fled their war-ravaged country and made their way to Turkey, Fatma Jabal, a 19-year-old from Aleppo now living in Istanbul, had to get creative in order to make a living. With a baby boy to take care of and her husband struggling to provide for their family while working as a carpenter, Fatma tapped into something she’s been doing since she was a child: baking cakes and cookies. Making desserts had been something Fatma has loved from early on growing up in Aleppo, which she left in 2014 in the midst of the worsening conflict there. For her, each treat she bakes is a work of art that just happens to be edible. “The first thing I did in the kitchen was sweets,” she says. But Fatma realized she needed to develop her budding baking prowess to start charging customers.

Addy has cornered the Astoria market in Kenyan cuisine. Even so, large portions of his menu are devoted to dishes familiar all around the world, and popular with all ages. They include a dozen or so flavors of chicken wings and a fistful of burgers, some basic, some overloaded. (Lean forward over the plate, is our advice, when biting into a Juicy Lucy.) To our surprise, the American South stakes a claim at Addy's after all: The country-fried steak, served atop mashed potatoes and accompanied by a brimming cup of gravy, is one of the best we've ever had. Because mishkaki is new, at first, to most of Addy's clientele, he's simplified the presentation rather than risk confusing his customers. Typically, at a Kenyan roadside stall, mishkaki is served with flatbread, the meat arrives on the skewer, and the customer adds sauces and other accompaniments to his or her liking. In Astoria, mishkaki is served with rice and a salad, and the chunks of meat, sans skewers, are already seasoned, à la Addy. We can practically taste the sizzle.

At any time of day you’ll see crowds of people at the ancient, welcoming restaurant. At lunchtime, many regulars come daily not for the pizza, but for Maria’s home cooked dishes. “Here we serve traditional Neapolitan dishes,” says the 74-year-old. “Pasta and potatoes, pasta and beans, pasta sorrentine style or bolognese. The menu changes every day, and the bread is made every morning, here, directly in the pizza oven … with my hands.” There’s something about the pizzeria that transmits a sense of history, particularly its inner room, the walls of which are covered in declarations of love for the restaurant and drawings made on paper napkins by loyal customers over the decades. “It is as if customers wanted to leave something of themselves,” Attilio tells us proudly. “They wanted to return some of the goodness they just tasted with something that would last.”

“We want to show people what Greek cuisine is really like. It’s not just souvlaki, gyros and moussaka. So in July and August when we’re closed, we travel all over the country looking for recipes, and because we love Greek wines too, we find recipes that go with them,” Xenophon says. We took a long time studying the menu – nibbling on their own olive bread – because even the dishes that sound familiar are not always what they appear to be. Take, for example, spanakopita (spinach pie). Here, it’s actually a salad. Moreover, their cheese dip, myttotos, made of three white cheeses plus black garlic, “goes back to the time of Hippocrates,” and the liver with apples, a combination we’ve never heard of, is a recipe from Karditsa in the northern Greek region of Thessaly.

The red storefront and Cyrillic lettering made it clear this was not just another kebab shop. Hesitant at first, we scouted around the outside – the restaurant is tucked into a side street, flanked by a shipping office and a construction site, and does not appear to exist on Google Maps. The menu, written in dry erase marker on a board hanging from the wall, was entirely in Mongolian. Nevertheless, armed with the names of a few traditional Mongolian dishes – khuushuur (a sort of meat-filled empanada), mantuun buuz (dumplings) and tsuivan (noodle stew) – gained from some cursory YouTube research, we sheepishly approached the counter. As we attempted to order, our host smiled. “I’ll make you something, don’t worry,” she assured us, and ran into the kitchen.

While Bolhão’s century-old original structure is being restored, the vegetables, fruits, fish and flowers of the market have been brought to a decidedly less striking indoor location with no windows. The place is new, strange to many, but the usual faces are there. We know their names, their smiles. The only thing we’re uncertain about is the setting. “It looks really beautiful,” says Rosa, “I thought it was going to be a mess, as it was something to remedy, but it’s beautiful.” Rosa tells us that she hasn’t been to Bolhão for at least a year, which is about how long the original location has been shuttered for renovation. As we walk with Fernando and Rosa, a chorus of “good days” rings out from all directions. We pass through corridors of fruit, nibble on some chorizo, smell the flowers. “Excuse me, where’s the herbalist Augusto Coutinho?”

Where the A train dead-ends at Lefferts Boulevard, Liberty Avenue stretches on into the heart of the enclave known as Little Guyana, part of the larger Richmond Hill neighborhood. To most Americans, and even New Yorkers, this population remains obscure. “People don’t know who we are,” says Lakshmee Singh, a talk show host and community leader in Queens, Richmond Hill, once a predominantly German and Italian neighborhood, has seen a steady stream of Guyanese immigrants since the 1970s. Today, it’s home to the largest Guyanese community outside of Guyana itself, with Guyanese immigrants representing the second largest foreign-born community in Queens.

On our Porto culinary walk we visit Luis at Azeitoneira do Porto, which has been serving loyal customers since 1862 - and is training the next generation to take over the family business.

Next to some wooden shelves overloaded with spirits, a photograph of Natália Correia hangs on the wall. The photo’s placement makes it appear as if Correia, cigarette in hand, is surveying the small room, which is crowded with semi-broken tables. The late poet and upstart co-founded this tiny bar/café a few decades ago, and her presence is still felt here and in the neighborhood more generally: A nearby street, with a spectacular view of the city, is also named after her. Botequím is one of Graça’s oldest bars, located on the ground floor of Vila Sousa, one of the worker apartment complexes built at the end of the 19th century.

Chef, food writer, and MasterChef champion Tim Anderson shares his love of Tokyo and Japanese food culture in his new book, “Tokyo Stories: A Japanese Cookbook” (Hardie Grant, 2019). After moving to London, Anderson, who is originally from Wisconsin, won MasterChef in 2011, a title that catapulted him into a position as one of the UK’s most prominent voices on Japanese food and led to the opening of his own izakaya, Nanban, in Brixton at the end of 2015. We recently spoke to Anderson about his love for Tokyo’s food culture and how he translated this eclectic and wide-ranging culinary scene into a cookbook.

Bars, cafés, taverns and restaurants have historically functioned as meeting spots for all kinds of urban communities, from intellectuals to politicians and artists – revolutions have even been planned around the table. Nowadays in Barcelona, another community, one that has flourished in numerous cities around the world, has started gathering in these types of venues: cyclists. The number of cyclists in Barcelona has increased some 30 percent in recent years, according to the City Council – in 2017 alone, 38 percent of residents moved around the city on two wheels. With more than 230 km of cycling lanes and a fleet of 7,000 brand new municipal bikes, the city is still adjusting to coexisting with so many bikes and riders.
