The relative abundance of heritage architecture and mixed zoning in the former French Concession neighborhood (technically the Xuhui district) has left a legacy of nooks and crannies where a number of mom-and-pop noodle shops are able to withstand the test of time and pressures of a fast-changing economy. Luckily, enough noodle lovers are still craving the classics and will queue up to support their favorite local haunts. Our top five picks can get crowded, but if you avoid the main lunch rush from noon to 1 p.m., you shouldn’t have to fight (too hard) for a seat.

In France, the poissoneries (fish markets) are often decorated in a palette of blue to evoke the sea while boucheries and charcuteries are blood red. Rouge, the color of meat, pops up on tile walls, around deli counters and on awnings above shop windows so that customers can spot their meat purveyors from afar. That was the case at Maison Payany, an artisan charcutier in Marseille’s 6th arrondissement, until its new owner gave it a fresh coat of pink. Marie Caffarel took over Maison Payany in the spring of 2019. Despite the unorthodox paint job, in many ways she has upheld the traditions of this neighborhood institution, which prior to her arrival had been run by three generations of Payany men since 1932.

This post from Marseille is the first installment of “Spring (Food) Break 2021,” a weeklong celebration of our favorite springtime eats. In France, cheese is served as a main course in the winter. We melt raclette over potatoes and dunk hunks of baguette into oozy baked Mont D’Or, the warm, alpine cheeses keeping us toasty on cold nights. But once the temperature starts to rise, and we shed our winter layers, our hunger for these hearty cheeses wanes. We crave something tangier. Something brighter and lighter. We want brousse du Rove.

If you hadn’t read the flyer closely before heading to Shanghai’s first ever MeatFest in June 2019, you might have been a bit disappointed upon arrival. The sounds and smells of sizzling meat might have seemed like a carnivore’s dream come true, but the name was tongue-in-cheek; the event was thrown by Vegans of Shanghai for “eco-conscious meat lovers” and served only domestically sourced plant-based “meat” products. It’s part of a bigger push towards eating a plant-based diet in China, where vegetarians make up less than 5 percent of the population. But even at such a low rate, that still comes out to approximately 50 million people (a population larger than that of Spain).

Naples and its people have a strong link to traditional pastries: For centuries the sweet trio of babà, sfogliatella and pastiera has dominated undisputed. But in the city’s historic center, a woman dares to challenge the sacred pillars of pastry, offering instead a tarte au citron or éclair au chocolat that wouldn’t look out of place in Paris. The pastry shop’s name – Mon Sciù – clearly spells out its love of French and Neapolitan culinary cultures. Mon is French for “mine,” while sciù is the Neapolitan word for “choux pastry” (it’s also used to describe a person who is particularly kind).

Some of Marseille’s most majestic buildings surround the Estrangin métro stop: the American consulate, the ornately sculpted Caisse d’Epargne bank, and the Napoleon-style Préfecture. Between them sits an equally iconic institution, Café de la Banque. Yet while its high-profile neighbors deal in banking and bureaucracy, this spot serves something more essential: a dependable place for delicious food and drink. Named for the surrounding banks, this non-stop café is a neighborhood fixture that hums all day. Regulars fill the old-timey interior and one of Marseille’s best patios for a morning café, the perpetually packed lunch service, and post-work beverages. In a city whose Mediterranean identity often sets it apart from the rest of France, Café de la Banque serves up a comforting slice of classic French café culture.

Search online for Shanghai’s best fried dumplings, and you’ll come up with hundreds of results extolling Yang’s Fried Dumplings. Though it was once just a humble shop sandwiched between the Bund and People’s Square, the online renown and ensuing crowds have propelled the brand into chain-store ubiquity, populating new malls and shopping streets with fervor. In essence, they’ve become the Starbucks of dumplings; you’re going to get a relatively consistent product, but come on, you can do so much better! Enter Yang Yang’s.

Mall dining in Asia is nothing like its American counterpart, thanks mostly to the humid climates of Singapore and Hong Kong. These two islands have tunnels and bridges connecting malls throughout the cities, making them easy to traverse while staying inside the air-conditioned environment. When temperatures spike – as they do on most days – crowds flock to the malls; the restaurants have followed suit. You can eat everything from excellent snack food to Michelin-starred meals in malls in Hong Kong and Singapore. But what does all that have to do with Shanghai?

