“I still don’t know where the siphon bottles for the vermut are,” says an employee of Marina, a small bar in the newly renovated Mercat de Sant Antoni. It’s clear as we’re walking around that the staff of the market’s few bars and its many vendors are still settling in and adapting to their brand new spots. At the same time, hundreds of visitors have been exploring the revamped market each day since its opening last week asking, “Where can we eat or drink something?” So far, that seems to be the question on everyone’s mind, particularly locals. But this is not another food hall, this is a proper neighborhood market focused on selling quality fresh produce and other food product

Stumbling upon a haggis toastie store in the middle of Tokyo sounds like a half-remembered dream where nothing quite makes sense. It was the minimalist black store front with white type that had initially drawn us to it. It looked like a store straight out of London, and certainly not like a café that one would expect to find next to Japan’s Olympic stadium. Its menu dripped with promise: toasties (toasted sandwiches) stuffed with glorious cheese. And real bread, granary bread, something we’d never spied before in Japan. Loaves of it were stacked in rows above the counter, and a griddle sat to one side, where butter-slathered slices, jammed packed with fillings, were being flattened into crispy parcels.

When chef Alexis Peñalver was looking for a location to open La Pubilla, he found this gem adjacent to the Mercat de la Llibertat in Gràcia and decided to keep the name of the original establishment. Pubilla is a bygone word in Catalan for the eldest daughter destined to receive the family inheritance in the event that there were no male heirs. Nowadays a pubilla (the prettiest girl in town) is named reina de la fiesta at many festivals in Catalonia.

Each Mexico City market is a universe unto itself – a bustling hub of neighborhood activity and a feast for the senses that borders on the overwhelming. From food stalls serving up just about any dish from around the Republic to entire city blocks of plants and cut flowers to fresh produce and meat, the many local markets are a can’t-miss stop on every visit to the Mexican capital. Each one has its own specialties, its own rhythm and its own tricks of the trade. Our local guides have broken down a few of their favorite markets and here we dive into what makes each one unique. A mecca for the capital’s culinary explorers, San Juan Pugibet is likely the only market on the planet where you can pick up tofu (at Productos Orientales), ostrich meat (at Los Coyotes), and chicatana salsa (at Productos Oaxaqueños, made from Oaxacan flying ants!) on any given day.

One of the staples of Mexican cuisine (and of bar menus everywhere), the quesadilla can be found on almost every street corner and in every neighborhood market in Mexico City. Those served at Mercado San Cosme in Colonia San Rafael, however, redefine the quesadilla. Indeed, while this neighborhood market is far from being the city’s largest or most famous, it’s worth visiting just for a chance to eat at Quekas, an eatery housed in the market that makes some of the best quesadillas we’ve had in the city.

Those arriving at Tsukiji Station on an early morning food hunt are most likely in pursuit of some breakfast sushi. Although Japan’s world-famous Tsukiji fish market relocated to Toyosu in October 2018, the ramshackle outer market remained, with its eclectic mix of household goods, tea and dried goods, and seafood donburi shops. Those in the know, however, might head for a different and very unusual breakfast experience in the area – one that has its origins in traditional vegan Buddhist cuisine. The most striking landmark upon exiting Tsukiji Station is not the market entrance, but the imposing Tsukiji Hongwanji temple. Set back from the road, this grey stone behemoth is modeled after ancient Buddhist architecture found in India and other Asian countries, with an arched roof rounded into a ringed point known as a sorin.

We know that spring has arrived in Mexico City when street carts crowned with whole mangoes begin to roll into town. While wandering the Centro Histórico’s bustling streets just last week, we bumped into Maria, a seasonal worker whose cart is currently laden with this favorite springtime fruit. Intrigued, we stopped to watch as she deftly skewered the mango in her hand with a stick, peeled off the skin, made decorative cuts to transform the bright orange flesh into a beautiful flower, which she then brushed with chamoy, a classic Mexican sauce, and dipped in one of the brightly colored powders stored in plastic boxes: salsa tajín, chamoy, salt, chile or everything mixed together.

It’s finally hot in Mexico City. We’re smack dab in the middle of that two-month window between March and April that brings a dry, summer heat before the snow has even started to melt in some northern climates. The city is steaming, and chilangos are hunting down their favorite cool foods and the ubiquitous agua frescas sold in outdoor markets. We’re scouring the market, too, in search of our favorite hot weather treat, a cold chicozapote. A palm-sized oval with a rough brown exterior and an interior similar to a cooked pear in consistency, the chicozapote is not a fruit you find outside of many tropical or sub-tropical climates. Called a different name in almost every Caribbean and Central American country, this fruit and its cousins trail down the continent.

Matosinhos, a small city just north of Porto, is used to change. It has an industrial air to it, due to its 19th-century harbor, and its past prosperity was connected to the fish-canning sector, which peaked during World War II and declined from the beginning of the 70s. The numerous abandoned warehouses attracted nightlife during the 1990s, with clubs finding a fertile zone for noise. The completion of the long-delayed tidal pool, built by Portugal's starchitect, Alvaro Siza (who was born in the city), put it firmly on the map again after the project was delayed for decades. In January, the launch of the new, spiralling cruise ship terminal added to the contemporary design-y feel that has been developing on its otherwise rugged coastline.

Descend the steps of Discesa del Caracciolo, leaving Via Roma behind, and you will find yourself in the heart of Palermo’s old Vucciria market, a micro-universe unto itself in which nostalgia hovers in the air and in the eyes of the locals. Typical Sicilian fatalism translates into the saying: “When the balàte of the Vucciria dry out.” The balàte are the typical stones that make up the floor on which the market stands: legend has it that – precisely because of the presence of merchants of all kinds who wash their workbenches at the end of each day – the floor of the Vucciria never fully dries.

It’s not an exaggeration to say that Lisbon’s fresh markets are disappearing. The Greater Lisbon area is home to 28 market spaces, yet only ten of these witness any significant commercial activity. As the city’s shoppers increasingly shift to supermarkets, its traditional markets have had to find new ways to remain relevant. In an effort to do this, some Lisbon markets have opted to transform part of their spaces into food courts – a phenomenon sometimes called the “Time Out effect,” after the high-profile market of the same name. It’s been a decade since the first of these relaunches, so we decided to visit the three Lisbon markets that have adopted it. What we witnessed showed a model that in one case seems to benefit both the traditional market and food court sides alike, while in the other cases, appears more lopsided.
