Stories for izakaya

It might easily be mistaken for a hipster café. From the street in buzzing Shinjuku City ward, a large window illuminates an open kitchen where Yuichi Itoi, sporting a baseball cap, white T-shirt and piercings, is prepping ingredients. As we step inside, we’re greeted by the sound of low-key hip-hop and the chatter of two young couples sat at the counter, sipping drinks. Two men are at a table butted up against a bare brick wall, an open laptop amidst their plates. But this is no café. Tempura Dining Itoi is a restaurant born from chef-owner Itoi’s devotion to washoku – traditional Japanese cuisine. Except here, he’s doing things his way. 

From the leaf-thin fried liver of Edirne to mumbar, the spicy rice-stuffed intestines of eastern Turkey, Turkish cuisine is rich with organ meat delicacies. Sakatat, as offal is called in Turkish, is approached with a fair bit of reverence (and sometimes caution). But even the most die-hard işkembe (tripe soup) lover might shy away from şırdan, a uniquely Adana specialty. In appearance, this dish is more than a little… well, phallic. Made of the abomasum, the section of the sheep’s stomach responsible for producing rennet, this organ meat is cleaned (thoroughly!) and stuffed with rice and spices before being slow cooked in a rich red broth.

We woke one Sunday craving omuraisu, our favorite Japanese comfort food. Omuraisu, sometimes rendered as omurice, is an umami bomb: a soft egg omelet arranged over rice studded with a protein such as chicken or pork and a flourish of ketchup-laced demi-glace sauce over the top. So we headed to Edoya, a yoshoku outpost in central Tokyo that opened over 60 years ago and became popular thanks to a particularly affable chef. Although it means “Western food,” yoshoku is a decidedly Japanese creation, one inspired by a 19th-century notion of pan-European cuisine. Developed with the support of the Meiji Emperor around 1900, this style of cooking places a great emphasis on meats, often paired with rich demi-glace sauces, which many believed would help Japanese people become larger in build.

You are motionless, stuck in a traffic jam after a long day at work while your stomach growls. You know the rest of the family will be hungry when you get home and that the fridge is empty and sad. Shopping and cooking is out of the question, so you turn onto a Vera side street, zig-zag through one-way lanes to Tatishvili Street, double park, and run into a tiny gastronomic oasis that has been saving lives like yours for nearly a decade. Its name is Tartan. Located in a step-down ground-floor apartment, takeout cafeterias don’t get homier than this. The front room is taken up with a long counter of refrigerated display cases half filled with enough ready-made dishes to lay down a feast when you get home.

Pies go back a long way in Athens. Harry’s Kitchen, a tiny pie shop on Axarlian, a small pedestrian street near Syntagma Square, does not – this hole in the wall only opened around a year ago. Yet the pies that Harris Satiridis, the shop’s namesake, and his wife, Yiouli, put out have already gained a reputation as some of the best in Athens. You could easily miss Harry’s Kitchen, it’s that small, but you won’t miss the queue of people outside, waiting to get their hands on one of the very tasty-looking pies in the small display case. And after biting into one, you’ll better appreciate why pies have been enjoyed in Athens since antiquity.

The weather prompted us to order as much as we did. Winter was chilling us to the bone on our first visit, several years ago, to Banggane (Bahn-gah-Nay). This Korean restaurant in Murray Hill sits on a wide-open stretch of Northern Boulevard that’s particularly exposed to the wind. A three-course feast of Korean black goat would set us right, we were sure. “In winter it warms you,” Chris Kwak, the owner, agrees, when we meet with him on a recent, less frigid afternoon. But at Banggane “summertime is very busy,” too. “When everyone’s already sweating,” he adds, black goat – named for the color of its hair, not its meat – is both refreshing and restorative, or so the traditional thinking goes.

“If you could eat one last thing before you die, what would it be?” one friend asked another. His answer came quickly: “Grilled salmon skin!” It was a conversation that happened over a couple of drinks. Many would say that these kinds of discussions, alcohol-inspired brain waves, are best left as just that: ideas to be laughed off the next day. In this case, that was not to be. The light-hearted exchange between Yuichi Kobayashi and two acquaintances inspired them to open their own izakaya (Japanese pub), serving salmon good enough to eat before you die… but on a daily basis.

Manuela, like many Neapolitans who emigrated abroad, used to make periodic trips home to see her family. On one such trip in 2012, she went to her grandmother’s house for Sunday dinner. As one does in Naples when a relative returns to the ancestral home, her grandmother prepared a ragù sauce for her. It was a simple meal, but one that would forever change Manuela’s life. When she finished eating, Manuela made the ceremonial scarpetta (dipping bread in the remaining sauce). Then a flash of inspiration came to her. “I thought, ‘Why isn’t there a place where you can eat only meat sauce? Where you can do the scarpetta like at home?’” she tells us.

