Stories for bakery

Like most Syrians who fled their war-ravaged country and made their way to Turkey, Fatma Jabal, a 19-year-old from Aleppo now living in Istanbul, had to get creative in order to make a living. With a baby boy to take care of and her husband struggling to provide for their family while working as a carpenter, Fatma tapped into something she’s been doing since she was a child: baking cakes and cookies. Making desserts had been something Fatma has loved from early on growing up in Aleppo, which she left in 2014 in the midst of the worsening conflict there. For her, each treat she bakes is a work of art that just happens to be edible. “The first thing I did in the kitchen was sweets,” she says. But Fatma realized she needed to develop her budding baking prowess to start charging customers.

There was a dowdy little joint in Batumi, Georgia’s Black Sea port town, where two middle-aged women churned out the most exquisite Adjarian-style khachapuri pies in an old pizza oven. It was a must-stop for every trip to the coast, as there were few places in Tbilisi that could scorch such an authentic acharuli. As the years passed, the seedy potholed streets that hosted a pool hall, brothels and our favorite khachapuri joint transformed into a gentrified neighborhood of gift shops and boutiques catering to the ever-growing number of tourists flocking to Batumi. Meanwhile, the boat-shaped acharuli has become one of the most emblematic dishes of Georgian cuisine and is not only found all over Tbilisi, but is also being served in New York and Washington, DC.

Behind the counter at Le Bon Pain in Queens Village, more often than not, is Ghislaine Clervoix, a woman in her 80s who has owned the place for more than 30 years. Ghislaine chats in English and Haitian Creole with her regular customers, a few of whom she’s known for decades and introduces as her “old-school friends.” Diminutive loaves of French bread are the namesake of the bakery, and plenty of customers come in to buy them fresh; the Clervoix family also bakes large quantities for supermarkets around Long Island and Queens. On a recent visit, though, the signature bread seemed like an afterthought to most customers, who were clamoring for the bakery’s patties.

Mexican diners offer a place for many in the capital to go for simple eats, often for people struggling to make ends meet. The key is to look for a crowded lunch bar lined with clients downing food before they have to head back to work. For example, if you find yourself strolling down 5 de Febrero, a few blocks south of the Zócalo, about to hit the new, city-funded arts district along Regina and San Jerónimo, consider Panadería La Joya. One of the classic greasy spoons downtown, La Joya stands out not for its innovation or hip atmosphere, but for its spot-on, tried-and-true renditions of Mexico’s hits. The place feels timeless. We tracked down the oldest worker, there for 40 years, and he admitted he had no idea when or who began the place.

That much of the past seems to stick to Samatya is a marvel in Istanbul, a city being rebuilt and “restored” at an alarming pace. First, there’s the question of its name. Occupying a stretch of the Marmara Sea and squeezed between the old city walls and Kumkapı, an area home to a rotating cast of eclectic restaurants, the neighborhood still goes by its Greek name (Ψαμάθια or psamathia, likely derived from the Greek word psamathos, meaning sand) even though it was rechristened as Kocamustafapaşa after the foundation of the Turkish Republic. Perhaps more importantly, it’s imbued with a certain type of nostalgia.

Since its name derives from the Turkish word peynir (cheese), it’s no surprise that Athens’ best peinirli (πεϊνιρλί, “with cheese”), a boat-shaped flatbread similar to pide in Turkey and khachapuri in Georgia, is usually found at old, specialized shops or eateries owned by families who originally came from Asia Minor or Pontus, the Greek name for the southern coast of the Black Sea, in the early 20th century. So when Spyros, the owner of Peinirli Ionias in Ambelokipoi, one of the most popular peinirli takeaways in downtown Athens, casually mentions that he originally hails from the Ionian island of Corfu – nowhere near Asia Minor, another name for Turkey’s Anatolia region – we are left scratching our heads. Sensing our confusion, he quickly adds that he learned the art of peinirli-making directly from the source, so to speak: his father- and mother-in-law, who both emigrated to Athens as part of the 1923 population exchange between Greece and Turkey.

In the Kurtuluş district of Istanbul, we’ve lately been exploring links to older, nearly lost Istanbul culinary traditions. Spending time in the sweetshops, milk bars and şarküteri of this district, we’ve seen a glimmer, if faded, of the “Old Istanbul” that people remember from the 1950s and '60s, when the city’s historic minorities – Greeks, Armenians and Jews – played a prominent role in the culinary scene of the city. It’s a complex and endlessly fascinating subject, one that never fails to spark our curiosity. And then we were distracted by the smell of fresh bread. Fresh lavaş, to be more specific, being hoisted out of a fiery hole in the floor on a blackened hook by the sturdy Gül Hanım.

