The traditional way of preparing coffee in Italy is using a manual lever coffee machine, which allows for precise control over the temperature and pressure of the water, resulting in a rich and flavorful cup of coffee. But there’s more to it than just technique. In some cafés in Sicily, coffee is not simply a craft but a cultural artifact, creating it considered a work of art. Though Palermo has its fair share of coffee, it’s not always easy to find cafés where these traditions are honored with care and diligence. The Bar del Corso is one such hidden gem in the heart of Palermo. Located on the bustling Via Vittorio Emmanuel – the oldest street in Palermo, where every vendor vies for attention – its modest storefront does not catch the eye at first glance.

The last 12 months have been quite a ride. Unlike the past two years, 2022 seemed to pass in the blink of an eye. While 2020 was a year for protecting ourselves from a microscopic menace, and 2021 a year in which we still were struggling to reconcile our old ways and the world’s “new normal,” this year has been a time to reap all the improvements and reflections we did during some of the 21st century’s most challenging years so far. In the end, some values have played a key role for facing this brave new world: strength and resilience to keep moving forward, excitement and optimism for what it is to come, and gratitude for being able to enjoy life as it is.

Typically eaten at Christmastime in Spain, turrón (a type of nougat) originated centuries ago. Some historians believe it was a sweet paste with nuts eaten by athletes in ancient Rome, while others trace its origins to a more elaborate medieval Arab delicacy that combined various toasted nuts with spices and honey. First documented in Spanish by an Arab physician writing in 11th- century Andalusia, “turun” may have been introduced to the Iberian Peninsula by Arabs or Jews from North Africa during the period of al-Andalus. Either way, by the 16th century, the Spanish aristocracy was crazy about turrón, and its popularity eventually spread to all social classes and to other parts of Europe. Over time, this sweet with ancient culinary roots was further refined, becoming Spain’s most popular Christmas treat.

After a morning spent walking around the Fontanelle Cemetery, the oldest ossuary in Naples, and the Sanità market, we believe that we have created enough of a calorie deficit to face a fried pizza – the original pizza, born before the more familiar oven-baked variety, and a universally beloved dish in the Neapolitan cuisine – with self-acquittal. And in the Sanità neighborhood, there’s no question that we’ll be seeking out the fried pizza of Isabella De Cham. The 26-year-old makes creative and high-quality fried foods in an elegant and polished restaurant, with a black-and-white color scheme – not quite what you’d expect for a fried pizza joint, although the familiar warmth is still there.

Please pardon the profanity necessary in rendering a faithful translation: “Shit, Log, Christmas Log/Don’t shit herrings/Which are salty/Shit nougats/Which are better.” You might also hear Caga Tió/Avellanas i mató/Si no cagas be,/Et dare un cop de bastó. “Shit, Log/Hazelnuts and mató [curd cheese]/If you don’t shit well/I’ll hit you with a stick.”

Whether it’s Hacı Beşir Usta’s çiğ köfte from Istanbul’s Kadınlar Pazarı, a perfectly steamed Oaxacan tamale by Tia Tila or the Pang family’s late-night dumplings in Shanghai, street food and the folks who make it are the heart and soul of Culinary Backstreets. Yes, we love street food. It’s tasty. It’s fast. It’s cheap. But the carts, trucks and stands serving up our favorite snacks are also an integral part of the communities they operate in. There are the beloved vendors who have been local fixtures for decades and the hardworking entrepreneurs trying to get their start. Whatever their story, these street vendors are hardworking people worth celebrating. On this International Street Vendor Day, we’ve gathered together some of our favorite street vendor stories from over a decade of fanatic street eating.

There was a large table made from a huge buzzsaw blade, covered in Russian and Western photo magazines. A greasy boombox played jazz, blues and classic rock cassettes. Behind the high wooden counter was a somber, dark-haired young woman who served semi-cold Argo beer for 3 lari a bottle and a simple lunch for a few lari more. We had found our watering hole. Apollo had been designed by local artist Guga Kotetishvili, a name we wouldn’t know until 2004, when he helped two young Apollo regulars auspiciously launch an entrepreneurial gastro-dominion with the opening of Cafe Kala on Erekle II Street, a narrow, 100-meter lane in Old Town. Back then, there was nothing else on the street.

Although the Gothic neighborhood in Barcelona’s Ciutat Vella (“Old City”) district is supported by deep foundations – it’s the site of the former Roman village of Barcino – much of the quarter’s more recent history has been swept away by the rise of tourism. The few remaining old shops and businesses are often in a precarious position, exposed to the changing times, and yet they continue to stand strong. One such spot is Bodega La Palma, which dates back to at least 1909. Back then it was a shop that sold a little bit of everything as well as bulk wine; now it’s a tapas bar, one that serves as a multigenerational meeting point for locals and visitors (when they’re around).

