Thessaloniki, the capital of Greek Macedonia and the country’s second largest metropolis after Athens, 500 km to the south, is a youth-loving, vibrant city that never sleeps – and always eats. Most locals here are friendly, laid-back, natural-born foodies who love going out and enjoying good wine and tsipouro. It’s a city with a very long history of culinary hospitality. Founded by King Cassandros in 315 BC and named after Thessalonike, his wife – half-sister of Alexander The Great – it’s referred to by Greeks as symprotevousa, “co-capital,” because of its historical status as a co-reigning city of the Byzantine Empire, along with Constantinople. In 1492 the city welcomed a large number of Jews expelled from the Iberian Peninsula.

Pickles are serious business in this shop, which has been passed down from generation to generation. An unusual, surprisingly delicious selection of pickled fruits and veggies are often encountered on our Istanbul walks.

Rego Park and Forest Hills are home to much of Queens’ Central Asian Jewish diaspora. The neighborhoods comprise two main thoroughfares, 63rd Avenue (which changes to 63rd Street) and 108th Street. Both roads have a range of markets, restaurants and bakeries catering to local tastes. Here are a few notable addresses. Queens Gourmet Bazaar Food Brothers Yusuf and Juda Saz run this long, narrow market that is filled with Persian staples. Mini barrels of nuts, seeds, dried fruits, several Samarkand raisin varieties as well as fruit molasses, barberries, and other provisions in cans and glass jars cover the floor and walls. The brothers make some of the ready-made food in-house.

Locals are crazy for Ali Usta's çiğ köfte. Ali Usta is a delicious character who has his tiny shop in the backstreets of Istanbul's Spice Bazaar. Çiğ köfte made with bulgur, herbs and spices suits every vegetarian's palate if one can eat hot, spicy food. This huge container is empty by late afternoon. Be there on time! For those interested in visiting Tashkent or Samarkand, an easier trip might involve heading to the Rego Park and Forest Hills neighborhoods of Queens, home to much of the borough’s Central Asian Jewish diaspora. The neighborhoods comprise two main thoroughfares: 63rd Avenue, which changes to 63rd Street, and 108th Street. Both roads have a range of markets, restaurants and bakeries that serve local tastes and evoke places left behind. On one recent afternoon, I walked west on 63rd Avenue, away from Queens Boulevard, passing Public School 139 Rego Park, where parents and grandparents spoke Tajik, Mandarin, Arabic, Uzbek and Russian, crowding the street as they await their children’s dismissal from school.

In 1654, Dutch refugees, including 23 Jews, traveling on a French ship from Brazil, arrived in North America. The refugees set foot in Peter Stuyvesant’s New Amsterdam village, now called New York. Stuyvesant did not want to accept Jews, so he imposed trade, property and tax restrictions to stifle their advancement. Most of the Jewish community consequently returned to Amsterdam or left for the Caribbean, where they could live under more hospitable conditions with relatives. When Stuyvesant ultimately ceded control of New Amsterdam to the English, the small Jewish community that had remained swore allegiance to its new rulers and began to grow.

The working-class area of Brahami has never been Athens’ hottest gastronomic destination. It is a mostly residential neighborhood, halfway between the city center and the exotic beach-loving southern suburbs. Like most of the city’s suburbs, in the not-so-distant past, this area was once made up mostly of fields. Now formally named Agios Dimitrios (St. Dimitrios, after St. Dimitrios’s church), it has a vibrant local market. It’s also home to Remoutsiko, a family-owned, family-friendly taverna focusing on meat. Housed in an old converted barn, the restaurant has been around for some 30-plus years.

