On the walls at Haritna Restaurant are homages to simple sights: a large gate, ancient Damascene windows – it’s a scene that hopes to inspire the very particular feeling of sitting in the middle of a Damascus square, down a well-trodden, old lane. For in Arabic, haritna means “our lane.” Also a colloquial term for neighborhood, Haritna evokes a sense of home for those now living far away. In fact, owner Loay Bakdash, originally from Damascus himself, had dreamed of opening such a restaurant while working as a civil engineer in Saudi Arabia. But he didn’t want it to be a place where people would just come and eat. “I wanted the customers to feel that they are in one of Damascus’ neighborhoods, among their acquaintances in a family-friendly atmosphere,” he says.

Like most Syrians who fled their war-ravaged country and made their way to Turkey, Fatma Jabal, a 19-year-old from Aleppo now living in Istanbul, had to get creative in order to make a living. With a baby boy to take care of and her husband struggling to provide for their family while working as a carpenter, Fatma tapped into something she’s been doing since she was a child: baking cakes and cookies. Making desserts had been something Fatma has loved from early on growing up in Aleppo, which she left in 2014 in the midst of the worsening conflict there. For her, each treat she bakes is a work of art that just happens to be edible. “The first thing I did in the kitchen was sweets,” she says. But Fatma realized she needed to develop her budding baking prowess to start charging customers.

“We want to show people what Greek cuisine is really like. It’s not just souvlaki, gyros and moussaka. So in July and August when we’re closed, we travel all over the country looking for recipes, and because we love Greek wines too, we find recipes that go with them,” Xenophon says. We took a long time studying the menu – nibbling on their own olive bread – because even the dishes that sound familiar are not always what they appear to be. Take, for example, spanakopita (spinach pie). Here, it’s actually a salad. Moreover, their cheese dip, myttotos, made of three white cheeses plus black garlic, “goes back to the time of Hippocrates,” and the liver with apples, a combination we’ve never heard of, is a recipe from Karditsa in the northern Greek region of Thessaly.

We arrived at Taberna Santo António after lunch, looking for a bit of warmth in the middle of winter. It wasn’t a shot in the dark – we already knew that we would be enveloped by a comforting hospitality at this classic Porto spot. The sun was shining, so we sat on the terrace with Pedro Brás, whose parents own Taberna Santo António. “We’ve been here for 30 years in March,” he said. And while nowadays the surrounding landscape is inviting – just around the corner is the Parque das Virtudes, where crowds congregate in the late afternoon to listen to music, chat and drink beer as the sun sets over the Douro River – that was not always the case.

Manuel Azevedo and Francisco Moreira, now both in their 70s, have been friends since childhood. Such a close connection has afforded them the trust and togetherness required to run O Buraco, the restaurant in Porto that the duo have presided over like generals for almost 50 years. In fact, it was right after completing his military service that Manuel, a native of Marco de Canaveses, a city within the greater Porto municipality, came to Porto proper in search of work. “I picked up the newspaper, saw the ad, applied and was hired as a waiter,” he tells us. On February 4, 1971, he entered O Buraco (“The Hole” for the first time; he hasn’t left since.

Like many cooks and chefs before and after her, Ioanna Amoutzaki’s biggest culinary inspiration was her mother, Lambrini. Born and raised in Xanthi, a beautiful town in northern Greece, Ioanna spent her childhood in a busy kitchen, learning the art of cooking. Both of her parents came from Smyrna (now Izmir) in Asia Minor – the Greeks from that region have always been legendary for their cooking skills, and her mother was no exception. A particularly skilled home cook and baker (the family had a wood-burning oven in the backyard), Lambrini passed all of her culinary secrets to her daughter.

Darra Goldstein introduced a generation of cooks and readers to the cuisine and culture of Georgia with her seminal work, “The Georgian Feast.” Originally published in 1993, the book was awarded the IACP Julia Child Award for Cookbook of the Year. A revised and expanded 25th anniversary edition, which features new photography, recipes, and an essay from celebrated wine writer Alice Feiring, was published in October 2018. We spoke with Darra, the founding editor of “Gastronomica: The Journal of Food and Culture” and the author of five award-winning cookbooks, about this new edition.

“Where to eat in Porto?” Google search this sequence of five words and a multitude of articles listing restaurants and eateries will naturally come up as a result. Some of those suggestions – the trustworthy ones, at least – will mention Casa Nanda. It’s a fair choice: Casa Nanda is, indeed, one of the most traditional and historic joints in town. What most listings won’t mention, though, is that the couple who founded it and were its driving force are now working somewhere else.

