Meet the Vendors: Ömer’s Fava Beans and Artichokes in Istanbul
Surrounded by construction sites, Salı Pazarı – literally “Tuesday Market” – is a huge open-air bazaar in Kadıköy, a district on the Asian side. This sprawling market, held on Tuesdays and Fridays, is a snapshot of life in Istanbul: old ladies plow through crowds, their trolleys overflowing with groceries; vendors scream at the top of their lungs; and cars rocket down the highway along the front side of the market. In addition to being a litmus test of Turkey’s economic state and the general mood of the people, the market and the produce showcased on its stands reflect the changes in the seasons. In fact, as spring has been struggling to assert itself this year, only a few stands are stocked with the typical spring products on the sunny but cold April morning that we visit.

Pulat Çiftliği: City Farm
It’s one of those brisk winter days in Istanbul, when the weather is just warm enough for a walk outside but cold enough that you’ll eventually want to cozy up in a café. So we set out for a stroll in Kuzguncuk, a laid-back neighborhood on the Asian side with plenty of inviting spots. After a walk through the bostan (urban gardens), we head back to the main drag in search of a warm place to rest and refuel. Opposite a large Orthodox church, its bell tower piercing the cloudy sky, we catch sight of Pulat Çiftliği (Pulat Farm) housed in a beautifully restored three-story building. The name suggests some kind of organic grocery store, but as we step inside it quickly becomes clear that Pulat Çiftliği is much more than that.

Balmerkez: The Honey Lab
Wandering around the neighborhood of Çarşamba, home to a famous weekly market and close to the sprawling Fatih Mosque complex, we get the distinct impression that this area is honey central: the streets are lined with shops selling the sweet nectar, particularly stuff coming from the Black Sea region. “This area is full of honey sellers,” Aslan confirms on a cold November afternoon after we took refuge in his store, Balmerkez, “but there is no place like this.” He’s right – there’s something about his storefront that we found particularly appealing on that cold day. Perhaps it’s because Aslan’s little shop looks more like an atelier than a commercial outlet. Pots, containers, glass jars and wicker baskets are stacked high on the shelves – a honey lab may be a more fitting description.

Seçkin Et ve Tavuk: Wednesday Special
Walking around the busy Çarşamba Market in Fatih on a Wednesday, we spot a line of people waiting patiently in front of a butcher shop. Not wholly unsurprising, since it is a market day, but we notice that some of them are enjoying particularly tasty-looking döner sandwiches. The tempting smell coming from the little shop, an innocuous place named Seçkin Et ve Tavuk, convinces us to join the crowd – a mixture of families, groups of old ladies and men taking a break from work – and grab a portion of döner accompanied by fresh tomatoes, pickles and fries, and washed down by the ever-present ayran.

Köklem Uygur Yemekleri: A Taste of Home
It’s the eve of Kurban Bayramı, and while most of Istanbul is eerily empty, the tables at Köklem Uygur Yemekleri in Çapa, a neighborhood in the Fatih district, are quickly filling up. A young couple calmly chats, using chopsticks to pick up sautéed chicken slathered in soy sauce. At a nearby table a man sits alone, his bored countenance swiftly replaced by a broad smile as a waiter arrives at his table with a steaming plate of noodles, ready to be devoured. Most of the customers are speaking a language we can’t decode. But based on how happy everyone looks, this food is bringing them some serious joy.

Last Catch: Rumeli Kavağı’s Fishermen
Nestled in a small cove that hides it from the nearby center of Sarıyer, not far from where the Bosphorus meets the Black Sea, Rumeli Kavağı is officially part of Istanbul yet has managed to keep the structure, atmosphere and relative isolation of a real village. The only apparent sign of the surrounding megalopolis is the sight of the massive Yavuz Selim Sultan Köprüsü, the third bridge to span the Bosphorus, opened in 2016. Over a quarter of the neighborhood’s almost 4,000 inhabitants are involved in the fishing business, an integral industry in a city that partly owes its worldwide fame to a long-standing meyhane culture. Dining on grilled fresh fish and sipping on a glass of cloudy rakı, particularly while watching the lights of the city dance on the Bosphorus, is one of Istanbul’s purest pleasures.

Hanging On to History: Edible Nostalgia in Samatya
That much of the past seems to stick to Samatya is a marvel in Istanbul, a city being rebuilt and “restored” at an alarming pace. First, there’s the question of its name. Occupying a stretch of the Marmara Sea and squeezed between the old city walls and Kumkapı, an area home to a rotating cast of eclectic restaurants, the neighborhood still goes by its Greek name (Ψαμάθια or psamathia, likely derived from the Greek word psamathos, meaning sand) even though it was rechristened as Kocamustafapaşa after the foundation of the Turkish Republic. Perhaps more importantly, it’s imbued with a certain type of nostalgia.
