Carioca summer culture is dictated by the heat. It’s courteous to ask guests if they’d like to take a quick shower upon arriving at your home (because everyone takes multiple showers a day in the summer). Beer at parties must be estupidamente gelado. Movie theaters sell out even for so-so films because the air conditioning inside is delícia. This year, the Rio city government took the bold step of legalizing the use of knee-length shorts for city employees and bus drivers during the summer. Four other critical ways that locals chill out are: sorvete (traditional ice cream), picolé (popsicles), gelato and sacolé (anything frozen in a plastic sack).

Locals are crazy for Ali Usta's çiğ köfte. Ali Usta is a delicious character who has his tiny shop in the backstreets of Istanbul's Spice Bazaar. Çiğ köfte made with bulgur, herbs and spices suits every vegetarian's palate if one can eat hot, spicy food. This huge container is empty by late afternoon. Be there on time! The small, spicy piripiri, or African bird’s eye chili, is one of Portuguese cuisine’s most unexpected ingredients, one that has travelled thousands of miles across many continents to find its place there. When the Portuguese began navigating around the globe as early as the 15th century, spices like black pepper and cinnamon became some of the most important and expensive goods on the market. Piripiri didn’t reach quite the same renown, but they have influenced many cuisines in their travels East. Initially they were taken from Brazil to Africa, where they thrived. After Vasco da Gama established the maritime route to India, the Portuguese introduced the peppers to Asia, namely India, Thailand and Malaysia.

Cervejaria Ramiro is the undisputed temple of seafood in central Lisbon. The 50-year-old business represents an old-school type of eatery: a beer hall where the seafood is fresh and cheap, with a choice from the daily menu or directly from the large aquariums that look out to the street. Taking up two floors of a late-Art Nouveau building on Avenida Almirante Reis, Cervejaria Ramiro is perpetually crowded. The clientele has not been affected by the recent urban regeneration of the area, which is turning the degraded Intendente neighbourhood, long affected by social exclusion, into a fashionable district. In fact, the restaurant was already popular in the 1970s, when eating seafood was new to the capital.

In the Laz language, “si sore” means, “where are you?” At least twice a week for past few years, our answer to that question at lunchtime would be, “We are at Pera Sisore.” This little restaurant in the Asmalımescit area became one of our go-to lunch spots by serving some of the best Black Sea food around town. But after a disagreement, the two partners of the restaurant went their separate ways and the quality at Pera Sisore, sadly, took a turn for the worse. We were feeling a bit lost for a period, not knowing where to go for a quick, honest lunch of hearty Laz fare. The Black Sea area is Turkey’s culinary misfit – it's not really about kebabs or mezes. If anything, the food there seems to have been mysteriously transplanted from the American Deep South.

Every late morning from the ground floor of a typical Lisbon building, the façade of which displays a tile-painted Madonna, a hunger-inducing scent pervades the street. Dhaka Restaurante is one of many canteens in the Mouraria neighborhood preparing its lunchtime curry. Along Rua Benformoso, among the small shops selling jewelry, trinkets and Chinese-made goods, are several restaurants that have fed the local community from the Indian subcontinent for years. Today, however, they aren’t just cooking for them. Due to a rapid process of urban transformation, mainly thanks to tourism and interested investors, more and more people from Lisbon and further afield are passing through this winding thoroughfare looking for alternative flavors.

Arataca boasts a title so extraordinary that, were it more widely known, we would expect the modest Copacabana snack bar to be covered with colorful Nossa Senhora do Bonfim blessing ribbons so that generations of pilgrims could light white, tapered candles and lay baskets of offerings at its sidewalk entrance. That designation is: First Açaí – the Amazonian superberry – served in Rio de Janeiro. Local lore says that the slushy, purple drink was first served here 59 years ago, and it was a hit. Nowadays, you’ll see cariocas all over the city with the drink’s trademark ink-stained teeth. Arataca was opened by two immigrants from the northeastern state of Pernambuco. One was in the military and, in his travels through Brazil, he developed a taste for the highly unique cuisine of the country’s north, particularly that of Pará state, considered the gateway to the Amazon region. Pará is also the cradle of the Amazonian berry açaí, which is sold in barrels at riverside marketplaces in the commercial and political capital of the state, Belém.

