Flyby Dining: How to Spend a Layover in Istanbul

With a main terminal of 1.44 million square meters, the new Istanbul Airport (IST) takes a lesson from its home city, paying homage to the gods of unnecessary sprawl and shopping malls. Rather than waste away under the fluorescent lights paying triple the price on duty free and forcing down disappointingly dry pide, store your bags for a few bucks and head out into the city for some unforgettable meals and sights. When circling into IST or the Asian side of the city’s Sabiha Gökçen Airport (SAW), the unending view of building upon building will tell you immediately: Istanbul is not the city to hop on a bus and see what happens.

Iftar Al Fresco: Sunset in Sultanahmet

As the call to prayer drifts from mosque to mosque and lights flicker on in anticipation of dusk, everyone around us takes a sip of water and wolfs down a date, almost in unison. It is the start of Ramadan and, here in Sultanahmet Square, folks are breaking their first fast of this holy month. They have been waiting patiently for the loud cannon blast which announces the day’s end – a tradition of old that still persists here in the square, though the loud bang often frightens unsuspecting tourists – sitting on blankets spread in the square’s grassy patches and pulling tupperwared iftar meals out of plastic bags and picnic baskets.

Best Bites 2021

This was a topsy turvy year for Istanbul's restaurant scene, as the first six months of 2021 were marked by a series of pandemic restrictions and lockdowns that made for slow business, while a grand reopening of sorts on July 1 resulted in thousands of people flocking back to their favorite restaurants and bars, some of which had been fully closed since March 2020. During the second half of the year, a pulsating energy hummed throughout the city, establishments were packed to the gills, and it became impossible to catch a taxi home on a Saturday night. Istanbulites seemed to be going out and enjoying themselves as much as possible in the event that they might not be allowed to the next week. For our Best Bites of 2021, we each chose an Istanbul classic, a modern favorite, and an exciting new addition to the city’s culinary scene, all of which have rolled with the pandemic punches.

The Frozen Few: Istanbul’s Burgeoning Gelato Scene

In these days of viral Instagram videos and WhatsApp chainmail, Turkish ice cream has become synonymous with fez-clad pranksters swooping and slinging a mound of sticky Kahramanmaraş dondurma (ice cream) out of the hands of questionably amused tourists. But Turkey’s dondurma tradition goes far beyond these attention-seeking tricks. Beloved institutions offering more than simple (though delicious) chocolate or pistachio – like Kadıköy’s Dondurmacı Ali Usta, the countless Mado operations, Dondurmacı Yaşar Usta and Bebek’s Mini Dondurma – will never lose their loyal customer base. With such a wealth of frozen creams, it’s no surprise that gelato only arrived on the scene in Turkey in the mid-2000s, when the first Cremeria Milano opened its doors at the Tünel terminus of Istiklal Avenue (it now has some 18 locations throughout the country).

Elde Börek: Mom’s Cooking, With a Twist

With December about to lift its wintry head and amble into Istanbul on the heels of a rainy November, there’s no cure for chilly weather and pandemic brain quite like the classic, cozy offerings at any beloved esnaf lokantası (tradesman’s restaurant). From sautéed beef over roasted eggplant purée to white beans in tomato sauce to moussaka and stuffed peppers, there’s a reason the most established of these establishments have a steady stream of loyal customers: reliably good food at a reliably good price. The esnaf lokantası is the bread and butter of Turkish dining, and any worthy Istanbullu will know their neighborhood’s favorite haunt. The problem with Beşiktaş, a formerly working-class district that has become a hub for Istanbul’s student life, is that scores of longstanding eateries have been shuttered.

Makana: Student Fare, Uighur Edition

The bright spots of dandelion yellow and sleek tabletops at Makana in Istanbul’s Beşiktaş district are a far cry from the cozy interiors of the Uighur restaurants dotting the multicultural streets of Zeytinburnu and Çapa. But after one bite of Makana’s dry-fried lagman, we know: Uighur cuisine has arrived in Beşiktaş. The neighborhood needs it. With three universities in walking distance of its formerly working-class çarşı (downtown), Beşiktaş has become a central location for Istanbul’s more youthful crowds, who have returned with gusto after three months of empty streets and sporadic lockdowns due to Covid-19. Yet compared to other Istanbul neighborhoods, it has had a dearth of original, quality places to eat.

Balık Dürüm Mehmet Usta: Filet-O-Kebab

The balık ekmek (fish sandwich or, more literally, fish and bread) – an Istanbul street food staple – has lived and died and been born again along any walkable stretch of the Bosphorus. Whether you’re in the habit of buying it from the neon-lit boats docked at Eminönü’s pier (which, to the chagrin of some and the delight of others, had their leases revoked by the municipality on November 1) or from a street cart illuminated by a jaundiced bare bulb, one thing’s for certain: there’s a better option out there. That would be the balık dürüm (fish wrap) – the fish sandwich’s tastier, spicier and genuinely sexier cousin. In an ever-developing city where centuries-old institutions are taking their final breaths, there is much change to lament. But the introduction of the balık dürüm is one change we welcome with open arms and mouths.
