Stories for bakeries cafes

Way south of the pure, unadulterated hustle and bustle of the historic center, east of refined and residential San Ángel, and northwest of Xochimilco and its colorful canals lies Coyoacán, a neighborhood unlike any other in the megalopolis that is Mexico City. Once an artsy hangout for the movers and shakers of the day, like Frida Kahlo and her husband Diego Rivera, as well as a refuge for exiled Communists like Leon Trotsky (all three have house museums dedicated to their honor in the barrio), Coyoacán is now a popular tourist hangout. However, you don’t have to scratch far beneath the surface to find remnants of Coyoacán’s traditional, if somewhat romanticized, past.

There we are at Bodega Carlos, enjoying a homey and delicious batch of crispy fried anchovies and succulent stewed pork cheeks, when we suddenly hear birdsong. We look up, but neither canary nor nightingale can be seen flying around the high-ceilinged bodega-restaurant. But then the birdsong instantly switches to a sound we can best describe as a falling whistle, like the one that accompanies Wile E. Coyote as he falls from a cliff. Is it a bird, is it a plane, or is it a smartphone ringing with infinite improvised melodies? No, it is Carlos Estrada Roig, the owner of this friendly neighborhood bodega and an expert whistler.

Mexican diners offer a place for many in the capital to go for simple eats, often for people struggling to make ends meet. The key is to look for a crowded lunch bar lined with clients downing food before they have to head back to work. For example, if you find yourself strolling down 5 de Febrero, a few blocks south of the Zócalo, about to hit the new, city-funded arts district along Regina and San Jerónimo, consider Panadería La Joya. One of the classic greasy spoons downtown, La Joya stands out not for its innovation or hip atmosphere, but for its spot-on, tried-and-true renditions of Mexico’s hits. The place feels timeless. We tracked down the oldest worker, there for 40 years, and he admitted he had no idea when or who began the place.

It’s Saturday around lunchtime and business as usual in the bustling Beşiktaş Çarşı neighborhood, as crowds of mostly younger people fill the narrow streets. Down on Mumcu Bakkal Sokak, a pedestrian-only street lined with miniscule shops, a line around the block has been formed by those eager to get into one of the city’s best döner spots. For many of those waiting in line, however, it’s impossible to ignore the scaffolding-covered building just across the way. Though the scaffolding masks most of the historic building, it’s still possible to make out strips of the distinctive baby blue color of what was one of Istanbul’s most beloved eateries: Pando’s kaymak shop.

To her friends, Michelle Boyce, the owner of Shelly’s Café, is “Michelle.” That was the name called out by many customers, when arriving or departing, as we sat and talked in her sunny dining area on a recent afternoon. She is, to be sure, also “Shelly,” a diminutive bestowed on her by her mom in Newry, County Down, one of six counties that form Northern Ireland. Years later and an ocean away from that childhood home – Michelle left Newry for New York as a young adult in 2010 – she told us of her continuing “passion to recreate my mom's home cooking.” In that sense, the name “Shelly’s Café” evokes both mother and daughter.

Years ago, when it was a booming industrial center, Poblenou saw thousands of workers stream in every day to toil away at one of several factories in the neighborhood. Hearty fare was required to keep them going – sure, taste mattered, but sustenance was the most pressing concern. Poblenou may no longer be filled with factories, but there are still plenty of people who spend their weekdays in the area, working at one of the many start-ups, tech companies or communications firms that have set up shop in their place. When it comes to lunch, these 21st-century workers want the same thing that those who came before them did: lunches that fill their stomachs and satisfy their taste buds without leaving a big hole in their pockets.

Colonia Santa Maria La Ribera, one of our favorite dining neighborhoods in Mexico City, is home to the historic kiosco morisco. Built in 1884, the Moorish open-air pavilion represented Mexico at the St. Louis World’s Fair in 1902 and has been in its current location since 1910. Just a few steps west of it sits a nondescript hole in the wall, which figures as prominently as the kiosk in our mental map of the neighborhood. Owner David García Maldonado offers just a few items on the menu, two of which are outstanding: pozole, a broth made from pork and maíz cacahuazintle, or hominy, and goat birria, a typical soup from the state of Jalisco.