Hong Kong native and Cha’s owner Charlie Lau became a restaurateur because of a hankering. A movie producer by day, Lau came to Shanghai with Ang Lee to film “Lust/Caution,” and was disappointed that Shanghai lacked a proper Hong Kongese cha canting, a casual all-day eatery that serves traditional Cantonese food alongside milk teas and coffee. So he decided to open his own. On the set of “Lust,” a 1930s period piece, Lau was responsible for ensuring the historical accuracy of the costumes, casting and set design, so it’s not surprising that he designed Cha’s with the past in mind. Walking across the restaurant’s threshold transports you to 1950s Hong Kong.

Día de los Muertos (Day of the Dead), or at least some variation of it, has been an annual celebration in Mexico for over 3,000 years. During the Aztec period, it took the form of a festival in August dedicated to Mictecacihuatl, otherwise known as the Lady of the Dead. Today it is one of Mexico’s most colorful holidays, encompassing popular traditions both old and new. To the Aztecs, death was nothing to be feared; it was but a passage and a continuation to the next level of consciousness. Life was viewed as a state of dreaming and death was when someone was truly awakened from their slumber. The Aztecs’ monthlong festival was meant to honor those who had passed on and to entice their souls to visit once more.

Mid-Autumn Festival (中秋节, zhōngqiūjié) lands on the 15th day of the eighth lunar month, relatively near the autumnal equinox; in 2017, it falls on October 4 and coincides with the National Day holiday. Also sometimes called Mooncake Festival, it’s a public holiday in China and Taiwan on which families gather to give offerings to the full moon, float sky lanterns and eat mooncakes (月饼, yuèbing). A culinary tradition with legendary roots, mooncakes are sold everywhere from grocery stores to five-star hotels and come with competing origin stories that relate how these sweets came to represent the holiday.

Bread may be fundamental to Portugal’s food culture, but over the last few years the baked goods landscape in the country has begun looking increasingly uniform, with fake neo-classic franchising playing no small part in its decline. Although many old and family-run bakeries can’t keep up with the competition – especially in the cities – there are a few initiatives kneading a small revolution. Courses, workshops and experimental research are creating a new class of future bakers who often rework old techniques. Among them is 21-year-old Diogo Amorim. Gleba, his bakery, with its contemporary look and historic techniques, attracts customers from all over Lisbon. It opened six months ago in Alcantara, a neighborhood that shows traces of many past lives, from industrial working-class to the aristocratic.

Tucked away from the constant hustle and bustle of Queens Boulevard, Anna and George Artunian’s Sunnyside bakery, Arsi’s Pateseria, is a pleasant surprise. As we walk down 47th Avenue towards the gauzy Midtown Manhattan skyline, the smell of freshly baked burekas greets us long before we get to the bakery’s wide window. Inside, in metal trays behind the counter, four different types of burekas, savory sesame ring cookies and even baklava gleam in different shades of gold. Also behind the counter is 60-year-old Anna Artunian, one-half of the husband-and-wife team running the establishment and chatting with the customers, most of whom are regulars.

Julian Ramirez started out at the age of 14 as a shop boy at a busy bakery in Colonia Guerrero in 1959, then a bustling blue-collar neighborhood, easily connected to downtown by streetcar. Back then, at La Antigua del Guerrero, he learned the business: wiping windows, sweeping up and eventually making deliveries on his bike. One nibble at a time, he picked up the art of cake- and bread-making from the shop’s master bakers. Those trade secrets would serve him over the next 63 years and beyond as they pass on to his kids and theirs. Many of Mexico’s classic bakeries like the Guerrero operation fell one by one with the introduction of mass-produced bread, tearing at a staple of communities across the capital.

When Wuyuan Bingjia first opened in 1936, it was one of many Shanghai-style bakeries around town, churning out trays of benbang dim sum dishes to be eaten on the go or taken home and enjoyed with the family. Now, as the city grows skyward and Shanghainese palates skew more international, these old-style bakeries are slowly dying out. Wuyuan Bingjia is one of the last ones standing, and it’s not thanks to the service. (Word to the wise: Be ready to order when you get to the cashier or you’ll get an earful from the waitstaff.)

For those interested in visiting Tashkent or Samarkand, an easier trip might involve heading to the Rego Park and Forest Hills neighborhoods of Queens, home to much of the borough’s Central Asian Jewish diaspora. The neighborhoods comprise two main thoroughfares: 63rd Avenue, which changes to 63rd Street, and 108th Street. Both roads have a range of markets, restaurants and bakeries that serve local tastes and evoke places left behind. On one recent afternoon, I walked west on 63rd Avenue, away from Queens Boulevard, passing Public School 139 Rego Park, where parents and grandparents spoke Tajik, Mandarin, Arabic, Uzbek and Russian, crowding the street as they await their children’s dismissal from school.
