Chefs Kaan Sakarya and Derin Arıbaş usually spend their days preparing elegantly plated dishes like lamb tenderloin with warm cherry freekeh and purslane at Basta! Neo Bistro, the duo’s second joint venue in Istanbul’s Kadıköy neighborhood after their popular gourmet-wraps spot Basta! Street Food Bar. Both trained at French culinary institutes, they still refer to mise en place when talking about their prep cooking – even when that means setting things up inside a tent to make vats of soup to serve 700 people. Since a pair of massive earthquakes struck a broad swath of southeastern Turkey on February 6, more than 200 chefs from across the country have headed to the disaster area as part of an ad hoc response called the Acil Gıda Kolektifi (Emergency Food Collective).

A New LIFE: Helping Refugees Become Food Entrepreneurs

In happier times in Aleppo, a sweet drink called sharab al-louz ¬– made with almond extract, milk and sugar – was a staple at celebratory events such as engagement parties and weddings, Ammar Rida recalls. That was before he had to leave his job as a lecturer at the University of Aleppo and flee Syria lest he be conscripted to fight in the war that has been ravaging his country since 2011. Today, Rida, a serious man in his late thirties with short salt-and-pepper hair and a stubbly beard, is working to establish a business selling sharab al-louz and other healthy, natural drinks – some traditional to Syria and others he is developing based on his background in food science – at restaurants in Istanbul.

Building Blocks: Simit, Turkey’s Lord of the (Bread) Rings

Sold by roving vendors, street carts and bakeries, spread with a triangle of soft cheese or tossed to circling seagulls from the ferry, the humble simit has become a quintessential symbol of Istanbul – and of Turkey more broadly. But there’s more to this sesame-coated bread ring that it may at first appear, as demonstrated by the reactions last autumn to a piece of unexpected news from abroad. “Hang out the flags!” Turkish food-delivery giant Yemeksepeti tweeted exuberantly when the Oxford English Dictionary announced in October 2019 that the word “simit” had been officially added as an entry, saving future translators from having to employ awkwardly inadequate substitutes such as “Turkish bagel” when writing in English about the popular snack. Amid the general celebrating on social media, however, one group of Turks was decidedly not pleased.

Fish Out of Water: An Iconic Istanbul Sandwich’s Uncertain Future

On a blustery, drizzly winter afternoon in Istanbul, Muhittin Öztürk swipes his cell phone until he finds the photo he’s looking for: three men clad in blue aprons, standing behind a grill inside a small fishing boat. “That one’s my father, that one’s my uncle,” Öztürk says, pointing at the image. “This is the culture I come from.” Now a 35-year veteran of the business, Öztürk is the owner of the Derya, one of three gaudily adorned neo-Ottoman-style vessels moored to the shoreline in Eminönü, where a crew of cooks and waiters serve up fish sandwiches – balık ekmek (literally, “fish bread”) in Turkish – at a rapid pace to heaving crowds, most of whom are tourists.

Hayata Sarıl Lokantası: Meals with a Mission

It’s dinnertime and every table is full at Hayata Sarıl Lokantası, a cozy restaurant with crisp white walls, a patterned-tile floor, and cheery flowers on the café-style tables. “Are you going to serve that sometime tonight?” a floor manager barks sarcastically into the cramped kitchen, where black-apron-clad servers scramble to fill new plates while a tiny dishwasher churns through the old ones, steaming up the room like a sauna on an already sultry Istanbul summer night. The scene is likely familiar to anyone who’s worked in a restaurant, but with a major difference: the diners are members of the city’s homeless population, being cooked for and served by volunteers and people who once lived on the streets themselves.

Back to the Land: Urban Turks Tackle Rural Life

When Buket Ulukut first moved from Istanbul to a rural plot of land in the foothills of the Taurus Mountains in southern Turkey, she was leading a double life. “I’d be taking calls from clients in Europe while out amidst the rows of peppers and eggplants, hoping they didn’t hear the rooster crowing in the background,” says Ulukut, who worked in the textile industry before establishing Tangala Goat Farm in Muğla’s serene Yaka village. Since Ulukut settled in the area in 2008, her herd has grown from two goats to more than 50, producing milk that is made on-site into artisan cheeses sold throughout Turkey. Over the same decade, the number of Turks swapping the city for the countryside has also multiplied, driven by rising urban stresses and an increasingly stifling political climate.

Basta Street Food Bar: Gourmet to the People

Dürüm is the specialty at Basta Street Food Bar, but you won’t find a smoky grill inside this tiny Kadıköy storefront. With its bright turquoise counter, tile-patterned floor, and steel-topped, light-wood stools, Basta looks more like a hip café than a traditional kebab joint. “One customer came in, sat at the counter, took one look at what we were doing in the kitchen and walked right out,” laughs Kaan Sakarya. The former chef of the highly rated Nicole restaurant in Istanbul, Sakarya opened Basta in April along with colleague Derin Arıbaş. Their aim: applying their fine-dining training to gourmet fast food – specifically dürüm, grilled meat wrapped up inside lavaş flatbread.

When Didem Şenol decided to open her first restaurant on an out-of-the-way street in the then-sleepy Karaköy neighborhood of Istanbul, the young chef’s friends thought she was making a huge mistake. “They said, ‘Are you crazy? There’s nothing there, no one will go there.’ But Karaköy was close to my home in Galata, and I enjoyed the historic feeling of all the old buildings there,” Şenol reminisced last month over coffee at her deli/café Gram in Şişhane, another formerly sleepy Istanbul neighborhood. “I thought if we made good food, people would hear about it and come.” Her gamble paid off.

Let Them Eat Lettuce: Reviving an Endangered Urban Green

When you think about lettuce, if you think about it at all, it’s probably as the bland but virtuous base to a salad. But in days past in Turkey, this leafy green was just as often consumed as a snack in itself, as an essential part of a main dish or even as a sweet treat. “Marul [romaine] has been cooked as a vegetable since ancient Greek, Roman, and Byzantine times,” says food writer Aylın Öney Tan. “In many parts of Anatolia, it was a spring tradition to dip marul in pekmez (molasses) or honey, to eat it with something sweet that contrasted with the lettuce’s bitterness.” This wouldn’t really work with supermarket iceberg, of course – to fully enjoy lettuce’s culinary potential requires a fresh, high-quality crop.

Spring Gone Wild: Weeds and Edibles in Alaçatı

They weren’t easy to spot at first: tiny green shoots with reddish roots, scarcely an inch high, poking out of the mud along the banks of a brackish stream near the Aegean town of Alaçatı. From these unpromising beginnings come a dish known to nearly every patron of a Turkish meyhane: nutrient-rich deniz börülcesi (samphire), typically served boiled and dressed with olive oil, lemon, and garlic. The simple word ot, which translates to “herb” or “weed,” doesn’t do justice to the important – and delicious – role these wild greens play in the cuisine of Turkey’s Aegean region. Though most commonly served as zeytinyağlılar, dishes “with olive oil” like the classic deniz börülcesi salad, their versatility was on full display at the recent Alaçatı Ot Festivali, an annual celebration of all things leafy and green.

“We grow everything here – kale, dill, peppers, cucumbers, tomatoes, arugula, eggplant, lettuce, cauliflower… everything,” the elderly woman says proudly, waving her hand in the direction of her small field as she digs her worn plastic sandals into the dirt. While she grows the vegetables and herbs, her 80-year-old husband tends his pomegranate trees and takes their products from this patch of farmland at the far northern end of Istanbul’s Sarıyer district to sell at local markets around the city.
