Stories for solo travelers welcome

The holiday season is one of the more subdued times of the year in Mexico City. Many people leave the city for vacation or to visit family and friends in other parts of the country. We, however, tend to stick around more often than not, traveling around the city and enjoying the relative peace. That’s how we happened upon Coox Hanal, a restaurant hidden inside a century-old building in the Centro Histórico that specializes in the cuisine of the Yucatán, the peninsula that juts out into the Gulf of Mexico and the Caribbean Sea like a hitchhiker’s thumb. The adventure began when we trudged up a few flights of stairs to the second-floor landing, where we found the restaurant’s entrance. It, along with the stairwell, was plastered with posters and artwork from the sun-kissed and beach-filled Yucatán.

It was the first of April and an absolutely pristine Istanbul spring day, the kind where one can break a slight sweat walking up a hill then catch a cool breeze in a nearby patch of shade. Returning to the city from a lovely weekend on Büyükada, we were smitten with spring and wanted to indulge in its finest offerings. In a fit of hunger-fueled inspiration, we quickly realized what we were craving: yenidünya kebabı. This spring-only affair is a specialty from southeast Turkey’s Gaziantep where chunks of minced beef and/or lamb are skewered in between sections of newly arisen yenidünya, or loquat, diminutive orange fruits that are as tantalizingly tart as they are sweet.

It’s no easy task handling a 70-kilo longfin tuna or a 20-kilo corvina. But over the past few weeks, we’ve watched our favorite fishmongers in Lisbon’s Mercado da Ribeira do just that – looking more like weightlifters or wrestlers, they endeavor to fillet the big, fat Atlantic fish that usually make their appearance in April. Even more humble specimens, like mackerel, are also at their fattest (and tastiest) come spring. That’s the joy of feasting on spring fish and seafood in Portugal – so much is in season that you can’t go wrong. To get a better sense of this spring’s “gifts from the sea,” we visited some of our favorite chefs to learn about how they are building their menus around seasonal fish and seafood.

Springtime in Greece brings an abundance of fresh produce. Local farmers’ markets erupt with joy at this time of year – in addition to the cheerful vegetables, herbs and beloved wild greens from different regions, the farmers (already sunburnt) shout out to customers with voices that show a clear pride in their harvest. Perhaps our favorite spring crop is the artichoke, a vegetable (technically a flower) that has been widely consumed by the Greeks since antiquity. The artichoke plant doesn’t usually grow over a meter high, and the most scrumptious part is the unopened bud (when it does bloom, the bud grows into a beautiful purple flower resembling a milk thistle).

Flowers may be a visual treat, but they are also a regular ingredient in the cooking of numerous cultures. It’s not uncommon to find roses, violets, orchids, chrysanthemums or any number of flowers – more than 200 in the world are catalogued as edible – adding a pop of color or a surprising flavor to a dish. Flowers have particularly deep roots in Spanish cuisine. They featured most prominently in the food of Al-Andalus, the territory of southern Spain governed by Muslims during the medieval period. Influenced by the Arabs, Andalusian cooks used rose and azahar (orange blossom) to aromatize water and make syrups, jams and pastries.

Being the geographic dead center of the country, Mexico City is the hub for all produce heading in any direction. In other words, all roads lead to the sprawling Central de Abastos, the distribution center and wholesaler in the south of the city. “Spring” here is the dry season – the temperatures get hotter by the day until May, even June, when the rainy season begins – but conventional produce is always in season somewhere in Mexico, no matter how parched Mexico City itself might be. But say you’re looking to stick to a “100-mile diet” – surrounding the city there are fertile soils of volcanic valleys as well as high desert regions. So what surprises do they offer in spring?

For 48 weeks out of the year, Meijiawu village is pretty quiet. But in the weeks before and after Qingming, the Tomb Sweeping Festival held every year in early April, the tea terraces looming over the town come to life before sunrise. Tea pickers sweep through the fields, collecting the first buds of the season by hand. These emerald slivers will make up the bulk of the farmers’ annual income, although several more harvests of lesser leaves throughout the year will supplement them. Like wine from Bordeaux, Dragon Well (龙井 – Lóngjǐng) tea comes only from the hills near Hangzhou (although in China, counterfeit leaves – like bottles of Château Lafite – are everywhere). Meijiawu village (梅家坞村) is just a short drive from the actual Dragon Well (or “Longjing”) Village.