The view from Weekender’s doorway is promising only for those comfortable with snooker: The room is dominated by three intimidatingly broad tables devoted to that challenging cue sport. Compared with New York’s typical coin-op bar-pool tables, a snooker table’s balls are smaller, its pockets tighter and successful shots consequently rarer. They certainly were for us. Crossing to the far side of the counter, we found more action, of a different sort, in a screened-off dining area provisioned by a Bhutanese kitchen. This Woodside establishment is one of the few in all of New York that serves the cuisine of Bhutan, a Himalayan kingdom landlocked between Tibet and India.

Día de los Muertos (Day of the Dead), or at least some variation of it, has been an annual celebration in Mexico for over 3,000 years. During the Aztec period, it took the form of a festival in August dedicated to Mictecacihuatl, otherwise known as the Lady of the Dead. Today it is one of Mexico’s most colorful holidays, encompassing popular traditions both old and new. To the Aztecs, death was nothing to be feared; it was but a passage and a continuation to the next level of consciousness. Life was viewed as a state of dreaming and death was when someone was truly awakened from their slumber. The Aztecs’ monthlong festival was meant to honor those who had passed on and to entice their souls to visit once more.

In September of last year, Shanghai eaters were shocked when Mr. Wu shuttered A Da Cong You Bing, the city’s best scallion pancake shop. The only explanation for the abrupt closure was a worn sign on the door that read: “My family has a problem. The stall will be closed for a few days.” But this wasn’t the whole truth. Some attributed the shutdown to the fact that the stall was featured on the BBC program Rick Stein’s Taste of Shanghai, claiming that it had drawn too much attention to the unlicensed vendor and the government had taken note.

Entering Central de Cacao, one might think it any other café in the hip neighborhood of Roma Sur. Sitting upon stools, customers hunch over their laptops, sipping from steaming mugs. A wide, beautiful geometric design hangs on the high wall behind the counter. To the left of the entryway, colorful products for sale line a stack of long shelves. But upon closer inspection, the sweet nature of the cafe and store reveals itself. The contents of the steaming mug: chocolate. The geometric design behind the counter: molinillos, or traditional Oaxacan chocolate whisks. The products on the shelves: all chocolate. Chocolate-infused honey. 100 percent chocolate bars.

Julian Ramirez started out at the age of 14 as a shop boy at a busy bakery in Colonia Guerrero in 1959, then a bustling blue-collar neighborhood, easily connected to downtown by streetcar. Back then, at La Antigua del Guerrero, he learned the business: wiping windows, sweeping up and eventually making deliveries on his bike. One nibble at a time, he picked up the art of cake- and bread-making from the shop’s master bakers. Those trade secrets would serve him over the next 63 years and beyond as they pass on to his kids and theirs. Many of Mexico’s classic bakeries like the Guerrero operation fell one by one with the introduction of mass-produced bread, tearing at a staple of communities across the capital.

One of our most exciting discoveries this year was Yılmaz Tandır Evi in Istanbul's Feriköy neighborhood, where many people from the eastern Anatolian province of Erzincan have settled over the years. Yılmaz İngeç, a native of Erzincan's İliç district, serves only the finest ingredients from his hometown, including fresh honey, kavurma and tulum peynir, a salty, crumbly cheese aged in goatskin. A simple serving of fried eggs topped with tulum was a match made in heaven, perhaps our favorite breakfast this year. We were thrilled to stumble upon a secluded slice of the Black Sea province of Trabzon right here on the Asian side of Istanbul earlier this fall.

Located just beneath Istanbul’s first Bosphorus Bridge in the Anatolian side district of Üsküdar is a secluded slice of Trabzon, the Black Sea province known for its otherworldly lush green forests, hot-tempered inhabitants and distinctly deep cuisine. The Trabzon Kültür Derneği (Trabzon Cultural Association) is something of a clubhouse for folks who grew up in the province and later moved to Istanbul for school and work. Founded in 1970 and having changed locations a number of times, the association set up shop in Üsküdar’s Beylerbeyi neighborhood at the turn of the millennium and crafted a miniature version of home in the heart of Turkey’s largest, ever-sprawling city.

Despite the 1970s-era sign outside that says Granja (farm) and the red letters spelling “Bar” inside, you can’t really tell what this place is until you open the menu: a temple of “neighborhood haute-cuisine.” The food at Granja Elena sounds simple but tastes rich and complex. The restaurant is a family business, now run by the third generation – Borja, Patricia and Guillermo Sierra Calvo – in the same barrio in which it was founded in 1974, La Marina del Port. This modern neighborhood is part residential and part industrial, a bit far from Barcelona’s center, located near the merchant port behind Montjuic and on the way to the airport.
