Growing up in Oaxaca, la gelatina rosita (“pinkish jelly”) was a biweekly ritual – every other Saturday, our mother would return from the market with this special dessert. It was so ingrained in our routine that we couldn’t imagine life without it. In fact, on a family trip to Mexico City, we were shocked to learn that gelatina rosita wasn’t readily available. Did they know what they were missing? It was only when we were older did we learn the proper name of this precious Oaxacan specialty: nicuatole. Some say its etymology can be traced back to Nahuatl (one of the many Indigenous languages spoken in ancient Mexico), specifically the words necuatl (“agave honey”) and atolli (“liquid corn”). While this may be true, it doesn’t quite portray what nicuatole is, not really.

After a morning spent walking around the Fontanelle Cemetery, the oldest ossuary in Naples, and the Sanità market, we believe that we have created enough of a calorie deficit to face a fried pizza – the original pizza, born before the more familiar oven-baked variety, and a universally beloved dish in the Neapolitan cuisine – with self-acquittal. And in the Sanità neighborhood, there’s no question that we’ll be seeking out the fried pizza of Isabella De Cham. The 26-year-old makes creative and high-quality fried foods in an elegant and polished restaurant, with a black-and-white color scheme – not quite what you’d expect for a fried pizza joint, although the familiar warmth is still there.

“Caliente!” Juan calls out, and we all duck to avoid the steaming hot pan as it floats across the kitchen. He holds one side with a folded up towel, the other with a pair of pliers. Kitchen might be a bit of a misnomer. The small stall sits on the sidewalk, with a temporary tin roof overhead and brand new white tarps tied tightly to the back to protect against Mexico City’s afternoon thunderstorms. Each day for the three weeks leading up to Día de los Muertos, the Day of the Dead holiday, Tito Garcia, the stand’s owner, and the rest of the crew, will make hundreds of pan de muerto sweet rolls, as part of the Jamaica Market’s holiday romería.

After 12 years of living in Shanghai, we thought we had eaten our way through every nook and cranny in this city, but China has a delightful way of always surprising you. A friend tipped us about a great little Taiwanese joint less than a kilometer from our office, and since Taiwanese food is woefully underrepresented in Shanghai, we immediately planned a lunch outing to test its beef noodle soup and braised pork rice. When we pulled up outside a three-story Spanish villa complete with Juliet balconies and a rosy pink paint job, we were surprised to find a familiar sight. The distinctive building sits directly across the street from a yoga studio we had gone to for four years. We’d never even considered that it could be a restaurant – there’s no sign or indication that delicious dishes lay just beyond the front door.

At any time of day you’ll see crowds of people at the ancient, welcoming restaurant. At lunchtime, many regulars come daily not for the pizza, but for Maria’s home cooked dishes. “Here we serve traditional Neapolitan dishes,” says the 74-year-old. “Pasta and potatoes, pasta and beans, pasta sorrentine style or bolognese. The menu changes every day, and the bread is made every morning, here, directly in the pizza oven … with my hands.” There’s something about the pizzeria that transmits a sense of history, particularly its inner room, the walls of which are covered in declarations of love for the restaurant and drawings made on paper napkins by loyal customers over the decades. “It is as if customers wanted to leave something of themselves,” Attilio tells us proudly. “They wanted to return some of the goodness they just tasted with something that would last.”

Being a street butcher in Naples is not for the faint of heart. “Rain, sun, wind, heat, cold… being on the street seven days a week means knowing how to face every type of weather,” says Gaetano Iavarone. He is part of the invincible team behind Macelleria Iavarone, a butcher shop in Naples’ Sant’Antonio Market run by Domenico (Mimmo) and his three sons, Gaetano, Lorenzo and Davide. The so-called “street butcher shop” has a huge display of meat outside with only a small cash register inside. Also inside is a larger photo of Gaetano the elder, Domenico’s father, who opened the butcher shop 60 years ago. Domenico took over the reins 30 years ago and now runs it with his close-knit team of sons.

It’s 5:20 in the morning and while most lisboetas are still sleeping, Lurdes and Ermelinda Neves are already arriving at the Mercado da Ribeira in the Cais do Sodré neighborhood. Cooks and chefs from Lisbon’s restaurants start showing up at this central market at 6 a.m., and these two seafood sellers need to prep their stall for the day. On this April day, there are clams, both from Setúbal and the prized ones from Ria Formosa, in the Algarve; sea snails; the beloved percebes (gooseneck barnacles); mussels and canilhas (a kind of small and spiky whelk) from Peniche; and cockles and shrimp of different origins – although the best seafood usually comes from the southern shore, the western coastline also yields some excellent specimens.