Out here in Garikula, our slice of heaven an hour west of Tbilisi, spring is peaking. It started with the plum blossoms and now the apple, pear and cherry blossoms are popping, painting the countryside in patches of white and pink. Walking along a village path with our neighbor Shota, he suddenly stops, bends down and reaches into a wad of weeds and pulls. “Ah-ha,” he says showing us a little bundle of wild asparagus, skinny, green and an appetizing revelation when cooked just right. Back in Tbilisi, this asparagus appeared in the central bazaar a couple weeks ago, along with other welcomed indications that springtime has finally arrived.

Five years ago, Diogo Gomes, the owner of Art Chopp, a bar in the Jacarepaguá neighborhood, was seated at one of the bar’s 36 tables. There were no customers: only him, the cook and two waiters. The heavy rain falling outside began to drip from the ceiling and soak the floors. Even wetter, though, was Diogo’s face – he was crying, he later explained to us, because he was sure that he would have to shutter the empty bar and give up on his lifelong dream. In addition to the lack of customers, he was facing a mountain of debts; Diogo was one step away from bankruptcy.

“It’s good for tourists, not for us.” While this can sadly be said about many things, Anabela, the woman we are speaking to, is referring to the transformation of Mercado da Ribeira, Lisbon’s historic public market, where she co-runs a small grocery store. Originally built as a predominantly wholesale food, fish and flower market in 1771, Ribeira today shares its space with Mercado Time Out, financed by the venture capital firm that controls the publishing franchise in Portugal, which has occupied the central section of the market since 2014. Time Out’s concept: an “editorially” curated gourmet food hall. Selling the best of Portugal – from croquettes and custard tarts to seafood and steak – it is now a top attraction, with 24 restaurants, eight bars, a dozen shops and a high-end music venue.

Brasuca owes its existence to Mr. Oliveira da Luz, known to locals as Juca, a trade unionist who escaped from political pressures in his homeland in 1976 to settle down in the Portuguese capital. Two years later he opened this restaurant in Bairro Alto. It wasn’t the first kitchen serving Brazilian dishes in the district, as a few other tascas – particularly those with Portuguese owners who had connections to Brazil – had incorporated some Brazilian staples in their menus, particularly the feijoada, a dense meat and black bean stew, but it was the first Brazilian restaurant opened in Lisbon by a Brazilian.

Among the many bars of raucous Bairro Alto, Casa do Brasil is a steadfast nighttime institution for Lisbon’s Brazilian community, hosting concerts and cultural events in a non-profit capacity. This two-floor venue is the place to chat, drink, eat and dance to a myriad popular rhythms from the homeland, all performed live: the festive accordion-drone of forró, the fast, happy chorinho or 1960s bossanova, as well as samba, rock and maracatu. The grungy ground floor, which mainly functions as a bar and dance floor, also hosts poetry sessions, film screenings and gastronomic events. Usually held on Mondays, their dinners provide the ideal space for getting to know the regional specificities of Brazilian food – its 26 states occupy more than half the South American continent, meaning it will take more than a couple of visits to get a full sense of the national palate.

To describe something that is better than good, Portuguese speakers sometimes use the word espectáculo (show, spectacle) as an adjective. João Gomes, the owner of Imperial de Campo de Ourique, does it every five minutes. He practically trademarked the phrase “É um espectáculo” (It’s a show/spectacle), to the point that he has it embroidered on his apron. His wife Adelaide’s reads “A chef do espectáculo” (The show’s chef) – she’s the cook and a very good one indeed. Nuno, their son, doesn’t have an embroidered apron but he is also part of the show, waiting tables and managing orders effortlessly. Imperial used to be one of Campo de Ourique’s many outstanding tascas. Now it is probably the last one standing.

There’s one thing about Rio’s gastronomy that just about everyone can agree on: feijoada, the glorious black bean and pork stew served with cabbage, toasted manioc flour, rice and oranges, can (and should be) eaten all year long. But during the Carnival season (a non-specified period that begins in early January and extends until one week after the Carnival holidays), the Brazilian national dish becomes the official meal of all parties and events. From Friday to Sunday, feijoada is everywhere – at samba schools, bars, restaurants, fancy hotels, and even on the streets – and almost always accompanied by samba. This year is no different. The feijoada season has already begun, and the agenda is packed until Carnival, which in 2018 runs from February 10-14.

Brazil’s economic crisis has hit Rio hard this past year, and the culinary scene was by no means immune from the downturn. Some famous restaurants and bars closed their doors for good. But the city hasn’t given up. In fact, if some doors have closed, a lot more have opened. Because now creativity is being used as a weapon against the crisis, and not only at newly opened spots. Established bars and restaurants have been reinvigorated with new ideas and processes. In this atmosphere, many exciting culinary novelties have made their way to the streets, ready for us to indulge in, all without having to spend too much money. So my best bites of 2017 reflect this abundance of good and cheap novel eats that have become so popular in these leaner times.
