Nuno Mendes is excited. He’s standing at my kitchen counter, where laid out before him are pieces of half-moon-shaped dough, each encasing a juicy meat mixture. They’re about to go into a pan filled with bubbling oil. My mom, Lica, is nervous. She is sharing her mother’s recipe for pastéis de massa terra, a traditional Portuguese savory pastry, with the highly esteemed chef of Chiltern Firehouse and Taberna do Mercado in London. He has heard about her mouth-watering pastéis from a mutual friend and decided to see for himself just how good they are. Worried that the dough isn’t quite right, she drops in the first one and the pastry bubbles up crispy, as it should. When it’s finished, she gives it to Mendes, who takes one bite and says, “Wow, these are amazing!”

Think of Ramadan, which just began in many parts of the world, as a kind of monthlong biathlon that consists of an all-day race to beat back the hunger and thirst of fasting, followed by an all-night marathon of eating and drinking in order to fortify the body for the next day’s fast. In recent years in Turkey, iftar, the traditional break fast meal that used to mostly consist of some dates and a freshly baked round of Ramadan pide, has started to become an increasingly trendy affair, with ministers, businessmen and regular people trying to make an impression by hosting ever more lavish meals.

Perhaps nowhere else is it clearer that as many as one million Syrians have settled down in Istanbul than in the city’s historic Fatih district. The neighborhood is home to the city’s immigration headquarters (Fatih Emniyet), and the backstreets leading up to it are among the most transformed, since Syrians and other new arrivals end up spending hours there, often taking multiple trips to the office to get their paperwork in order. A stroll down the area’s Aksemsettin Caddesi reveals a dwindling number of Turkish markets and a rising number of Syrian ones.

Hidden behind the imposing stadium of the Panathinaikos football team – the green team as opposed to its eternal rival, Olympiakos, the red team – lies a tiny eatery that recalls Athens before the 1960s, when urban sprawl destroyed everything. Occupying two adjacent whitewashed houses, Oinomagereion to Trifylli, named after the team’s clover logo, has been serving simple, delicious food to loyal customers for the last 60 years. The taverna was founded in 1962 by Kyria (Mrs.) Koula, the present owner’s mother, in order to earn additional income for her family.

Any journey on the Shinkansen – Japan’s bullet train – is the perfect opportunity to enjoy an ekiben, the iconic bento filled with an assortment of delicacies tucked into a container and eaten in bite-size pieces. The term comes from the Japanese words for train (eki) combined with ben for bento (or “lunchbox”). These little jewel boxes are sold at concessions in train stations across the country and occasionally via pushcarts on trains. Different regions of Japan offer up varieties of local ingredients or specialties, making the ekiben a cornucopia of Japanese cuisine. Before airplanes became inexpensive and frequent in Japan, rail travel was the only mass transportation for long distances.

Each morning, 82-year-old Giorgos Chatziparaschos’s bicycle pedals clank and echo down the cobblestone streets of the Venetian-era port city Rethymnon, on the island of Crete. For almost 60 years, he’s parked his bike in front of a 17th-century building where a simple hand-painted sign reveals his family name and his family business. By eight o’clock he has donned his apron and hat, and with the steely determination that underlies his work ethic, he begins to roll out the dough. Chatziparaschos is one of the only pastry makers in Greece specializing in handmade kataifi. The traditional phyllo pastry looks like shredded wheat, with strands as thin as vermicelli.

As one approaches the port of Ermoupolis (named after Hermes, the god of commerce), the main town of the island of Syros and capital of the Cyclades, one cannot help but marvel at its beauty and grandeur. Imposing public buildings and private mansions, marble-paved streets, a large Italian-style piazza and numerous churches make the city one of the best preserved examples of 19th-century architecture in Greece. This should not come as a surprise: in the aftermath of the 1821 Greek War of Independence from the Ottoman Empire, Syros developed into an important commercial, cultural and industrial center, as refugees from Asia Minor, Chios, Crete and other areas found a safe haven from the war on the small island.

Thessaloniki, the capital of Greek Macedonia and the country’s second largest metropolis after Athens, 500 km to the south, is a youth-loving, vibrant city that never sleeps – and always eats. Most locals here are friendly, laid-back, natural-born foodies who love going out and enjoying good wine and tsipouro. It’s a city with a very long history of culinary hospitality. Founded by King Cassandros in 315 BC and named after Thessalonike, his wife – half-sister of Alexander The Great – it’s referred to by Greeks as symprotevousa, “co-capital,” because of its historical status as a co-reigning city of the Byzantine Empire, along with Constantinople. In 1492 the city welcomed a large number of Jews expelled from the Iberian Peninsula.

