Stories for tagine

Moroccan cuisine, at least items like couscous and harissa, can today be found in nearly any supermarket. But New York, with all its culinary diversity, has never had a real Moroccan restaurant scene. The recently launched Moroccan Bites by Siham goes a long way toward filling that void. “[When I moved to New York] I would have loved to have a restaurant that I could be proud of and tell people about, but sadly, there was not,” says Rabat-born Redouan Lazrek, the restaurant’s co-owner and husband of Siham Bourhane, the chef.

In the first book of his Marseille noir trilogy Total Chaos, Jean-Claude Izzo describes his hometown: “Marseille isn't a city for tourists. There's nothing to see. Its beauty can't be photographed. It can only be shared. It's a place where you have to take sides, be passionately for or against. Only then can you see what there is to see.” On a steep hill sandwiched between Cours Julien and Place Jean Jaurés, sits a tiny sandwich shop and a man who embodies Izzo’s quote in its entirety. A friend who shares a love of this city and its hidden treasures told us about this place, which she happened upon one evening. So together we climbed one of Marseille’s many collines to Blé d’Art, a small, but impossible-to-miss, brightly painted storefront.

The walk to Sur le Pouce, a popular Tunisian family restaurant, is a straight shot from Marseille’s central boulevard, La Canébiere. We make our way along rue Longues des Capucins, behind Alcazar, the main public library, pass the Chinese wholesale clothing stores – Joy Lady, Wei Wei, and New 35 – and arrive ten minutes and several wonderous lands later to the corner of rue de la Convalescence. At the door of Sur le Pouce, we find ourselves in the heart of downtown Marseille and the populaire, working class, Belsunce neighborhood, largely inhabited by people of Maghrebi heritage, both French nationals and recent arrivals.

High above the hills of Nice, past the crowded villages frequented by tourists, is the small commune of Saint-Jeannet. Nestled among the grand limestone baous (Provençal word meaning steep rock), Saint-Jeannet sits perched like a jewel with stunning views to the sea. Built sometime in the 11th century during the High Middle Ages, the village is privy to a beguiling history. There are prehistoric and oppidum sites amid the baous, hidden caves where villagers took refuge in times of trouble, and local lore of witchcraft. Fans of Alfred Hitchcock may recognize John Robie’s villa in scenes from the 1955 classic To Catch a Thief, starring Cary Grant and Grace Kelly.

Anthony Bourdain liked to say the body is a playground, a sentiment we couldn’t agree with more, especially when digging into the cholesterol-laden acharuli khachapuri or wiping a ketsi clean of its spicy pool of kupati – Georgian sausage – grease with a piece of bread. Shots of chacha and glasses of wine make us swing, bounce, teeter-totter and sometimes fall, and in the morning when the fog and pain clears, we may remember that the body is also a fragile temple requiring more ministration than a sacrificial bowl of tripe soup can provide. In Tbilisi’s Mtatsminda district there is a sanctuary providing both solace to devotees of healthy eating and penance to gluttonous sinners like us. No ordinary hummus bar, this affectionate “eating apartment” is called Mama Terra – Veggie Corner.

One communal dish in the middle of the table attracting various fingertips and forks – it’s an image common to numerous countries. From tagine in Morocco to wot in Ethiopia, mezes in the Mediterranean and the Middle East to banchan in Korea, sharing plates is a defining feature of many culinary cultures. In Spain, the quintessential shared-plate experience is tapas, with paella a close second. And what’s not to love about eating this way? It brings us together, it’s more indulgent, as it gives everyone the chance to try everything, and it reduces food waste. Furthermore, research has found that eaters who consumed food together from a common plate or bowl are more cooperative and less competitive, making it easier for them to agree on controversial issues.

Growing up with a Midwestern Protestant mom and a Montreal-born Jewish dad, my family’s holidays wove together traditions, much like a braided challah bread. We topped our Christmas tree with the Star of David and served matzo at Easter brunch. More cultural than religious, our celebrations weren’t restricted to one faith or another. What mattered was the meaning: respecting our roots through ritual and thoughtfully gathering together around the table. Now living in multicultural Marseille, I still celebrate with the same interconnected spirit. Here, the similarities of the springtime holidays abound. For starters, they are semantic cousins, with Passover, Pâque juive, known as “Jewish Easter” in French.

Once the stomping ground of sailors and the Corsican mafia, Marseille’s oldest district, Le Panier, has evolved into a tourist hub and creative neighborhood. Its winding streets are peppered with ateliers (like blade smiths, chocolatiers and painters) and the 17th-century facades are canvases for colorful murals. One of them, a powerful black-and-white image of a couple kissing, faces the funky cantine and concept store, Ahwash. Its owner, Amar, commissioned the Alberto Ruce work – a sign of the artistic energy infused throughout his unique place. Named for the traditional Berber dance in which men and women mix together, Ahwash is a blend of Amar’s worlds – of Morocco and France, of art and cooking. “Eating here is like coming to my house,” he smiles, serving tagines to patrons sitting at vintage tables topped with glowing candles, their dripping wax embodying the restaurant’s romantic and relaxed ambiance.

Have you ever met a restaurant owner who has been a house painter, real estate agent, rug dealer, bread deliverer, camel trainer and interpreter as well as running a tourism business? Meet Ahmad Alssaleh from Palmyra, Syria. Although he is only 31 and the youngest of ten children, he is not only unstoppable, he is about to celebrate the first anniversary of one of the most imaginative and best restaurants we have ever been to anywhere – not just Athens. But we’ll get to the food later. His story will whet your appetite, as it did ours. It all started back in 2009 when Alssaleh met Magda, a Greek girl who’d gone to Syria as a tourist.
