Stories for fish seafood

Everything at NAM 43, from the exposed wood beams that extend across the space to the Neapolitan tuff, an ancient stone, embedded in the walls, reflects a philosophy of recycling. (Except the food, of course, which is fresh every day.) In fact, it was one of the basic principles that inspired 50-year-old Raffaele Montesano to take over the space, an old antique shop, in early 2016 and turn it into a bistro, one that would enhance classic Neapolitan offerings with gourmet touches. “I love minimalist furniture,” Raffaele tells us. “The tables came from a school canteen in Emilia-Romagna [a region in northern Italy] and were won at an auction.”

It’s hard to imagine now, but Alvalade, a neighborhood north of downtown Lisbon and close to the airport, was comprised mainly of fields in the early 20th century, with farms in the area supplying the Portuguese capital with dairy products as well as fresh fruits and vegetables. Those farms may be long gone, but this residential neighborhood is still famous for its high-quality produce – except rather than being grown on the land, it’s sold at the Mercado de Alvalade, a municipal market that opened in 1964. Although the produce comes from MARL (the large central wholesale market north of Lisbon), a lot of it is still grown in the fertile region north and west of Lisbon.

For Christmas, a Neapolitan wants to eat three things: fish, seafood and more fish. So important are the creatures of the sea for the holy evening that Christmas is also referred to as the festa dei sette pesci (“feast of the seven fishes”). And while all fish are welcome at the table, one is especially dear to every Neapolitan’s stomach: dried, aged Atlantic cod. It comes in two similar but distinct forms: baccalà, or salt cod, which, as the name suggests, is cod that has been heavily salted; and stoccafisso, known as “stockfish” in English, which is preserved by being dried in the sun and the wind. Before they are eaten, both are soaked in water to rehydrate and soften them.

The ancient Romans loved to eat well. Look no further than the food represented in many Pompeian frescoes and mosaics, like the bread, figs, pomegranates and baskets of fruit portrayed at the most famous villa at Oplontis, the so-called Villa of Poppaea, named after the second wife of the Emperor Nero. And from the buried cities of Pompeii, Herculaneum and Stabia, archeologists have uncovered many artifacts of a gastronomic nature, a sign of the culinary prowess of this ancient civilization. In particular, the Romans had a taste for garum, a funky sauce that, as Pliny the Elder describes, was obtained by mashing up fish entrails, layering them with salt and leaving them to ferment under the sun.

Though Pedro Bandeira Abril is only 29 years old, he is anything but a rookie – and good thing, too. The chef, who was cooking family meals from the age of 16, is now in charge of the two restaurants at Chapitô, Lisbon’s circus school, which have grown immensely popular with locals in this pandemic summer, thanks to their prime location and outdoor seating. Chapitô has always had one of the best terraces in the city. The school, which opened in 1986, is nestled uphill on Costa do Castelo, close to the iconic castle of São Jorge, in a building that used to be a juvenile detention center. Led by circus legend Teresa Ricou, it has long played a very important role in the performing arts.

If you ask a Marseillais where to cavort on the coast, most will respond, without hesitation, “the Calanques”: turquoise coves tucked between towering limestone cliffs that can only be reached by foot, boat or paddle. Spanning Marseille and Cassis, this national park gets all the glory – and tourist campaigns – for its jaw-dropping grandeur. But, north of the city, you’ll find more intimate calanques that also merit a visit: the Côte Bleue. Unlike the barely inhabited Calanques National Park, the “Blue Coast” is dotted with fishing villages anchored in blue coves, each one appearing to have been carved into the limestone hills. Some of the secluded ports are connected by hiking trails that weave between beach pines and the Mediterranean.

From Gascogne’s prized ducks to the buckwheat gallettes of Bretagne, each chunk of France has its distinct food traditions. In Marseille, the capital of Provence, the recipes brim with the region’s olive oil, garlic and tomatoes as well as plenty of Mediterranean fish. On menus around town, you’ll find an anchoïade here or artichauts à la barigoule (braised artichokes) there, but it is hard to find a restaurant that is fully devoted to the Provençal classics. Chez Madie les Galinettes is one of the few. From alouettes sans tête (beef roll ups in tomato sauce) to soupe de poisson, the menu reads like a Marseille mamie’s (grandmother’s) cookbook. You’ll feel like you’re dining in a local’s home, thanks to the familial warmth of its ebullient owner, Delphine Roux.