Behind the counter at Le Bon Pain in Queens Village, more often than not, is Ghislaine Clervoix, a woman in her 80s who has owned the place for more than 30 years. Ghislaine chats in English and Haitian Creole with her regular customers, a few of whom she’s known for decades and introduces as her “old-school friends.” Diminutive loaves of French bread are the namesake of the bakery, and plenty of customers come in to buy them fresh; the Clervoix family also bakes large quantities for supermarkets around Long Island and Queens. On a recent visit, though, the signature bread seemed like an afterthought to most customers, who were clamoring for the bakery’s patties.

In & Out arrived in Beijing years ago to rave reviews, but the Yunnan restaurant only just settled in Shanghai, confusing homesick Californians with its name. Instead of Double-Double burgers and Animal-Style fries, it serves cross-the-bridge noodles (过桥米线, guòqiáo mǐxiàn) and fried potato balls (土豆球, tǔdòu qiú). While most Yunnan restaurants in China span the whole province’s cuisine, from tea leaf salads to crispy adzuki beans, In & Out’s menu is (mostly) specific to Lijiang, a city deemed a UNESCO heritage site that lies about halfway between Shangri-La and Kunming, the provincial capital, and is home to the Naxi and several other ethnic minorities.

The peripheral neighborhoods of Barcelona – untouched by tourism and with cheaper rents – are a land of opportunity for chefs seeking an affordable place to set up shop. These areas in turn attract gourmet gold seekers in pursuit of a brilliant meal at a friendly price. In the residential streets of Sants, not too far from the city’s main train station, one restaurant shines particularly bright, with its eclectic style, influences and, of course, flavors: MinE. MinE is a combination of combinations, beginning with the owner and head chef, Martin Parodi. Born in Buenos Aires, Parodi is the son of a Japanese father and an Italian mother. He grew up in Barcelona, studied in France and then worked in a number of European countries.

Hong Kong native and Cha’s owner Charlie Lau became a restaurateur because of a hankering. A movie producer by day, Lau came to Shanghai with Ang Lee to film “Lust/Caution,” and was disappointed that Shanghai lacked a proper Hong Kongese cha canting, a casual all-day eatery that serves traditional Cantonese food alongside milk teas and coffee. So he decided to open his own. On the set of “Lust,” a 1930s period piece, Lau was responsible for ensuring the historical accuracy of the costumes, casting and set design, so it’s not surprising that he designed Cha’s with the past in mind. Walking across the restaurant’s threshold transports you to 1950s Hong Kong.

These days, you won’t find anyone reaching for their wallet while dining out in Shanghai. Cash has become almost obsolete as virtual currencies corner every last slice of the retail payment market. QR codes and app-based systems are the new normal, even for transactions less than the equivalent of US$1 (like our beloved breakfast street food staple, the jianbing). According to a recent New York Times article, mobile payments in China hit US$5.5 trillion in 2016. Yes, with a “T”. And 2017 is sure to be another banner year as AliPay, WeChat Wallet, Apple Pay and others continue to fight for market share.

In September of last year, Shanghai eaters were shocked when Mr. Wu shuttered A Da Cong You Bing, the city’s best scallion pancake shop. The only explanation for the abrupt closure was a worn sign on the door that read: “My family has a problem. The stall will be closed for a few days.” But this wasn’t the whole truth. Some attributed the shutdown to the fact that the stall was featured on the BBC program Rick Stein’s Taste of Shanghai, claiming that it had drawn too much attention to the unlicensed vendor and the government had taken note.

[Editor's note: We're sorry to report that Harbin Dumplings has closed.] Walk along just about any street in Shanghai these days, and you’ll see an ever-encroaching range of Western brands, standardized brand signage and food franchises. As in other rapidly developing countries, the battle for consumer dollars and brand loyalty has meant more chains and mass-produced food. That’s partly what makes stepping into one of the several Liu Family Harbin Dumplings shops a breath of fresh air. Every morning until the lunch rush, the dining room and back rooms are set up with trays and workers dexterously making every dumpling from start to finish. Dumpling wrappers are meticulously hand-rolled, the fillings are mixed in large batches, and the time-consuming process of filling and closing the dumplings marches on until tray upon tray is ready for boiling.
