Pavão Azul

There’s one thing about the very popular Copacabana bar Pavão Azul that remains a mystery, even after 60-odd years of business: its name. Pavão azul means “blue peacock” in Portuguese, but even the owners don’t know where this curious name come from. Some customers who have been frequenting the bar since it opened in the 1950s say that it was named after the bar in the movie “Casablanca” – except that that place was actually called the Blue Parrot. What’s not a mystery is the bar’s popularity. Once just a regular old botequim – a small bar serving simple food – Pavão Azul was discovered by food critics thanks to its patanisca.

Majórica

If you go to Rio’s Café Lamas to see where leftist organizers met during Brazil’s military dictatorship, go to Majórica to eat steak where the city’s business and political elites gather today. Located on a residential street in Rio’s Flamengo neighborhood, the restaurant from the outside looks like a three-story house, but for the neon red cursive sign with its name. It was founded in 1963 by two brothers from the Spanish island of Majorca. When we last interviewed the owners in 2015, it was being run by the daughter of one brother, together with (then) 79-year-old Galician-born Ernesto Rodriguez, who worked his way up from being the restaurant’s janitor back in 1965.

Biting into a freshly-made globe of mozzarella, porcelain smoothness yields to a creamy interior and milk trickles down the cheeks. For any Neapolitan, this is true pleasure. And everyone knows the best spot for such an afternoon delight is at a cheese factory in the countryside – namely in the Caserta and Salerno provinces. There, some of the best Mozzarella di Bufala Campana DOP is shaped daily from fresh buffalo milk. For those of us stuck in the city center and craving that addictive bite of fresh mozzarella, one of Sogni di Latte’s two locations is our first stop.

At the bottom of a quiet street in Colonia Reforma, a neighborhood located in the northern-central area of Oaxaca City which hides many of the city’s best-kept food secrets, we find Garnachas La Güera. While the area is characterized by its quiet, residential streets, this restaurant is a small paradise where joy, music and good food transport you to the tropics. Garnachas La Güera specializes in food from Juchitán, a village in the Isthmus of Tehuantepec, close to Oaxaca’s southeastern coast and the border with the neighboring state of Chiapas. If Oaxaca is a state, Juchitán is like its own country within it.

The quick trip to France for indulgences not found in Spain is something of a tradition among the Catalan people. During the Francoist regime, many people used to drive to France to skip the dictator’s censorship and wait in long lines in the Perpignan cinemas to see classics of erotic cinema of the time – like The Last Tango in Paris – or to get books and magazines forbidden in Spain. Nowadays, you’d still be hard-pressed to find a Catalan who travels to southern France for the weekend and returns empty-handed, though now they’re like to bring back wine, an artisan pâté, or one of hundreds of wonderful French cheeses.

It is 6:30 pm – the workday of most of the taco, quesadilla and memela vendors in the city is over, but “The Artist’s” shift has just begun. Every day, as the dusk light bathes the streets, 34-year-old Caleb Santiago sets up his food cart right below the centuries-old clock that overlooks the corner of 5 de Mayo and Murguía. By 7:00 pm, he is ready for another night of juicy hamburgers and hot dogs. Among all the late-night hamburger stalls sprawled across the city, Caleb’s is something else. Initially known as just “Cangreburgers,” this little SpongeBob Squarepants-inspired cart has been feeding Oaxacans for the last 16 years.

Oaxaca’s street food scene has surprises for us every day of the week. From breakfast to lunch, we can find plenty of stalls with a plethora of options: eggs, tamales, tortas, tacos, hot drinks, juices and more. However, when sunset bathes the streets of the historic center, most of these stalls are disassembled into heaps of tarps, letting esquites, burger and hot dog stands take over the night shift. Fortunately, this is not the case for Empanadas del Carmen Alto, a classic among locals for serving up daytime dishes until midnight. The menu at Empanadas del Carmen Alto is succinct: memelas (thick corn tortillas topped with various ingredients), the famous empanadas de amarillo (calzone-like corn tortillas filled with chicken and mole amarillo) and squash blossom or mushroom quesadillas.

Back in 1966, when it opened on Avenida da República, one the main roads connecting the new avenues of Lisbon with the city center, Galeto caused quite a commotion. Lisboetas flocked to the huge snack bar, seduced by both the design – it was styled like an American diner – and the menu, which in those days seemed wildly innovative. Locals used to more conservative Portuguese fare were suddenly introduced to club sandwiches, burgers, mixed plates that brought together some wildly disparate elements and even Brazilian feijoada. Eating at the long counters while perched on a comfy seat was quite different from sitting on a stool at an everyday tasca. When combined with the avant-garde décor, swift service, and long hours (it was open late, until 3:30 a.m.), it felt like Lisbon was catching up with the dining habits elsewhere in Europe or the U.S.

Bar Bodega Quimet

De toda la vida is a Spanish expression that basically means “It’s been around forever,” and it’s a sure thing that the locals in Barcelona’s Gràcia neighborhood will utter those words if you ask them about Bodega Quimet. Opened in the 1950s by the Quimet family, the bodega (not to be confused with Quimet i Quimet, a popular Barcelona tapas bar) was passed down from father to son until 2010, when the younger (but nonetheless old) Quimet retired and brothers Carlos and David Montero bought the venue. David Montero had always worked as a cook and dreamed of owning his own place. However, after buying Quimet, instead of doing the renovations so typical of Barcelona bars that change hands (such as modernizing the furnishings or installing a huge flat-screen TV for showing fútbol matches), the Montero brothers made the somewhat unusual decision to keep everything, from the low prices to the décor, pretty much the same as it always had been.

Those arriving at Tsukiji Station on an early morning food hunt are most likely in pursuit of some breakfast sushi. Although Japan’s world-famous Tsukiji fish market relocated to Toyosu in October 2018, the ramshackle outer market remained, with its eclectic mix of household goods, tea and dried goods, and seafood donburi shops. Those in the know, however, might head for a different and very unusual breakfast experience in the area – one that has its origins in traditional vegan Buddhist cuisine. The most striking landmark upon exiting Tsukiji Station is not the market entrance, but the imposing Tsukiji Hongwanji temple. Set back from the road, this grey stone behemoth is modeled after ancient Buddhist architecture found in India and other Asian countries, with an arched roof rounded into a ringed point known as a sorin.

Kurtuluş Pastanesi

In our beloved home base of Kurtuluş, the neighborhood's rich patisserie culture is often associated with its Greek and Armenian communities. Some of these shops churn out the best profiterole in the city, while numerous others bake sakızlı Paskalya çöreği, a subtly-sweet bun laced with mastic gum and topped with thinly-sliced almonds consumed on Easter. There are more of these excellent patisseries in Kurtuluş than we could count on both hands, but only one that features the traditional Sephardic specialty börekitas, a small, crescent-moon shaped empanada variation stuffed with either roasted eggplant or potato.

When the Phocaeans founded Marseille in 6th century B.C., these ancient Greek explorers launched France’s long history with wine production and consumption. In the 1930s, southern France became famous for another kind of grape juice. In the southwestern town of Moissac, home of the Chasselas grape, Dr. Armand Rouanet touted the amazing health benefits of grape-seeds at his uvarium. At this first-of-its-kind center for grape-based therapies (uva is the Latin root for grape), people would consume a grape-only diet (2-6 pounds a day) to heal everything from cellulite to constipation. Ironically, this grape cleanse was ideal for detoxifying the liver, the organ most damaged by wine. This temple of grape glorification was such a success that dozens of stations uvales sprouted across the south of France to peddle the just-pressed grape juice alongside other fresh-squeezed fruit.