Perched at Marseille’s northern border along the Mediterranean, the port of L’Estaque once teemed with fishermen. Starting in the 17th century, local pêcheurs would catch sardines, tuna, mackerel and poissons de roches (the rockfish that are essential to the city’s iconic bouillabaisse.) In the 1960s, these independent fishermen were swallowed up by the increase in industrial fishing, which led to a decline in the fish population – particularly sardines. Though pleasure boats now outnumber the port’s barquettes (traditional wooden fishing boats), L’Estaque’s fishing heritage hasn’t totally dried up. In 1976, Marseille’s wholesale fish market moved from the Vieux-Port to the Port du Saumaty, just south of the village. And, since 1997, L’Estaque is home to one of the city’s best fresh fish restaurants on the sea: Hippocampe.

It was a frosty dark night just before the solstice and as we walked the 10 or so minutes from the Keramikos Metro to our destination, we passed familiar favorites like A Little Taste of Home and places as yet unvisited that seemed alluring. But when we ventured further into the unknown, the street was empty both of pedestrians and lit storefronts. Where was this restaurant? A few blocks more brought us back to terra cognita. The Old Bicycle (To Palio Podilato), its window bright and with a bicycle hanging inside, turned out to be practically next door to the Benaki Museum’s Pireos Street annex, one of the city’s most exciting museums for modern art, photography and foreign exhibitions.

This year we came across scores of new places and watched as bars and restaurants continue to sprout up throughout the city in defiance of Turkey’s severe economic downtown (as the saying goes, bars always do well in times of crisis). But 2019 also involved discovering (and re-discovering) some classics that have weathered bad times both recent and distant, shining through it all with the gleaming beam of perfectionism and perseverance.

A bit like 2018, we saw a lot of old and traditional places closing in 2019, with many others threatened with closure – like Casa Cid, a tasca that has been operating since 1913. An investment group bought the building where the tasca is located and will turn it into a luxury hotel, forcing the tasca out in February; in response, the family behind Casa Cid launched a petition that calls for “more pork crackling less phony gourmet stuff.” Dozens of new places have opened in Lisbon, and while many are not successful, there are some that sparked our interest. We ate at amazing social projects like É Um Restaurante and modern tascas.

Starting things off is a dispatch from Alexis Steinman, our Marseille bureau chief. This year began with a bang, when Marseille nabbed a coveted spot on the New York Times’ “52 Places To Go in 2019” list. Written by food writer Alexander Lobrano, the blurb lauded the city’s ever-expanding food scene. Throughout 2019, new restaurants opened, captained by chefs who trained at local tables, first-timers emboldened by the city’s entrepreneurial energy and Parisians seeking sun and the easygoing vibes that go along with it.

On a blustery, drizzly winter afternoon in Istanbul, Muhittin Öztürk swipes his cell phone until he finds the photo he’s looking for: three men clad in blue aprons, standing behind a grill inside a small fishing boat. “That one’s my father, that one’s my uncle,” Öztürk says, pointing at the image. “This is the culture I come from.” Now a 35-year veteran of the business, Öztürk is the owner of the Derya, one of three gaudily adorned neo-Ottoman-style vessels moored to the shoreline in Eminönü, where a crew of cooks and waiters serve up fish sandwiches – balık ekmek (literally, “fish bread”) in Turkish – at a rapid pace to heaving crowds, most of whom are tourists.

The oldest city in Western Europe, once the hub of a trading empire that connected Macau in the east to Rio de Janeiro in the west, Lisbon today feels staunchly Old World European, a sleepy town of nostalgic storefronts and scenic churches. But that’s only its façade.

n 2005, José Luís Díaz was thinking about retiring after working for many years in great local restaurants. He wanted to leave behind the stress of big kitchens, but still to cook the recipes that he loved with a different rhythm and with more time and care. And so he opened Sense Pressa – an antidote to the pressures and stresses of modern life. Sense Pressa (literally “Unhurried”) is a cozy, modest eatery. The narrow entry adjoins a bar that is flanked by more than 300 wine bottles and leads into a wider room appointed with round tables. The ambiance walks the line between elegant and homey, serene and lively. Each night, Díaz and his team cook around 25 covers (by reservation only) in a single, leisurely seating.
