Tbilisi Sketches: Muscling Up Some Churchkhela

Tbilisi stores and markets are festooned now with distinctive sausage-shaped candies called churchkhela, ready for New Year celebrations and then Orthodox Christmas on January 7. They are a very traditional Georgian specialty, usually homemade from grape juice thickened with flour and nuts. But those aren’t the only ingredients you need to make churchkhela – they also require some serious muscle. How could it be otherwise for a food created by Georgian warriors as a sugar hit that wouldn’t perish on a long march? It was, in other words, one of the world’s earliest energy bars. “We still do it the same way as our ancestors,” says Khatuna Saalishvili, as we watch her and her husband, Temuri, start the process in their backyard in the village of Kisiskhevi. A wood fire heats a large metal cauldron filled with the mix of grape juice and flour known as tatara. The steam shines in the winter sun.

Tbilisi Sketches: Bread, the Georgian Way

“You’ve made me look angry,” laughs Marekhi Khatiashvili when we show our drawing of her making traditional Georgian bread in one of the tone bakeries in Tbilisi’s old city. “You’re concentrating,” I reply. “I was trying to show how hard you work.” It is incredibly hard work. Marekhi’s day begins at 4:30 a.m., when she and her co-worker Nona Khatiashvili (no relation) start making giant tubs of dough in the back of the low-ceilinged bakery, ready to be baked into the long, flat loaves of bread that Georgians call shoti. It’s a ritual of daily life here.

Tbilisi Sketches: Slow Cheese

Take the plunge into the high-volume hubbub of Tbilisi’s famous Deserter’s Bazaar and you’ll come under a three-senses assault. The piquant aroma from the spice stalls, a butchers’ shouting war and stalls swinging with burgundy-brown, candle-shaped churchkhela sweets. But on one side of the market building, there’s a small slice of calm – in the long corridor where the cheese sellers work. Selling homemade cheeses from across the country, delivered fresh every day, is a more relaxed and deliberate business. You’ve heard of the Slow Food movement. Perhaps it’s time we were more specific and talked about “slow cheese.” Here, the cheese sellers prefer to wait for the customers to come to them.

Tbilisi Sketches: Strange Fruit

This is a piece that celebrates the odd, the misshapen and the sometimes grotesque – in other words, what to look for to find a really tasty tomato. Just to be clear, we are talking about tomatoes from Sakartvelo here. Sakartvelo? You might know it better as Georgia, but Sakartvelo – literally, the dwelling place of the Kartvelian, or Georgian, people – is what natives call their country. And some Georgians say Sakartvelo should be the official name for everyone else too, to avoid confusion with a certain U.S. state that wasn’t even a colonialist’s dream when Georgia the country was already 1,200 years old, but which now irritatingly hogs all the Google limelight.

Tbilisi Sketches: Gobi, Georgia's Super Bowl

You sit down for a meal with family or friends, and no one can decide what to order. Well, some can, some can’t, and it goes on for ages. The waiter stiffens when you ask one more time for her to come back. But go to the basement restaurant of Shavi Lomi in Old Tbilisi, and you have the answer for dithering relatives and pals: the gobi, or “Friends’ Bowl,” filled with a colorful selection of classic Georgian dishes. The word shares the same root as the Georgian word for “friend” – megobari – and so, of course, a gobi bowl is for sharing. It’s a big wooden bowl, filled with a mix of different dishes and as many spoons as you need.

Tbilisi Sketches: Dining with the Dead

It’s a mid-week spring day in Tbilisi and we have joined Dali Berdzenishvili and her family for a special picnic lunch. There’s a zesty looking spread covering most of a yellow and blue tablecloth: heaps of khachapuri (cheese bread), blinchiki (meat rolls), sliced meats and sulguni cheese, salads, a trademark Georgian dish of pickled greens known as jonjoli, a bowl of strawberries and a few slices of leftover Easter paska cake. For drinks, there are several bottles of semi-sweet red and a bottle of homemade grape juice. Dali says her late husband, Zviad, loved a picnic like this. And it is Zviad who brings them all here – because they are eating next to his grave.

Tbilisi Sketches: In the Court of the Khinkali Queen

Editor’s note: This is the latest installment in our series of illustrated dispatches covering local spots in and around Georgia’s capital. Contributor Andrew North is an artist and journalist based in Tbilisi who spent many years before that reporting from the Middle East and Asia. So it’s thanks to Genghis Khan that we find ourselves in a Tbilisi restaurant kitchen eight centuries later, watching chef Lena Ezieshvili make khinkali, Georgia’s famous meat dumplings. That’s one thought that skitters through my head as I try to follow her wink-quick hands folding circles of dough around dollops of meat and herbs before neatly pinching them off at the top into that distinctive khinkali shape.