In the early 18th century, before there was the Spinning Jenny, the Cotton Gin and the steam engine, a new machine was making waves in Gragnano, the grain capital of the Kingdom of Two Sicilies. It was the torchio, the pasta extruder. And it would radically and permanently change the diet of Italy. Just beyond Naples, the ancient Roman town of Gragnano, whose very name indicates an abundance of grain, was tentatively beginning to mechanize the production of dried pasta, theretofore a luxurious oddity throughout the Italian peninsula. Local entrepreneurs gradually capitalized on what their forbearers had known for several millennia – not only was Gragnano ideally situated due to its storied cultivation of durum wheat and semolina, but it also offered access to thirty water mills. Perhaps even more curiously Gragnano offered something very rare at the time: the perfect air for drying pasta.

When we embarked on the ferryboat to the South Aegean island of Kea at Lavrio, about an hour’s drive from Athens, we didn’t see any of the tourists that typically fill ferries going to the Cyclades in summer. Traveling with the summer winds just an hour further, we seemed to slip through an invisible door into a world at once very close but far away in ethos. Many wealthy denizens of Attica, the peninsula that encompasses Athens, have built their summer homes here in a style that deviates from the famous blue-and-white of the Cyclades, incorporating local stones and looking somehow traditional and modern at the same time, blending into the local landscape. A big aspect of this landscape – yet another surprise, the greenness of the island – is the thousands of trees that make up the ancient oak forest carpeting Kea, whose acorns are undergoing a felicitous revival as a staple of local economic – and even culinary – life.

Several thousand years ago, or so the story goes in Naples, Lucifer and Jesus had a massive showdown in the rarified kingdom of heaven. After a raging session fueled by sibling rivalries, and which likely included satanic petulance and the occasional errant lightening bolt, God, as any parent of battling children can grasp, had had enough of the celestial brawling. One can almost imagine Jesus yelping, “He started it,” as Lucifer tosses a fireball in his direction. So God cast Lucifer into the depths of hell – consigning him to an eternity of fire, brimstone and heat. (In the original pagan legend, this quarrel was between Bacchus and Pluto; after Christianity swept across the region, Neapolitans changed the names of the main characters, but the story remained the same.)

The humble pie is perhaps one of the world’s oldest street foods. A quick survey of global food history finds pies everywhere, from East to West, mirroring the local ingredients, agricultural practices and dietary needs of different cultures. In Greece, pies certainly go way back. There are a few references to pie-making during the Minoan times (2600-1600 BC), but most mentions are from around the 5th century BC onwards, when pies were generally known as plakous. Ancient Athens was particularly famous for its bakeries and pies, especially a cheese pie known as tyronos plakous or tyron artos. They were the main snack consumed by Athenians while listening to public speeches at the Agora or while watching theater.

Since its name derives from the Turkish word peynir (cheese), it’s no surprise that Athens’ best peinirli (πεϊνιρλί, “with cheese”), a boat-shaped flatbread similar to pide in Turkey and khachapuri in Georgia, is usually found at old, specialized shops or eateries owned by families who originally came from Asia Minor or Pontus, the Greek name for the southern coast of the Black Sea, in the early 20th century. So when Spyros, the owner of Peinirli Ionias in Ambelokipoi, one of the most popular peinirli takeaways in downtown Athens, casually mentions that he originally hails from the Ionian island of Corfu – nowhere near Asia Minor, another name for Turkey’s Anatolia region – we are left scratching our heads. Sensing our confusion, he quickly adds that he learned the art of peinirli-making directly from the source, so to speak: his father- and mother-in-law, who both emigrated to Athens as part of the 1923 population exchange between Greece and Turkey.

If it weren’t for the dozens of brightly lit signs and paper lanterns promising libations of every sort, you might mistake the two narrow alleys alongside the train tracks on the northeast side of Shibuya station for a derelict apartment block. In reality Nonbei Yokocho (AKA Drunkard’s Alley) is one of Tokyo’s few remaining yokocho (side street) bar districts. Like the much larger and better-known Golden Gai in Shinjuku, Nonbei Yokocho is a collection of aging and tightly packed microbars. Each watering hole is scarcely more than a few square meters, and if longtime regulars aren’t taking up the scant floor space, newcomers may try any number of doors before they find an empty seat.

It has been said that when Greeks want a good meal, they stay at home, and that when they go out, having fun is the object, the food a secondary concern. But that was in the past. As diners have become more sophisticated and demanding, restaurants’ and tavernas’ standards have been rising and a mediocre meal is hard to find. But the craving for home cooking, for those laborious, slow-simmered soups, stews, and casseroles that mothers and grandmothers used to devote their days to creating still persists. And the old-fashioned mageirio or mageriko is an institution that satisfies this urge.
