Born and raised in Istanbul, Albert really grew up in the Sephardic Jewish kitchen of his mother, where a distinct language and culture at once Turkish and yet Sephardic ("borekitas", "koftes de pirasa") inbedded in him a fascination with how different cultures impact cuisine in the same city. A guide in this city for more than 25 years, he is as much an explorer as any of us, always hunting down that perfect bite, always surprised at what's around the corner.
