By area, Algeria is the largest country in Africa; by population, the tenth-largest. But in New York, Algerian cuisine has secured only a tiny foothold. We've sought out garantita, a savory chickpea pudding, in Astoria, and traveled for excellent date-filled maamoul in Bath Beach, deep in southern Brooklyn. But otherwise, finding Algerian grub in the city has been a challenge. Recently, while strolling through Sunnyside, we spotted the green, white and red colors of the Algerian flag on a mural outside a public school. In New York, murals like these are a common way to illustrate the diversity of a student population. At this school, the national colors of about three dozen countries were on display, each of them charmingly painted by hand.

Almost before we’d sat down, tea and rice pudding had arrived at our table. “This is the way I was raised,” Sami Zaman explained. We’d arranged a time to speak with him at his namesake Afghan restaurant in Astoria, Sami’s Kabab House, and we’d quickly discovered that refreshments were an essential prelude to our conversation. Sami is always “working, working, working,” he tells us, but during our visit he also had a smile and a greeting for everyone who stepped into his kabab house. Between spoonfuls of pudding, we asked about the roots of his hospitality.

From the leaf-thin fried liver of Edirne to mumbar, the spicy rice-stuffed intestines of eastern Turkey, Turkish cuisine is rich with organ meat delicacies. Sakatat, as offal is called in Turkish, is approached with a fair bit of reverence (and sometimes caution). But even the most die-hard işkembe (tripe soup) lover might shy away from şırdan, a uniquely Adana specialty. In appearance, this dish is more than a little… well, phallic. Made of the abomasum, the section of the sheep’s stomach responsible for producing rennet, this organ meat is cleaned (thoroughly!) and stuffed with rice and spices before being slow cooked in a rich red broth.

The clock strikes 11:55 a.m., and the tables at Adega Solar Minhoto are already filling up with hungry customers. Many are regulars who come daily – they know that this traditional restaurant in the Alvalade neighborhood doesn’t accept bookings and is packed by midday, requiring a bit of a sprint if you don’t want to wait in line. Most workers in Lisbon take their midday meal after 1 p.m., so this is certainly an early lunch. But Adega Solar Minhoto’s fresh and delicious traditional fare, generous portions, friendly service and great value are worth rearranging your schedule for.

A bit like 2018, we saw a lot of old and traditional places closing in 2019, with many others threatened with closure – like Casa Cid, a tasca that has been operating since 1913. An investment group bought the building where the tasca is located and will turn it into a luxury hotel, forcing the tasca out in February; in response, the family behind Casa Cid launched a petition that calls for “more pork crackling less phony gourmet stuff.” Dozens of new places have opened in Lisbon, and while many are not successful, there are some that sparked our interest. We ate at amazing social projects like É Um Restaurante and modern tascas.

Location, location, location is a familiar mantra of New York real estate; invariably it comes to bear on restaurants and other food businesses, too. When e-commerce giant Amazon decided not to build a second headquarters in Long Island City, many food vendors were disappointed, sometimes bitterly, at the loss of a possible 25,000 new customers. With an eye on the lunchtime rush just across the Hudson River, in Manhattan, they wondered, why not in Queens? By contrast, continual development in Flushing, albeit on a much smaller scale, continues to displace many small businesses. The food stalls in the lower level of the celebrated Golden Mall shuttered in late summer for a renovation that was planned to last several months; it seems nowhere near completion.

In the late 19th and early 20th centuries, Italians – particularly southern Italians – immigrated to the United States in droves. Seeking their fortune in a distant land, they boarded ships with cardboard suitcases containing only a few clothes. But there was no shortage of good food in those suitcases: bread, cheese and even soppressata, cured pork salami made with the best pieces of the pig (and thus low in fat content), a perennial favorite in southern Italy. Alas, once they arrived on American soil after the long journey, their soppressate were seized because of a law prohibiting the import of cured meat, among other meat products (a ban that still exists today).