If it weren’t for the dozens of brightly lit signs and paper lanterns promising libations of every sort, you might mistake the two narrow alleys alongside the train tracks on the northeast side of Shibuya station for a derelict apartment block. In reality Nonbei Yokocho (AKA Drunkard’s Alley) is one of Tokyo’s few remaining yokocho (side street) bar districts. Like the much larger and better-known Golden Gai in Shinjuku, Nonbei Yokocho is a collection of aging and tightly packed microbars. Each watering hole is scarcely more than a few square meters, and if longtime regulars aren’t taking up the scant floor space, newcomers may try any number of doors before they find an empty seat.

All over Athens (not to mention the U.S. and other parts of the world), one of the hottest grains around is also among the oldest known to man. While farro, or zea, as it’s known in Greek, has been found in excavations of prehistoric settlements in parts of what was once Ancient Greece (the oldest, in Asia Minor, dating back to 12,000 BCE), in the early 20th century, its cultivation was banned, largely because it was cheaper to import other grains (though many incredible conspiracy theories behind the ban abound). Thankfully, zea began making a comeback about 15 years ago, and it is now popular again, not just in grain form, but also as flour for making baked goods and pasta.

The subject of frequent arguments over who actually invented it, baklava has a history as multilayered as the flaky dessert itself. The story may actually go all the way back to the 8th century BCE and the Assyrians, who layered bread dough with chopped nuts and honey and baked the result – a kind of proto-baklava – in wood-burning ovens. Perhaps carried by the winds of trade, different versions of this ancient dessert appeared on Greece’s shores a few centuries later. The 3rd-century-CE Deipnosophistae ("Banquet of the Learned") – sometimes referred to as the oldest surviving cookbook – provides the recipe for gastrin, aka Cretan “Glutton Cake,” a sweet that also seems to presage the arrival of baklava as we know it. The instructions, attributed to Chrysippus of Tyana, one of the leading dessert experts of antiquity, calls for turning various chopped nuts, boiled honey and poppy and sesame seeds into a paste which is then spread between two sheets of thin, rectangular dough. At a certain point, ancient Greek cooks started using thinner sheets of pastry, better known as phyllo – Greek for “leaf” – getting closer to today’s baklava.

The Praça da Bandeira, an area of Rio that until recent years was mostly known for prostitution and cheap inner-city housing, is rapidly changing. Lying in the shadow of the massive Maracanã Stadium – built for the 1950 World Cup and the planned location of the opening ceremony of the 2016 Summer Olympics – it is alive with new construction and pedestrian traffic, which are changing the tired face of this historical but underappreciated neighborhood. And sitting snugly in the midst of this new buzz is Aconchego Carioca, a restaurant and bar with one of the best beer menus in Rio.

Editor's Note: Sadly, this spot is now closed. The busy outer neighborhoods of Rio de Janeiro – locals refer to them as “suburbs,” though they are anything but – are full of old bars. Some of the best botequins (small, family-run establishments serving traditional food) have been kicking around in these parts for ages – but not all of them.

Rio’s Port Zone is undergoing a major facelift, and whether that will nicely polish its tired face or look like a botched Botox job remains to be seen. The port is the heart of Rio Antigo and particularly central to Afro-Brazilian history.It’s home to Rio’s first favela (squatter settlement), called Providência, which was originally populated in 1897 by veterans of the War of Canudos who were told the government would provide housing when they returned to Rio and found those promises to be delayed and elusive. At this port, up to an estimated half million slaves walked in from Brazil’s shores to then be sold in the port’s slave market, treated in a hospital if they were sick or buried if they died after arrival in Gamboa, where a fascinating makeshift museum called the Cemitério dos Pretos Novos offers a view of the human bones a homeowner found while digging on her property.

Dimitris Kotsaris was more proselytizer than baker. Rather than a flour-dusted apron, this mild-mannered gentleman would wear elegant suits to meet with journalists, bearing two or three kilos of his famous whole-wheat bread as a gift. He was an ardent believer in the medicinal qualities of bread and preached widely that good bread promoted good health, once even taking his case to Harvard, where he delivered a talk about the role of well-made loaves in healthy diets. In 1981 Kotsaris opened Pnyka, the pulpit from which he spread his yeasty gospel, and gave the bakery the Greek name for the hill downtown where, in the golden years of Ancient Greece, Athenians gathered for the general assemblies that played such a formative part in the creation of democracy. It is quite fitting then that the first Pnyka shop opened in Syntagma (“Constitution”) Square. The bakery has since added two more shops in the city, in Exarchia and in Pagrati, the headquarters of the operation, and its following is such that last year a third was established in Vienna. Kotsaris passed away last year but his vision lives on through his son George, who has taken over the business.