Rua Catalana is a very ancient road, a corner of Naples where time seems to stand still. Located next to the financial district and now squeezed by 19th-century buildings, it is curiously the only road in the city that, instead of the Italian “Via,” uses “Rua,” a distortion of the French “Rue.” In the mid-14th century, Queen Joanna I of Naples welcomed merchants from all over Europe to the city as part of her efforts to promote trade. She donated this area to the Catalans, and tinsmiths and junk dealers settled here. Even though 700 years have passed, a smattering of small copper and tin artisans continue to practice their craft on this street, now making artistic copper and tin objects for the increasing number of tourists roaming the city.

She came to Kakheti from Tbilisi in 2005 and couldn’t drag herself away. The Alazani River Valley stretches long and wide to the feet of the Caucasus, the tallest mountains in Europe, which jut skyward like some citadel for the mountain gods. The expanse inspires reverence and awe. Kakheti intoxicates. “I want to live here,” Sopo Gorgadze told herself. She spent nearly every weekend and holiday in the region. One evening in Tbilisi, Sopo, a stage painter, met a tall, captivating architect at a friend’s dinner party. It wasn’t long after their first date in Kakheti that the couple left the capital behind and established themselves in the Kakhetian village of Shalauri.

Most European capital cities have a Chinatown, and Lisbon is no different. In the 1980s many immigrants from the Zhejiang province, on China’s eastern coast, made downtown Mouraria their home; the wave of newcomers remained steady and eventually peaked in the 2000s. As the first generation grows up, their family businesses are leaving indelible marks on the wider city, joined now by entrepreneurs from Macau – Portugal’s last colony – and those benefiting from the country’s Golden Visa scheme, which allows people who invest a certain amount or buy property in Portugal to move here. This means a boom in Chinese food right in the heart of the city.

It’s the end of an era for Tokyo’s Tsukiji Market. Saturday, October 6, will be the last day of operation for the world’s largest fish market, after which it will relocate two kilometers east to a new site on the manmade island of Toyosu. The move has been in the works for years (it was first announced way back in 2001), but with 2020 Olympic deadlines looming (the vacant site was a promised piece of infrastructure in the capital city’s bid to host), “Tokyo’s Kitchen” will be closing an 83-year chapter. As Tsukiji’s main wholesale marketplace is one of Tokyo’s few extant pre-World War II structures, darn near anyone you ask is sad to see it go. Tsukiji has a sense of place stronger than anywhere else in Tokyo, but ironically, the inner market has accumulated all of its site-specific charm in direct proportion to its decay.

“Now we finally have light!” a vendor excitedly tells a customer, one of many similar exclamations we overhear while wandering around the new temporary digs of the Mercat de L’Abaceria Central. Formerly housed in a historic building on Travessera de Gràcia in the Gràcia neighborhood, the market and its 56 food vendors, 43 food stalls, 13 clothing and kitchenware merchants and two cafeterias recently shifted to a nearby location as renovation work begins on the original structure.

“I still don’t know where the siphon bottles for the vermut are,” says an employee of Marina, a small bar in the newly renovated Mercat de Sant Antoni. It’s clear as we’re walking around that the staff of the market’s few bars and its many vendors are still settling in and adapting to their brand new spots. At the same time, hundreds of visitors have been exploring the revamped market each day since its opening last week asking, “Where can we eat or drink something?” So far, that seems to be the question on everyone’s mind, particularly locals. But this is not another food hall, this is a proper neighborhood market focused on selling quality fresh produce and other food product

FICO Eataly World has been described in a number of ways – agricultural park, glorified supermarket, mall, bazaar, and production center have all been tossed around – but it was the moniker “the Disney World of food” that grabbed our imagination, conjuring up fanciful images of a log flume powered by wine instead of water and Mickey Mouse transformed into a giant ball of mozzarella. The reality isn’t quite as whimsical (although the venue does have an animated fig mascot, a plump green character whose rotund belly recalls the Kool Aid Man). The self-described “agri-food park,” which occupies a former wholesale market on the outskirts of Bologna, is like Eataly, the Italian food hall and market “concept” that has seen success across the world, but also not.

“It’s good for tourists, not for us.” While this can sadly be said about many things, Anabela, the woman we are speaking to, is referring to the transformation of Mercado da Ribeira, Lisbon’s historic public market, where she co-runs a small grocery store. Originally built as a predominantly wholesale food, fish and flower market in 1771, Ribeira today shares its space with Mercado Time Out, financed by the venture capital firm that controls the publishing franchise in Portugal, which has occupied the central section of the market since 2014. Time Out’s concept: an “editorially” curated gourmet food hall. Selling the best of Portugal – from croquettes and custard tarts to seafood and steak – it is now a top attraction, with 24 restaurants, eight bars, a dozen shops and a high-end music venue.