“Caliente!” Juan calls out, and we all duck to avoid the steaming hot pan as it floats across the kitchen. He holds one side with a folded up towel, the other with a pair of pliers. Kitchen might be a bit of a misnomer. The small stall sits on the sidewalk, with a temporary tin roof overhead and brand new white tarps tied tightly to the back to protect against Mexico City’s afternoon thunderstorms. Each day for the three weeks leading up to Día de los Muertos, the Day of the Dead holiday, Tito Garcia, the stand’s owner, and the rest of the crew, will make hundreds of pan de muerto sweet rolls, as part of the Jamaica Market’s holiday romería.

Amyndeo, a mountainous region in northwestern Greece, is a prime spot for producing wine – in fact, it’s one of the most important wine regions in the country. Located between two peaks, Vermio and Voras, this area is known for cold winters with enough rainfall and snow for the vines to withstand the relatively dry summers (usually sans-irrigation). Four surrounding lakes, the largest being Vegoritis, contribute to the mild semi-continental climate. In fact, this entire area used to be a lake thousands of years ago, which has resulted in a sandy top layer of soil and limestone subsoil, an auspicious combination that ensures the ideal drainage of rain water and delivers natural nutrients and elements to the vine roots.

The oldest city in Western Europe, once the hub of a trading empire that connected Macau in the east to Rio de Janeiro in the west, Lisbon today feels staunchly Old World European, a sleepy town of nostalgic storefronts and scenic churches. But that’s only its façade.

The classic neighborhood bodega in Barcelona is a place where customers feel at home. At Bodega Pàdua, an old bodega turned bar-restaurant in the El Farró neighborhood, part of the Sarriá-Sant Gervasi district, this quintessential spirit – usually invisible to the eye – is, somewhat surprisingly, physically manifested on the walls. The long space, which extends to a patio in the back, is decorated with mementos from the community: old photos, antique objects such as radios, cameras, and typewriters, a claviharp, written tributes to local musicians and house pets (including the bodega’s beloved parrot Ricky, who is now in a “better life” but used to say hello to the clients), and even pieces of the old iconic SEAT 600 car, which still has lots of fans in Spain.

During a busy evening on Main Street in Flushing, the sight of a food cart grilling skewers of meat doesn’t seem out of the ordinary on a thoroughfare filled with street vendors. After hanging around long enough, though, it becomes clear that this cart is different from similar ones up the block. The most obvious difference is its operator, Ekrem, a young man from western China’s Xinjiang region who shows an intense care for each and every skewer of his Uyghur-style barbecue. As he effortlessly and gracefully flicks the perfect amount of his secret spice blend on each bit of meat (all of which are quality cuts), he tells us that nothing in them is artificial, gesturing up the street to indicate that the others in the area do not have the same exacting standards.

Dust, sweat, rain, and severe sun – these were only a few of the many discomforts that travelers of yore suffered as they made the long journey in horse-drawn carriages from their home provinces to Barcelona. In those days – around a century or two ago – the city was protected by fortified walls; it was outside of those walls, in an area known as Hostafrancs, part of the Santa Maria de Sants village (today the neighborhood of Sants), that many travelers and merchants found a convenient refuge – a place to recover from the journey. Taverna La Parra was one of the several inns that dotted the area.

A neighborhood on the southeast side of Filopappou Hill, between Acropolis, Petralona, Kallithea and Neos Kosmos, Koukaki was named after one of its first residents, Georgios Koukakis, who in the early 20th century opened a successful factory there manufacturing iron beds. Gradually the area developed into a charming middle-class neighborhood, full of life and – up until the 1980s – a place Athenians charmingly referred to as “Little Paris,” in large part because of its bohemian vibe. The lower side of Koukaki has long been a students’ area due to the nearby Panteion University. Rents used to be relatively low, but after the opening of the new Acropolis Museum in 2009, the surrounding area has been booming, growing into an Airbnb goldmine and turning many locals against the trend.

The consumption of sake is a sacrosanct affair in Japan. In Japanese, the term “sake” technically denotes all alcohol, though it is often used interchangeably with the less ambiguous “nihonshu.” The true genesis of the island nation’s archetypal brew is lost to time, though the divine concoction of water, rice, yeast and koji mold likely originated, or at least became more standardized, sometime during the Nara period (710-784 AD) when Empress Genmei consolidated rule over an agrarian society. Most people in this fledgling nation state participated in animistic and ancestral folk worship, within which rice, and by extension nihonshu, came to play important ritualistic roles.