Shanghai usually opts for trendy over traditional, and 2018 was no different. Dining and drinking “hotspots” tended to appear in the slew of newly-opened ultra-lux five-star hotels, including the Middle House, Edition, Sukkothai and BVLGARI hotels, to name just a few. In the everyday budget range, we’re still seeing mom-and-pop shops struggle to survive the tight real estate market and licensing battles with city officials. With yet another western-style bakery opening up and replacing our neighborhood Hunan joint, we’re left hoping that maybe 2018 was also the year of “peak” bread and coffee. It seems that trendy coffee shops are taking over any slice of open real estate.

Before the tourists discovered Tbilisi, Kote Apkhazi Street was Leselidze Street, an unassuming cobblestone ribbon connecting Old Town’s bath district, Abanotubani, with Freedom Square. Home to the Georgian Synagogue, the Armenian Holy Church of Nazareth, and Father of The Cross Church, no other street represents the capital’s multi-ethnic and multi-denominational heritage better. Other than these houses of God, Leselidze hosted several religious shops, a couple of unremarkable restaurants, second-hand clothes shops and mom-and-pop groceries. No one foresaw the flocks of visitors that would invade the Old Town with their selfie sticks, but people understood the location had a future.

Bustling Shibuya has in many ways become modern Tokyo’s most emblematic district. Its famous “scramble crossing” intersection – so-called, we imagine, out of a mixture of affection and exasperation – has in itself become a global Tokyo icon. Yet as sensory-bombarding as the junk food outlets, striking fashion choices and camera-happy throngs are, the fringes reveal an entirely different side to this area. Less than three minutes’ walk from the crowds lies a quieter street. Here, a modern yet simple wooden storefront blends seamlessly into its surroundings. Some passersby might never notice the little sake bar called Kiyoi (formerly called Kinari), but for those who do pause to peek through the small, slatted window, the interior reveals a scene reminiscent of someone’s kitchen.

That much of the past seems to stick to Samatya is a marvel in Istanbul, a city being rebuilt and “restored” at an alarming pace. First, there’s the question of its name. Occupying a stretch of the Marmara Sea and squeezed between the old city walls and Kumkapı, an area home to a rotating cast of eclectic restaurants, the neighborhood still goes by its Greek name (Ψαμάθια or psamathia, likely derived from the Greek word psamathos, meaning sand) even though it was rechristened as Kocamustafapaşa after the foundation of the Turkish Republic. Perhaps more importantly, it’s imbued with a certain type of nostalgia.

“Two kilos five liraaa! Two kilos five liraaa!” bellowed a young and exuberant vendor of tomatoes to the ongoing stream of frugal-minded shoppers making their way through the snaking Tarlabaşı Sunday Market. Hundreds of sellers of fresh produce, dairy, seafood, kitchenware, clothing, smuggled tobacco, jewelry, fresh baked goods and numerous other items set up side by side in the central Istanbul quarter of Tarlabaşı every Sunday, weaving an extended path down a backstreet that incorporates both unbridled chaos and strict organization. It is just one of hundreds of similar weekly semt pazarları, the beloved Istanbul neighborhood bazaars that offer some of the cheapest prices on the widest variety of goods the city has to offer, while at the same time serving as a critical element in maintaining the vitality of Istanbul neighborhood life.

The city of Tokyo has over 1,000 train stations, which translates to just about that many neighborhoods. In recent years many of these communities have succumbed to top-down corporate “urban renewal,” losing the small shops and restaurants that created distinctive local flavors. With an average shelf life of 30 years for buildings, most Tokyo real estate is rebuilt as opposed to being renovated for further use. Bottom up gentrification and the repurposing or renewal of buildings is rare. Change has always been an integral part of Tokyo life, but as we begin the new year, we thought it was worthwhile to honor some of the old institutions of Tokyo and enjoy them anew.

When Tonkatsu Hamachan first opened in 2001, it became an industry favorite – one of those places chefs, foodies and lifestyle journalists kept to themselves. Perhaps they closely guarded this spot because the dining room barely fit six tables, most of which were usually occupied by Japanese businessmen. The restaurant itself refrained from self-promotion – the shoji screen with hiragana script and a frosted glass door would have been as illustrative as a blank canvas to the mostly Japanese-illiterate pedestrians in the expat-friendly enclave of Jing’an. We lived just two blocks away from Hamachan for over a year when we first moved to Shanghai in 2007 and didn’t know about the tonkatsu genius until a friend drunkenly whispered the secret to us one night.