Portuguese regional food can be found easily in Lisbon, but at Grupo Excursionista e Recreativo Os Amigos do Minho, it is one of its raisons d’êtres. This warren of rooms that occupy a 19th-century tile-clad building not only works as a restaurant; the small cultural association has been a point of encounter for internal migrants moving from the northernmost Portuguese region of Minho since the 1950s. For all that time, this humble spot has kept the Minho culture alive in the capital, as well as renting out the space to young music promoters and cultural producers. Here you can experience rowdy parties with northern-style dances, live performances of the “concertina” (a typical accordion from the region) and, most importantly, group dinners with local, traditional food.

My wife, Kurdish in-laws and I are enjoying an early meal at Gabo, one of Diyarbakır’s most successful new restaurants. It gets dark early this time of year in the city, and the dry air carries the ayaz chill, which engenders a need for a hearty soup and hot tea. The owner, Cahit Şahin, shares stories of the place’s beginnings. “When we applied for a restaurant license, City Hall just laughed,” he tells us. “‘For a vegetarian place?’ they said, ‘In Diyarbakır? Go ahead! It doesn’t matter if we grant you one or not. You’ll go under in three months!’” But that was nine months ago. Gabo, which bills itself as the predominantly Kurdish southeast region’s only vegetarian restaurant, is thriving. In fact, they are doing so well that Şahin and his fellow owners are planning to open franchises in the western Turkish city of Tekirdağ and in Istanbul. As Şahin talks, he gestures at the bustling café around him. “We used to work as tutors for students preparing for their standardized exams. We were just sick of the rat race, of always being tired and worn out. I envisioned a cozy alternative joint where I could drink tea, listen to jazz and play backgammon with my friends.” He laughs. “We haven’t touched a backgammon board since we opened the doors!”

In the great multicultural Anatolian kitchen, questions about the ethnic or national origins of foods are often cause for forks and knives to fly. A porridge called keşkek is a hot-button diplomatic issue between Turkey and Armenia, and we won’t even get started on the ongoing baklava debate. So what to make of this cuisine that draws influences from every corner of the former Ottoman lands, a territory stretching from the Balkans to North Africa? The answer might be in a simple term that’s becoming popular among Turkey’s minorities. The word Türkiyeli means “of Turkey” and differs significantly (and quite intentionally) from the word Türk, which often adds ethno-religious shades to nationality.

For years, expats in Shanghai complained about the lack of quality desserts in the city. Perhaps they just meant familiar desserts, as locals were more than happy to point them to delicious egg tarts, mooncakes or Taiwanese iced treats. But alas, when it came to sweets, there seemed to be a Great Wall-sized divide between East and West. In an effort to bring together sweet tooths from both sides of the dessert dividing line, in 2010 Lexie Comstock started Strictly Cookies, an American-style cookie delivery company in Shanghai that she hoped would delight expats and win over locals along the way. Having first visited China in 2000 while in middle school, Comstock later plunged into studying Mandarin and majoring in East Asian Studies at Harvard.

The Yenibosna bus station sits at the intersection of numerous transit routes, where passengers can embark on journeys to the furthest corners of the city as well as to its beating heart. Close to Istanbul’s main airport, and wedged in beneath several high-rise towers that seem to have ascended from the ground overnight, the bus station sits adjacent to a major metro line and below the main E-5 highway, with the grubby, crowded neighborhood of Yenibosna to the north.

During our previous trips to Istanbul’s “Little Gaziantep” – where we enjoyed the special techniques of Turkey’s culinary nerve center at the excellent Hizmet Kardeşler – we were tempted by what lay across the street. It was an alluring sight scarcely seen in Istanbul: the simple yet scrumptious nohut dürüm. The wrap of chickpeas, parsley and spices nestled within a formidable section of tırnaklı ekmek flatbread is the specialty at Hamo’nun Yeri (Hamo’s Place). Run by a family with roots in the Gaziantep district of Nizip, the restaurant’s name comes from the family patriarch.