Spain, Italy, Greece, Turkey, Portugal, Morocco, Tunisia – one thing that unites this swathe of the Mediterranean is olive oil, whose use in the Fertile Crescent can be traced back to 6000 B.C.E. Olives arrived in the southern part of the Iberian Peninsula around 9th century B.C.E. with the Phoenicians. Ancient Rome saw huge quantities of olive oil from Hispania Baetica (currently Andalucía) being transported throughout the Roman Empire in millions of amphorae (made in Baetica). Spain leads production of olive oil to this day, with 45 percent of the global total. The majority (65 percent) of Spanish olive oil production is sold to Italy, where this oil is mixed with others (normally of the same quality, but not always) and sold under an Italian label.

As anyone familiar with Greek folk religious traditions and habits can tell you, communication between Greeks and their saints has traditionally been quite direct – saints are addressed with respect, of course, but also in a friendly and familiar manner. I myself have witnessed several people – almost always of the older generations – have a proper “conversation” (more like a monologue) with the saint of their choice. Each saint has a particular day on which they’re celebrated; in some places, large festivals are thrown in their patron saint’s honor, with people of all ages dancing and drinking wine until the early morning hours. Throughout the year, it’s common for Greeks to make special “deals” with their saints.

Rione Luzzatti is an ugly neighborhood. That’s not particularly surprising to anyone who has read My Brilliant Friend, the first of Elena Ferrante’s Neapolitan novels (or watched the television adaptation) – the two main characters, friends Lila and Elena, grew up in this neglected and working-class area. Built following a simple design after the Second World War and comprising anonymous white buildings, Luzzatti today is defined by decaying structures and poorly kept public spaces. Yet when I first crossed it with my Vespa (well before Ferrante’s novels put it on the radar), I felt that it was a real place, a neighborhood of busy people, of workers. In short, I liked it, even if it was ugly!

When Michelangelo made his Moses statue at the beginning of the 16th century, he found it so lifelike that some say he asked the statue, “Why don’t you speak?” Michelangelo’s Moses, which is now housed in a church in Rome, never said a word. But centuries later, in 2009 to be exact, a customer entered Lello Massa’s deli in Naples and, after biting into a ball of Lello’s mozzarella, exclaimed, “This mozzarella speaks.” “I didn’t think for a moment. I took a large sheet of paper and a red marker and wrote: my mozzarella speaks,” says 46-year-old Lello. And from that day on, this served as the new name of his rosticceria.

Slices of strawberries bordered by pillowy puffs of pistachio cream. The fluted caramelized crust of custard-y canelés. Tidy layers of dark chocolate ganache, coffee buttercream and almond biscuits in an opera cake. The term “culinary arts” is at its most appropriate when considering the work of a pastry chef. Especially when the pâtisserie is hidden in the back of an art gallery. Parenthèse Enchantée is the second act for Nathalie Gnaegy. “Cooking was my weekend pastime,” she explains. Nourished by sharing food with her family and coworkers, she “progressively veered towards baked goods, more welcome at the office than a half-eaten whole tuna,” she winks. Her appreciative officemates insisted she should “bake professionally.”

The Neapolitan stairs are ancient urban routes that connect the upper city (the Vomero district) to the lower city (the historic center). The most famous of these stairs is the Pedamentina di San Martino, a staircase of 414 steps dating back to the 14th century, which starts from the old center and reaches the Castel Sant’Elmo, on the Vomero hill. Along the way there are beautiful panoramic views of Naples. One reason to walk these Neapolitan stairs (besides the views) is to look for Totò Eduardo E Pasta E Fagioli, an old tavern with an amazing terrace overlooking historic Naples. The name is dedicated to two great masters of Neapolitan theater and cinema: Totò (Antonio de Curtis) and Eduardo de Filippo.

Some people might tell you that the patron saint of Naples is San Gennaro, a 3rd-century bishop who died as a martyr. But that’s not actually true. The patron saint of Naples is, in fact, Diego Maradona, the Argentinian-born soccer player who, in 1987, propelled Napoli to win the Serie A Championship (Italy’s top football league) – it was the first team ever from the impoverished Italian south to do so. To this day, Maradona’s portrait is everywhere in the city. Just like any good patron saint, his picture watches over shopkeepers, restaurant owners and families in their living room. So when someone on the street called Francesco Sepe the “Maradona of wine,” you can imagine how proud he felt.