In the Laz language, “si sore” means, “where are you?” At least twice a week for past few years, our answer to that question at lunchtime would be, “We are at Pera Sisore.” This little restaurant in the Asmalımescit area became one of our go-to lunch spots by serving some of the best Black Sea food around town. But after a disagreement, the two partners of the restaurant went their separate ways and the quality at Pera Sisore, sadly, took a turn for the worse. We were feeling a bit lost for a period, not knowing where to go for a quick, honest lunch of hearty Laz fare. The Black Sea area is Turkey’s culinary misfit – it's not really about kebabs or mezes. If anything, the food there seems to have been mysteriously transplanted from the American Deep South.

In the Istanbul neighborhood of Kurtuluş, home to a large Armenian population, a number of shops are decorated on account of Easter, and the smell of traditional sakızlı Paskalya çöreği--puffy loaves of ever-so-slightly sweet bread baked with mastic gum--is thick in the air.

In order to fully appreciate Tokyo and its deep food scene it’s necessary to not only peek behind the curtain of yesterday, but also join the constant flow of people eating their way through the city of today and even tomorrow. Our Tokyo walk will allow us to do just that, taking us on a journey that serves as an edible survey of the city’s culinary past, present and future.

From downtown Athens, one’s eyes rest on the timeless vision of the Acropolis up on the hill, looming grandly above this ancient Greek city. You get to Bar do Alto by taking a zippy mototaxi up the snaking streets of the Babilônia favela and then walking 10 minutes up jagged staircases that eventually bear right. On the route, you’ll pass by slices of life that make favelas a museum of Rio, where the city’s symbols and icons are on display in the bare and human way that’s made possible by close quarters of self-made dwellings. There are the evangelicals raising their voices in weeknight prayers. Shirtless men with leathered skin that speaks to long day jobs, now tipping back tall evening bottles of beer. Children playing soccer as overheated cops in bulletproof vests slump on nearby benches.

This small, charming <em>mezedopoleio</em> gets its name, which translates to “Captain Michael,” from Nikos Kazantzakis’s eponymous novel. The tribute to Kazantzakis makes sense: The eminent writer and philosopher was a native of Crete, as is the family that opened this eatery some 50 years ago. <!--more--> In the 1960s, Kapetan Mixalis was more café than mezedopoleio (the Greek equivalent of a tapas bar), offering coffee, backgammon (<em>tavli</em> in Greek), card games, live music by locals, philosophical discussions and a friendly atmosphere from morning till night. It became a meeting point for Athenian intellectuals, actors and musicians. Famous personalities sat for hours at the sidewalk tables, quaffing wine and a traditional Cretan drink called <em>tsikoudia</em> (a grape-based brandy) and eating cold cuts, spoon sweets and other simple preparations that didn’t require cooking.

Editor’s note: As the year comes to a close, we honor some of the people who are keeping up traditions on the Japanese food scene. And we remember the foods we’ve dreamt about eating again and again from each of them. Nodaiwa This 200-year-old restaurant, one of Tokyo’s best sources of wild-caught unagi (freshwater eel), is housed in a building brought from Hida-Takayama in Gifu prefecture, which is famous for gassho-zukuri farmhouse architecture, with its massive dark wooden beams and thatched roofs. The structure was dismantled and then hauled down to Tokyo piece by piece and reassembled in the modern building where Nodaiwa offers a small glimpse of traditional taste and skill, with vintage touches throughout. Fifth-generation chef Kanejiro Kanemoto keeps the tradition alive and deserves his Michelin star. His passion for offering only the best eels available is evident in everything he serves.

In the great multicultural Anatolian kitchen, questions about the ethnic or national origins of foods are often cause for forks and knives to fly. A porridge called keşkek is a hot-button diplomatic issue between Turkey and Armenia, and we won’t even get started on the ongoing baklava debate. So what to make of this cuisine that draws influences from every corner of the former Ottoman lands, a territory stretching from the Balkans to North Africa? The answer might be in a simple term that’s becoming popular among Turkey’s minorities. The word Türkiyeli means “of Turkey” and differs significantly (and quite intentionally) from the word Türk, which often adds ethno-religious shades to nationality.
