Stories for baking

Folar is the generic name given to traditional Easter sweet bread in Portugal. Making it from scratch is somewhat of a long process, but being confined due to the coronavirus crisis, we seem to have a bit more time on our hands than expected. My family’s folar recipe is from my grandmother Felismina, who was from Rosmaninhal, near Mação (in the center of Portugal). As long as I can remember we would have this sweet bread around Easter. (A similar type of sweet bread is also baked around November 1, for All Saints’ Day.)

As anyone familiar with Greek folk religious traditions and habits can tell you, communication between Greeks and their saints has traditionally been quite direct – saints are addressed with respect, of course, but also in a friendly and familiar manner. I myself have witnessed several people – almost always of the older generations – have a proper “conversation” (more like a monologue) with the saint of their choice. Each saint has a particular day on which they’re celebrated; in some places, large festivals are thrown in their patron saint’s honor, with people of all ages dancing and drinking wine until the early morning hours. Throughout the year, it’s common for Greeks to make special “deals” with their saints.

Tidy layers of dark chocolate ganache, coffee buttercream and almond biscuits in an opera cake. The term “culinary arts” is at its most appropriate when considering the work of a pastry chef. Especially when the pâtisserie is hidden in the back of an art gallery. Parenthèse Enchantée is the second act for Nathalie Gnaegy. “Cooking was my weekend pastime,” she explains. Nourished by sharing food with her family and coworkers, she “progressively veered towards baked goods, more welcome at the office than a half-eaten whole tuna,” she winks. Her appreciative officemates insisted she should “bake professionally.”

When we think of Spanish convent pastries, we imagine a group of old nuns gathered together in the dark and humble kitchen of some small Gothic or Baroque cloistered convent, hidden away in the old part of town. We picture them working quietly, baking elaborate, time-consuming treats from ancient recipes that have been passed down over the centuries by the previous nuns who lived there. Yet when it comes to the only convent in Barcelona that still makes sweets to support themselves, we should throw our biases out the window – Santa Maria de Jerusalem defies all stereotypes.
