Stories for oaxacan

Some of my strongest childhood memories are of warm afternoons spent at my grandparents' garden in Oaxaca, sitting around a big table eating all sorts of snacks. My grandfather would ask all the cousins to line up, close our eyes and open our hands, into which he would place a “special candy.” Then came the challenge: “I will give 10 pesos to the first one who eats the candy without opening their eyes.” Little did we know that these so-called “special candies” were chapulines (grasshoppers), little insects with tiny legs and a tangy flavor. Our grandfather's jokes introduced us to a world of challenging flavors and textures that eventually became synonymous with home, where we were surrounded by delicious food and innocent laughter.

Amidst the uncertainty and turmoil caused by the coronavirus crisis, it’s easy for the days to blend together. Yet for many Oaxacans, the weekends are still distinct, mainly because of the pleasurable fin de semana (weekend) meals that allow family and friends to gather, reset and reenergize for the coming week. There is nothing more soothing than informal comfort food, which is often on the menu for these meals. “Although such food is not complicated to cook, on a Friday evening or a slow Sunday afternoon all you want is to chill and forget about cooking,” says Miguel Mijangos, head chef and co-owner of Ancestral, a traditional Oaxacan restaurant located in the picturesque neighborhood of Xochimilco.

Growing up in Oaxaca, la gelatina rosita (“pinkish jelly”) was a biweekly ritual – every other Saturday, our mother would return from the market with this special dessert. It was so ingrained in our routine that we couldn’t imagine life without it. In fact, on a family trip to Mexico City, we were shocked to learn that gelatina rosita wasn’t readily available. Did they know what they were missing? It was only when we were older did we learn the proper name of this precious Oaxacan specialty: nicuatole. Some say its etymology can be traced back to Nahuatl (one of the many Indigenous languages spoken in ancient Mexico), specifically the words necuatl (“agave honey”) and atolli (“liquid corn”). While this may be true, it doesn’t quite portray what nicuatole is, not really.

Every Sunday, a vendor named Domitila heads out from a village called Etla and makes the hour-long journey to Oaxaca, where she sets up a small stand at a market on the north side of town and sells tamales filled with her homemade stews and moles. The many ingredients for these stews and moles cook slowly, for hours, after which Domitila combines them with spices, chile, chicken or cheese and mixes them into a cornmeal dough spread inside a cornhusk and then steamed – the quintessential Oaxacan snack, one that combines all of the area’s agricultural and culinary richness in one package.

It’s almost 2020, and Mexico City continues to be one of the best eating cities in the world. So maybe you won’t find world cuisine the likes of New York or London, but instead you will be bowled over by a deep culinary tradition, genius chefs who were self-taught and a delicious meal waiting on every corner (and we mean every). No “best of” list will ever cover all the deliciousness awaiting you in Latin America’s foodie megalopolis, but here are a few places that we fell in love with in 2019.

Alex Montes and his business partner, Askari Mateos, have spent years fussing over their recipes for tlayudas: large, thin corn tortillas topped with various ingredients. So what is the secret to a great tlayuda? Montes thinks for a moment. “The asiento [the unrefined pork lard that covers the tortilla],” he finally says, “and the beans, always with avocado leaf.” “The great thing about a restaurant,” he continues, “[is that] you make the same dish over and over so you have endless chances to perfect it.” We’d say that Montes and Mateos have done just that – the Oaxacan food at Las Tlayudas, the duo’s restaurant in Colonia del Valle, is pretty much perfect.

The memory of 2017’s devastating earthquake still lingers in the minds of many in Mexico City, but perhaps the biggest challenge the city faced in 2018 was gentrification. Ambitious development initiatives have resulted in safer neighborhoods; however, the cost of real estate has soared, leaving many long-term residents and business owners at risk for eviction, particularly in the Historic Center. Yet chilangos are showing their support for their favorite culinary institutions that are feeling the crunch. Likewise, our DF correspondents revisited some old favorites in 2018, as well as branching out into uncharted territory.

“There are two Oaxacan foods – what is served for tourists, and what people really eat,” says Marahí López, the chef at Comixcal, an Oaxacan restaurant in Mexico City’s Santa Maria La Ribera neighborhood. “There is a way that Oaxacan food is sold that is totally detached from the way we eat it in Oaxaca.” López knows of what she speaks, hailing from Juchitán, the culinary and cultural capital of the Isthmus of Tehuantepec, Oaxaca. She met Alexis Jiménez, who is from the Central Valleys surrounding Oaxaca City, while both were attending university in Mexico City. López and Jiménez teamed up to establish Comixcal in June 2016, after receiving degrees in Gastronomy and Anthropology, respectively.

One feels cooler simply for patronizing La Secina. The architecture of the restaurant seems to evoke a perpetual party vibe. At dinner, individual lights dangle on long lines amid a mesh of vines that gives the cavernous space a homey, DIY feel. The teal and orange on the wall are bright and clean. The stenciled restaurant logo and exhortations of “bienvenidos” feel as organic as they do well designed. Downstairs, picnic tables radiate outwards from a long, inviting bar. Upstairs a dedicated booze closet services a patio that looks out upon a beautiful church across the street. And on weekends, live blues bands play everything from Albert Collins to Muddy Waters to Robert Johnson.

Convincing someone to accompany you to Istanbul’s Pendik district is no small feat. The Asian-side suburb is located in the far eastern reaches of the city, a trip of at least an hour and a half from the city center requiring no less than three metros and a cab. We've been met with moans and groans upon mentioning the name, as the district is synonymous to many with the wildfire-like urban sprawl that has engulfed Istanbul over the years. Those up for the journey, however, are rewarded handsomely at Lipa, a meyhane serving Bosnian specialties. The neighborhood of Sapan Bağları is home to a large population of natives from Sandzak, a predominantly Bosnian Muslim region now split across modern-day Serbia and Montenegro.

The word mole comes from the Nahuatl molli, which means “mixture,” and is used to refer to a number of sauces prepared all over Mexico. There’s some controversy as to which spot is the birthplace of mole (Puebla, Tlaxcala and Oaxaca all claim the prize) and when exactly these sauces were created. What we do know about mole sauces, however, is that they are the perfect culinary example of the mestizaje that took place in Mexico after the arrival of the Spanish conquistadores. They combine native ingredients such as chilies, fruits and seeds with elements brought by the newcomers, including nuts, exotic fruits and even bread.

We’ve written previously about the immense diversity of Mexican cooking: Every region has unique traditions that build upon ingredients common to much of the country. And yet there are a few regions that stand out for the variety and vividness of the flavors, colors and tastes found there.

Rio’s small traditional bars, known as botequins, are by definition simple establishments, where orders are usually taken down with pen and paper – and sometimes not taken down at all, but mentally noted. But even in these fuss-free eateries, times they are a-changin’.
